BAVARIAN MINT FUDGE
My sister-in-law sent this mint chocolate fudge to us one Christmas, and it's been a traditional holiday treat in our home ever since. With just six ingredients, it couldn't be any easier to make. -Sue Tucker, Edgemoor, South Carolina

Steps:
- Line an 11x7-in. baking pan with foil. Grease the foil with 1-1/2 teaspoons butter; set aside. , In a microwave-safe bowl, combine chocolate chips, milk and remaining 1 tablespoon butter. Microwave on high 1 minute; stir. Microwave on high stirring every 30 seconds until chips are just melted, 1-2 minutes longer. Stir in extracts (fudge mixture will not be glossy). Spread into prepared pan. Refrigerate until set., Using the foil, lift fudge out of the pan. Discard foil; cut fudge into 1-in. squares. Store in the refrigerator.

- 1. Line 8x8 inch pan with aluminum foil, extending foil over ends of pan 2. Lightly coat with nonstick spray 3. Set aside 4. In heavy 3 quart saucepan, combine marshmallow cream, sugar, evaporated milk and butter 5. Cook stirring constantly, over medium heat until mixture comes to full boil 6. Reduce heat to medium-low 7. Gently boil for 4 minutes, stirring constantly 8. Remove from heat 9. Stir in chips and vanilla until melted 10. Fold in chopped patties 11. Spread in prepared pan 12. Cool 13. Refrigerate until firm 14. Cut into squares

A merrier melt-in-your-mouth sweet than this butter-mint holly would be hard to find! It's inexpensive to make, looks so lovely on a candy tray and doesn't require refrigeration.

- In a large bowl, cream butter. Gradually add water, extract, butter flavoring and salt; beat in enough confectioners' sugar on medium speed until dough achieves a stiff putty consistency, about 3 minutes. , Divide dough into three portions. Knead green food coloring into two portions. Knead red food coloring into remaining portion. For holly leaves, shape teaspoonfuls of dough into balls; roll in granulated sugar. Flatten to 1/8-in. thickness; cut with a holly leaf cookie cutter. For holly berries, shape 1/4 teaspoonfuls of dough into balls; roll in sugar. Arrange leaves and berries on serving platter. Store at room temperature.
