HOLIDAY HAM BALLS
The holidays are deadly to a diet because of things like this! You can just keep popping one into your mouth every time you pass by till you have accidental eaten them all. I got this from a friend in Sweden. *Using the coarsest grating disc of the food processor for the ham works perfectly. After you have grated the ham use it for the cheese.

Steps:
- Heat oven to 350 farenheit.
- Lightly grease jelly roll pan, 15 1/2 x 10 1/2 inch.
- Mix thoroughly the Bisquick, finely chopped, fully cooked ham, and remaining ingredients.
- Shape mixture into 1 inch balls.
- Place about 2 inches apart in pan.
- Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm.

- Preheat oven to 350°. Pulse ham in batches in a food processor until finely ground. Combine with the next 7 ingredients just until mixed. Shape into 1-in. balls; place in a single layer on greased 15x10x1-in. baking pans., For glaze, cook and stir all ingredients in a small saucepan over medium heat until sugar is dissolved. Spoon over ham balls. Bake until ham balls are just beginning to brown, 30-35 minutes, rotating pans and carefully stirring halfway through. Gently toss in glaze. Serve warm.

HOLIDAY HAM & CHEESE BALL
My mother always makes this cheese ball at Christmas, and growing up, I never realized there was any other kind of "cheese ball" but this one. I now make it for get togethers, holidays, or sometimes just because it's so good! There is never any left overs, and everyone always wants the recipe. This recipe makes 1 large ball or 2 small balls. *Note: My mother puts 1 tsp of Accent (MSG) in hers. I never buy this stuff, so I leave it out, and I can't tell a difference.

Steps:
- Place the cream cheese in a large, covered bowl and allow to soften at room temperature while preparing the other ingredients.
- Lay several pieces of ham on a cutting board and slice into 1/2" strips. Turn the cutting board and slice again, forming small squares. Set aside in a medium bowl or on a plate and separate the squares. Repeat with the rest of the ham.
- Slice the bunch of green onions into very thin rings.
- When the cheese is softened, add in the Worcestershire sauce, garlic powder, green onions (add all or just enough for your preference), and 1/2 of the ham. Mix together well until ingredients are uniformly distributed.
- Using a large piece of plastic wrap, shape the cream cheese mixture into a ball. Roll the ball in the remaining ham pieces (faster) or manually press the ham squares into the cheese ball (prettier). Place on a plate and wrap in plastic wrap. Allow to chill for a few hours or overnight before serving. Serve with crackers, vegetables or crusty bread.

- Drain pineapple, reserving juice. Place ham on a rack in a shallow roasting pan. Secure pineapple and cherries to ham with toothpicks. Combine brown sugar and seasoned salt; rub over ham. Gently pour pineapple juice over ham., Bake, uncovered, at 325° for 1-1/2 to 2 hours or until a thermometer reads 140° and ham is heated through. Baste frequently with brown sugar mixture.

- Combine the meatball ingredients. In a large bowl lightly combine the 1 lb ground ham, 1 lb ground beef, 1 cup graham cracker crumbs, 3/4 cup milk, and 1 egg. Make large meatballs. Form the mixture into large meatballs, about 1/3 cup in size each. Place into a 9x13 baking dish. You will have about 12-15 meatballs.
- Whisk together the sauce ingredients & pour over meatballs. In another bowl whisk together the can of condensed tomato soup, 1 cup brown sugar, 1/2 cup white vinegar, and 1 tsp dry mustard. Pour the sauce over the meatballs.
- Bake 1 hour. Bake in the oven, uncovered, for 1 hour, basting the tops of the ham balls with the sauce once or twice during cooking.

- Preheat the oven to 350 degrees. Lightly grease (2) 9x13 baking dishes with oil and set aside. Use the coarse setting on your meat grinder to grind the leftover ham. If you don't have a meat grinder, you can use a food processor to pulse until it is chopped like hamburger meat.
- Combine all the meatball ingredients in a large bowl and mix with your hands until combined. Roll into 1 1/2" - 2" meatballs. I use a medium size cookie scoop to scoop them all the same size before smoothing them with my hands. Arrange the meatballs in the baking pans and set aside.
- Whisk together all the glaze ingredients in a medium size saucepan over medium high heat. Bring to a boil, whisking until the sugar has dissolved. Reduce the heat to medium and simmer for 4-5 minutes, until the sauce has thickened.
- Pour the glaze over the ham balls, dividing it between the two pans. Bake the ham balls, uncovered, for 75-85 minutes, until the ham balls have browned and the sauce has reduced to a syrupy consistency. Enjoy!
