Steps:
- Combine the oats and buttermilk and let stand 30 minutes.
- Sift together the flour, baking powder, salt, baking soda and cinnamon.
- Stir the eggs into the buttermilk mixture, then add sugar, butter, and flour mixture.
- Stir until just combined.
- The batter will be lumpy.
- Fold in the raisins.
- Spoon into a muffin tin about 2/3 full.
- Bake at 400º F for 15 to 20 minutes.

HEALTHY OATMEAL RAISIN MUFFINS
I found this recipe in an old Pillsbury cookbook. It is packed with whole grains for a healthy breakfast or anytime snack.

Steps:
- Heat oven to 400 degrees. Grease 12 muffin cups.
- In mixing bowl, combine all dry ingredients; mix well.
- In large bowl, combine all wet ingredients; blend well.
- Stir in dry ingredients, just until moistened. Stir in raisins.
- Spoon batter into prepared muffin cups, filling 2/3 full.
- Bake for 15-20 minutes or until toothpick inserted in center comes out clean.
- Immediately remove from pans.
OATMEAL APPLE RAISIN MUFFINS

- Combine buttermilk, rolled oats, and raisins in a bowl. Cover and refrigerate 8 hours to overnight.
- Preheat the oven to 400 degrees F (200 degrees C). Liberally grease a 12-cup muffin tin.
- Remove buttermilk mixture from the refrigerator. Mix flour, baking powder, baking soda, salt, and wheat germ together in a bowl.
- Beat butter and brown sugar together in a large mixing bowl until light. Add honey and egg and mix well.
- Add flour mixture and buttermilk mixture in alternating batches to the mixing bowl with the butter mixture; stir until batter is evenly moistened.
- Divide batter evenly into the prepared muffin tin.
- Bake in the preheated oven until set and golden brown, 22 to 28 minutes.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a muffin pan, or use paper liners.
- Heat butter in a skillet over medium heat. Cook 2/3 cup oats, 1/3 cup brown sugar, cinnamon and allspice until golden brown. Stir in 2/3 cup water and remaining 1/3 cup brown sugar. Cook until slightly thickened. Remove from heat and allow to cool.
- In a large bowl, combine flour, 1/3 cup uncooked oats, baking powder and wheat germ. Whisk together egg and evaporated milk. Make a well in the center of flour mixture, and pour in egg mixture and cooked oatmeal. Mix just until combined. Dredge raisins in 1 tablespoon flour, then fold into batter. Spoon into muffin cups.
- Bake in preheated oven for 25 to 30 minutes.

- Preheat oven to 400°F (200°C).
- In a medium bowl, combine rolled oats and milk. Set aside to soak.
- Grease 12 muffin cups; set aside.
- Stir sourdough starter, oil, egg and raisins into soaked oats; set aside.
- In a large bowl mix together flour, baking powder, baking soda, salt and brown sugar. Add oats mixture.
- Stir until dry ingredients are just moistened; don't over mix.
- Divide batter among the 12 cups.
- Bake in preheated oven 20 to 25 minutes or until golden brown. Remove promptly from muffin cups.
- Can be served hot or cold.

- Preheat oven to 350. Line muffin tin with cupcake holders. Mix dry ingredients in a large bowl. Combine wet ingredients in a separate bowl. Add wet ingredients to the dry ingredients. Does not need to much mixing. Add raisins last. Pour into cupcake holders about 3/4 full. Bake for 10 to 15 minutes. Until they are moist but not wet. Take out of tin and cool on a cooling rack. It is much better room temperature.

- Stir milk, Eggbeaters, and applesauce together in a small bowl, then stir in oatmeal. Let mixture sit for 45 minutes to 1 hour.

OATMEAL RAISIN MUFFINS
Simple to make and good for you oatmeal raisin muffins from a magazine clipping in my files. Only 297 calories per muffin. You can omit the nuts and use one cup of raisins if you like. Instead of preparing the muffin pans with cooking spray, I use recipe #78579 #78579 here at zaar to grease my baking pans. Works for all kinds of baking and other cooking pans, and keeps for a long time in the refrigerator. An ice cream scoop with a release lever is helpful to portion out the batter into the muffin cups.
