Sauteed Fresh Corn image

Steps:

  • Remove the husks and the silk from the corn and cut the kernels off as close to the husk as possible without removing any of the husk. You should have about 7 cups of kernels.
  • Melt the butter in a large, heavy saute pan. Add the corn, salt, and pepper and saute uncovered on medium-low heat for 8 to 10 minutes, stirring occasionally, until all the starchiness in the corn is gone. Taste, for salt and pepper, and serve.

8 to 10 ears of corn on the cob (yellow or white corn)
3 tablespoons unsalted butter
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Cook the peppers and onions in olive oil in a large saute pan over medium heat until soft. Add the zucchini and season with salt and pepper. Meanwhile, lightly char the corn on a gas burner, using tongs to turn, 2 minutes. Let cool, and then cut the kernels off the cob. Add the corn kernels to the pan and cook the whole mixture 5 more minutes. Serve.

1/2 yellow onion, chopped
1 red bell pepper, diced
1 tablespoon olive oil
1 zucchini, cubed
Kosher salt and freshly ground black pepper
2 ears fresh corn, shucked, or 1 cup frozen corn, thawed

Steps:

  • Dissolve the sugar, margarine, corn syrup and salt until firm ball stage.
  • Remove from heat and add spices and baking soda.
  • Pour over popcorn, stirring well.
  • Spread evenly on baking sheet and bake at 250ºF 45-50 minutes stirring every 15 minutes until done.
  • Cool.
  • (Be careful-burns easily).

3 quarts popped popcorn
3/4 cup brown sugar
1/4 cup margarine
3 1/2 tablespoons corn syrup
1/4 teaspoon salt
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon ginger
1/4 teaspoon allspice

  • In a large saucepan, bring carrots and water to a boil. Reduce heat; cover and simmer for 5-8 minutes or until tender. Drain. In a small skillet, saute onion in 3 tablespoons butter until tender., In a large bowl, combine the carrots, onion, soup, cheese and pepper. Melt remaining butter; toss with stuffing. Fold into carrot mixture., Transfer to a greased 2-qt. baking dish. Cover and bake at 350° for 20 minutes. Uncover; bake 10 minutes longer or until lightly browned.
