HILLBILLY HOT DOGS
I just recently spent some time with family from my Grandpa Campbell's side in Ansted, WVA. My cousin Debbie owns a store called Chimney Corner USA and while browing the store I was very excited to find some Chow Chow. What is Chow, Chow? It is a pickled relish made with cabbage & veggies and can be hot, sweet, spicy or mild....

Steps:
- 1. Grill your hot dogs and toast your buns. Heat up your bean mixture or just plain beans (have it your hillbilly way) lol
- 2. Cook up your pinto beans w/bacon, onion and seasonings. I'll get back here and post my recipe soon for the pinto beans.
- 3. Put 2 Tbsp of the beans and 2 Tbsp of the Chow Chow...I would be generous with the Chow Chow cause it tastes so so good!!!! Hope you enjoy a little bit of Hillbilly cookin'!
SPANK'N BACON HILLBILLY HARLOT
Steps:
- Fry 5 slices bacon in a skillet. Remove and set aside.
- Dice all peppers and onion and saute in bacon grease until cooked down a bit. Then stir in tomatoes, chili sauce, rice, brown sugar, Worcestershire, black pepper, pepper flakes and 2 1/2 cups water. Cover and simmer over medium-low heat, stirring it every so often, until the rice is done, about 25 minutes. Crumble cooked bacon and reserve some for garnish, then stir the rest into the sauce.
- Heat oil in a deep-fryer to 350 degrees F.
- Wrap your weenie in remaining 2 slices raw bacon. Flash deep-fry 1 1/2 minutes, then cook on flat top until bacon is crisp and weenie is plumped. Toast the top of the hot dog bun. Put weenie in the bun, then top with sauce. Sprinkle with remaining bacon bits.
WEST VIRGINIA STYLE HOT DOG

- Grill, steam or boil the hot dogs. In the meantime, heat the Chili until hot throughout. Place each hot dog in a bun, and top each with a generous amount of Chili, coleslaw and yellow mustard, and then serve.
- In a stockpot or Dutch oven, combine the beef (do not brown first), onions, tomato sauce, paste, chili powder, sugar, salt, pepper, garlic salt and 2 cups water. Mix until combined, then add the bay leaves. Cover and simmer over medium-low heat for about 2 hours.
- Stir in the vinegar and simmer another 30 minutes.
HILLBILLY HOT DOGS
My grandparents were originally from West Virginia and hillbilly hotdogs are always eaten at family reunions and family events during the summer even though most of the family lives in northern Indiana now. I personally like a sweet chili and a peppery coleslaw.

- Heat oil in Dutch oven or small stockpot. Add potatoes, carrots, peppers and half each of the onions and garlic; cook 5 min., stirring constantly.
- Meanwhile, blend tomatoes, broth, chile, oregano, and remaining onions and garlic in blender until smooth.
- Add vegetable puree to potato mixture; stir. Bring to boil; cover. Simmer on medium-low heat 15 min., stirring occasionally. Add wieners; cook, covered, 5 min. or until heated through. Serve with tortillas.

HILLBILLY HOT DOG CHILI
My family is from Southwest Virginia and West Virginia. An all time favorite was a chilli dog or a chilli bun with mustard and onions. Most of the country makes it runny and with beans. We do not. Try it, you will like it.

- 1. Place the hamburger in a dutch oven, cover it with water. Break the meat up and bring it to a boil. Add the seasoning. Continue to break up the meat.Simmer until most of the water is absorbed. This will take a while
- 2. You can add as much chilli powder as you like.
- 3. You can serve this over a hotdog in a bun or alone. Most people eat it with mustard and onions.
- 4. Freeze this in small bags and keep on hand for quick lunches or dinners.

Sprinkle a small handful of olives on one side of hot dog. Add some of the sautéed vegetables across the other. Sprinkle with cheese. Place prepared hot dogs into an oven-safe casserole or rectangular baking pan. Transfer to preheated 250°F oven and bake for 10-15 minutes or until cheese has melted and bun is toasted. Garnish with chopped parsley. Serve immediately.
