APPLE OATMEAL BREAKFAST BREAD
Many people know that a bowl of oatmeal is a healthy way to start the day. There's a lot of nutrition packed into that bowl of goodness, including whole-grain oats, spicy cinnamon and usually fruit and nuts on top. I set out to create a quick bread that had all the nourishment of a bowl of oatmeal -- but that would be easy to slice and take with you.

Steps:
- For the crumble topping: Combine the oats, butter, brown sugar and cinnamon in a small bowl; set aside.
- For the bread: Preheat the oven to 350 degrees F. Cut out an 8-by-4-inch rectangle of parchment paper and put in the bottom of a 9-by-5-inch loaf pan. Spray the pan and paper with cooking spray.
- Put the oats in a blender and blend to a flour-like consistency. Combine the oat flour, wheat flour, cinnamon, baking powder, baking soda and salt in a large bowl.
- Combine the honey, oil, vanilla and eggs in a medium bowl; add the sugar, stirring until combined. Add the apples and stir until well combined. Add the flour mixture and stir just until combined. Gently stir in the walnuts.
- Pour the batter into the prepared loaf pan and sprinkle with the crumble topping. Bake until a wooden pick inserted in the center comes out clean, about 1 hour. Cool in the pan on a wire rack 10 minutes, then remove from the pan to the rack and cool completely.

I found (and lost) a great recipe from Sunset or Family Circle magazine about 25 years ago. This is my version from my spotty memory! BATTER WILL BE THICK! Works best with GRATED apple.

- Preheat oven to 350. Grease and flour a 9 x 5 inch loaf pan.
- Mix all dry ingredients together.
- Lightly beat eggs in small bowl. Add oil and eggs to dry ingredients and stir until moistened. Fold in apples and nuts and pour into loaf pan.
- Bake 1 hour or until toothpick comes out clean. Cool in pan on wire rack for 10 minutes. Remove from pan. Cool on rack.

Steps:
- Grease pan and preheat oven 350°F.
- Mix all dry ingredients.
- Add in wet ingredients.
- Knead until smooth and elastic.
- Place in greased bowl, cover and rest until double. About 40 minute.
- Divide into 3 7x3 loaf pan (approx 463g / loaf). Proof about 30 minute.
- Bake 30-35 till brown top.

- Preheat the oven to 350°F (176°C) with a rack in the center position. Grease a 9 x 5-inch (23 x 13 cm) loaf pan with baking spray and line with a parchment paper overhang (*see photo in blog post; this makes it easy to lift and remove the quick bread from the pan after baking). Set aside.
- In a medium bowl, whisk together the whole wheat pastry flour, rolled oats, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a large bowl, whisk together the dark brown sugar and eggs for 1 minute, or until lightly frothy. Add the oil, applesuace, vanilla extract, and lemon zest (if using) and whisk until smooth.
- Whisk the dry ingredients in the wet ingredients until the flour is just absorbed. Using a spatula, fold in the chopped apple and chopped, toasted walnuts. Transfer to the batter to the greased (and parchment-lined) loaf pan. Smooth the top and tap the loaf pan on a countertop lightly to remove any air bubbles. Sprinkle the turbinado sugar evenly over the top of the batter.
