Steps:
- In a small bowl, combine brown sugar and seasonings; set aside. In another bowl, whisk egg white until foamy. Add almonds; toss to coat. Add spice mixture; toss to coat. , Spread on a greased foil-lined baking sheet. Bake at 325° for 20-25 minutes or until lightly browned, stirring occasionally. Cool completely. Store in an airtight container.

- In a large bowl, cream the butter, almond paste and 2 cups sugar until light and fluffy. Beat in eggs and extract. Gradually add flour just until moistened., Spread into a greased 13x9-in. baking dish. Sprinkle with remaining sugar; top with almonds. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares. Store in the refrigerator.

- Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan.
- Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.
- Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.

- Preheat an oven to 350 degrees F (175 degrees C). Spread the almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, about 10 minutes. Watch the nuts carefully as they bake: they burn quickly.
- Stir together the sugar, salt, and cayenne pepper in a mixing bowl; set aside.
- Stir together the water, honey, and olive oil in a large skillet over medium heat. Once the mixture begins to bubble, stir in the toasted almonds until evenly moistened. Pour the almonds into the sugar and spice mixture, and toss until evenly coated. Spread onto baking sheets in a single layer, and cool to room temperature.

HOLIDAY ALMOND ROCA
This is a delicious recipe for almond roca. My boyfriend's family loved this last Christmas, but I didn't want to tell them the recipe because it's so easy. Cook time does not include cooling time.

Steps:
- Line a large cookie sheet (or two smaller) with aluminum foil, or lay aluminum foil over a large area on the counter or table.
- Cook butter, sugar and vanilla in a saucepan to hard crack stage (285-290F), while stirring constantly.
- Once heated, pour onto the aluminum foil lined surface.
- Spread out to about 1/4-inch thickness.
- Sprinkle with chocolate chips, let sit until beginning to melt, then spread chocolate out.
- Sprinkle the top with almonds.
- Let cool for 2 hours, then break into pieces.
HOLIDAY ALMOND BRITTLE
This Almond Brittle with four ingredients on the stove top is ready in about 30 minutes. Almonds, sugar, honey and butter are combined to make this delightful holiday treat.

- In a heavy skillet, heat the sugar over low heat until it has melted and is slightly browned, making sure it doesn't burn.
- Add the honey and butter; simmer for 20 minutes. Stir in the nuts and cook for 10 minutes.
- Line a platter or pan with wax paper and drop tablespoonfuls of the brittle onto the paper.
- Let it harden, break into pieces and serve.
