  • In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
  • Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.

  • Fry bacon until crisp in a large frying pan.
  • Remove bacon from the pan, but leave the drippings. Add onions and peppers and saute in bacon drippings, until tender.
  • Add hominy, tomatoes, and soup. Stir over medium heat until well blended.
  • Simmer mixture on low heat for 10 minutes, stirring occasionally.
  • Cut up cheese into small cubes and add to the hot mixture. Continue to stir over low heat until all the cheese is melted.
  • Crumble bacon and add to mixture and simmer for another 2 minutes.

This is an old family favorite I got from an old Better Homes & Gardens Ground Meat Cookbook. It's super easy and was great after working all day and having to feed 3 hungry growing boys. Now grown, they still request this dish. We like to serve with a salad and a pan of cornbread is a must! If you have a cast iron skillet - use it! No need to dirty another dish. Brown the meat per directions, add everything in and slide it into the oven.

Steps:

  • To make the pastry, tip both the flours, a pinch of salt and the cayenne, if using, into a large bowl. Mix, then rub in the butter using your fingertips until the mixture is crumbly. Mix in the egg and 1 tbsp cold water using a cutlery knife. Bring the pastry together into a ball, then cover and chill for 30 mins. Knead briefly until pliable, then roll out until it's large enough to line a 20cm deep pie dish. Line the dish, pushing the pastry into the edge, then trim. Chill until needed.
  • Meanwhile, for the filling, heat the butter in a large saucepan until sizzling and cook the onions with some seasoning and the leeks and thyme, if using, for 12-15 mins until soft and sticky. Stir the potatoes into the onion mix, then reduce the heat, cover and cook for 10-15 mins, stirring occasionally, until the potatoes break down when pressed with a wooden spoon. Pour over the cream, stir for a minute, then turn off the heat and leave to cool a little.
  • Heat the oven to 200C/180C fan/gas 6 with a baking tray inside. Stir half the cheddar and most of the spring onions through the potato and onion mix. Scatter half of the remaining cheddar over the base of the pastry case, then tip in the tip filling. Scatter with the rest of the cheese and spring onions. Bake on the hot baking tray for 40-45 mins until the pastry is deeply golden and the filling is bubbling. Remove from the oven and leave to rest for at least 10 mins. Serve hot, or leave to cool until just warm.

When she went out on her own, I gave her the cookbook along with my very first one my dad gave me. It is very versatile. I'm listing the original recipe, but through the years I have added different things to it, such as left over squash casserole, Velveeta instead of cheddar, soy sauce, or beef bouillon to make a soup rather than a casserole. I serve it with tortilla chips.

Drain hominy well and put into buttered 2 quart casserole dish. In a pan, combine cubed cheese, soup, and tomatoes and green chiles. Let heat through until cheese is somewhat melted.
