You can make your own (nut free) toffee really simply! It's fast too - it takes longer to wash up! Serving size is for 1/4 cup.

Steps:
- Line a rimmed baking sheet with parchment.
- Combine the butter and sugar in a saucepan over medium heat.
- Cook until the mixture reaches 305F on an instant-read thermometer (hard-crack stage). Stir occasionally.
- Remove from the heat and pour onto the parchment, spreading thinly.
- Cool completely - about 4 hours - then break into bits.
- Store in an airtight container.

CHOCOLATE TOFFEE BITES
Notes: This is a great way to get your chocolate fix in warm weather since the chocolate is stirred into the toffee and so no melting on the fingers! It's great to snack on and nice at the end of a meal with coffee. I learned this from the head pastry chef at Valrhona Chocolates.

Steps:
- Place the sugar in a heavy-bottomed saucepan and caramelize on high heat stirring constantly. It will turn amber brown in about 5 minutes. When it is a uniform caramel color, add the butter, and stir it in. Once mostly combined, add the chocolate, and stir to blend. Pour it out onto a silpat or parchment lined sheet pan, and spread it with an offset spatula 1/8-inch thick. Let cool and break into small pieces. Store in an airtight container.
FROZEN YOGURT WITH CHOCOLATE TOFFEE BITS
Steps:
- In a bowl, whisk together the yogurt, vanilla, and simple syrup. Chill 30 minutes, remove vanilla bean (if using) then turn in an ice cream freezer. Place in a frozen mixing bowl and fold in the chocolate covered toffee bits. Serve.
TOFFEE ANGEL FOOD CAKE

- Place egg whites in a large bowl; let stand at room temperature 30 minutes., Meanwhile, place oven rack in the lowest position and remove upper rack if needed. Preheat oven to 325°. Sift confectioners' sugar and cake flour together twice., Add cream of tartar, vanilla and salt to egg whites; beat on medium speed until soft peaks form. Gradually add superfine sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until soft glossy peaks form. Gradually fold in flour mixture, about 1/2 cup at a time., Gently transfer to an ungreased 10-in. tube pan. Cut through batter with a knife to remove air pockets. Bake on lowest rack until top crust is golden brown and cracks feel dry, 50-60 minutes. Immediately invert pan; cool completely in pan, about 1-1/2 hours. , Run a knife around sides and center tube of pan. Remove cake to a serving plate. Using a long serrated knife, cut cake horizontally into 3 layers. In a large bowl, beat cream until it begins to thicken. Gradually add caramel topping and vanilla; beat until soft peaks form., Place 1 cake layer on a serving plate; spread with 1 cup whipped cream mixture. Sprinkle with a third of the chopped candies. Repeat layers. Top with remaining cake layer. Frost top and sides of cake with remaining whipped cream mixture; sprinkle with remaining candy. If desired, sprinkle chocolate curls over top and around bottom of cake.

Here is a quick and easy dessert. Place the pan in the refrigerator for 45 minutes to 1 hour to set the chocolate faster.

Steps:
- Heat oven to 350°F Line a 15 1/2 x 10 1/2 inch rimmed baking sheet with parchment paper; set aside.
- In a large bowl, beat butter with brown sugar until fluffy. Beat in egg yolk and vanilla until creamy.
- Stir in flour and 1 cup of the toffee bits until well combined. Press dough evenly into prepared baking sheet.
- Bake for 18-20 minutes or until light brown; transfer pan to a cooling rack. Immediately sprinkle with chocolate chips over the hot cookie base. Let stand for 5 minutes or until chocolate is softened. Spread chocolate evenly over the base; sprinkle remaining toffee bits evenly over chocolate. Cool until chocolate is set, about 2-3 hours. Cut into 3-inch squares; cut each square diagonally to make 4 triangles.

Steps:
- Line in a 10 inches square pan foiled and greased, and put that aside.
- In a medium-large saucepan, combine the condensed milk, the white chocolate chips and put it on the stove with medium heat.
- After about 5 minutes, make sure the chips are melted.
- Add salt and butter and stir until nice and smooth.
- Remove from heat and stir little toffee bits into a prepared pan.
- Cover and put in the refrigerator for about 2 hours.
- Using foil, remove yummy fudge from the pan and carefully remove the foil.
- Cut into desired sized squares.
- Serve when you want to and decorate however you want.
- You may refreeze this treat.

- In heavy saucepan, combine butter, sugar, water, and salt.
- Cook to hard-crack stage (300°F) stirring with a WOODEN SPOON constantly and watching carefully. Do not try a plastic spoon, it will melt into your delicious candy!

- Cool until hard.
- Melt chocolate over hot, but not boiling water.
