Stir together and continue to cook until everything comes together, another minute. Add to a platter and sprinkle over the sesame seeds and reserved scallion greens.

Steps:
- Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the ham, barbecue spice and scallion whites. Saute for 2 to 3 minutes.
- Lower the heat to medium. Toss the rice with the remaining 2 tablespoons oil in a medium bowl. Add to the skillet and quickly stir so the ham and scallions get evenly distributed in the rice. Cook without stirring for 5 minutes so the bottom gets crispy.
- Combine the hoisin, soy, chile sauce and ginger in a small bowl and whisk together. Add the sauce to the skillet along with the peas and pineapple. Stir gently to combine, retaining the crispy bottom. Serve immediately topped with the fried egg, french-fried onions, sesame seeds and scallion greens.
ISLAND-STYLE FRIED RICE

- Heat 2 teaspoons of oil in a skillet over medium heat, and brown the luncheon meat and sausage. Set aside, and pour the beaten eggs into the hot skillet. Scramble the eggs, and set aside.
- Heat 2 tablespoons of oil in a large nonstick skillet over medium heat, and stir in the rice. Toss the rice with the hot oil until heated through and beginning to brown, about 2 minutes. Add the garlic powder, toss the rice for 1 more minute to develop the garlic taste, and stir in the luncheon meat, sausage, scrambled eggs, pineapple, and oyster sauce. Cook and stir until the oyster sauce coats the rice and other ingredients, 2 to 3 minutes, stir in the green onions, and serve.

ABSOLUTELY THE BEST SPAM FRIED RICE
I really like fried rice and was searching and searching for a recipe that I liked. My brother is a college student and one of his friends made some for dinner the night before and I snitched a bite the next day (I tried it cold, right from the fridge) and it was the best I have ever had (and it was cold)! His friend didn't have a written recipe to give me (he made the recipe up and just makes it), so I finally talked him into coming to my house to show me while I wrote the recipe down. My brother told me that there would be 5 of them coming over and to have the rice cooked and cooled. I had no idea how much rice to cook, so I made 4 1/2 cups (dry) rice. It made a ton, but after 7 of us ate (most had 2 bowls full) there was only 1 bowl as left overs. I am sure you can adjust this to make less. I had the original Kikkoman soy sauce to use and it was saltier and less sweet as the Aloha Shoyu that my brother's friend nomally uses. The serving amounts is a large range because you can have it as a meal like we did, or as a side dish.

Steps:
- Scramble eggs in about 1/2 tablespoon of vegetable oil in a wok on medium high heat. When done, set aside in a bowl.
- Place another tablespoon of oil in wok and sauté onions and Spam on medium high heat. When golden & starting to crisp on the outsides add the thawed peas and carrots.
- Combine ingredients for the sauce and stir until sugar is dissolved, tasting along the way to be sure it is sweet enough for you. Add to the vegetables and boil on high until the sauce reduces to a glaze.
- Slowly add the cooled rice and eggs to the vegetable mixture, being sure to break up any clumps of rice and so the coloring is even. Warm the rice through and serve.

HAWAIIAN FRIED RICE
Growing up in the South Pacific, rice was the mainstay of our diet. When my husband and I moved stateside, we created this Hawaiian fried rice recipe. We bring this dish to every potluck, and it's always the hit of the party. -Janice Edwards, Plainville, Illinois
