  • Preheat oven to 450 degrees F (230 degrees C).
  • In a large bowl, toss potato wedges with oil. Arrange in a single layer in a roasting pan.
  • Bake in preheated oven for 50 minutes. Sprinkle with parsley, thyme, oregano, salt and pepper. Bake for 10 minutes, or until golden brown.

Steps:

  • Preheat oven to 425°F.
  • Combine all ingredients, except potatoes, in a small bowl.
  • Place potatoes in a large zip-close plastic bag.
  • Add mustard mixture.
  • Close bag and shake to coat.
  • Pour contents of bag into a shallow baking pan coated with cooking spray.
  • Bake, turning occasionally, until potatoes are tender, about 40-60 minutes.

2 tablespoons Dijon mustard
1 tablespoon olive oil
1 tablespoon rosemary, freshly chopped
1 tablespoon fresh oregano, chopped
1 tablespoon parsley, freshly chopped
1/2 teaspoon table salt
1/4 teaspoon black pepper

  • Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise. You'll have 6 long wedges from each potato. Place the potatoes on a sheet pan with the olive oil, salt, pepper, garlic, and rosemary. With clean hands, toss all the ingredients together, making sure the potatoes are covered with oil.
