MOMMA CALLIE'S BANANA NUT BREAD WITH HONEY BUTTER

- Preheat the oven to 350 degrees F and put a rack on the middle shelf. Butter and flour a 9 by 5 by 3-inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, baking powder and salt.
- In a separate small bowl, mash the bananas with a wooden spoon, leaving a bit of texture.
- In another large bowl, use a hand electric mixer or stand mixer to cream the 1/2 cup of butter and sugar together until light and fluffy. Add the eggs, 1 at a time. Stir in the mashed bananas, sour cream and vanilla and beat until just combined. Add the dry ingredients and gently stir in pecans. Pour the batter into the pan and put on a sheet tray.
- Bake for 1 hour and 10 minutes. Let cool for 5 minutes in the pan then turn out onto a wire rack to finish cooling. Slice and serve with Honey Butter.
- Mix the butter and the honey together in a small bowl with a wooden spoon. Serve with the banana bread.

- Beat butter at medium speed with mixer in a large mixing bowl; add honey, beating well. Add eggs, one at a time, beating after each addition, add the banana and mix well.
- Combine flour, soda, and salt; stir in pecans. Add to the butter mixture, stirring just until the dry ingredients are moistened.
- Spoon batter into a lightly greased and floured 9 x 5-inch loaf pan.
- Bake 350°F for 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes; remove from pan and cool completely.

HONEY BANANA BREAD
I got this recipe from a friend, who got it at a Weight Watchers meeting. It's so delicious you won't believe you're eating low fat! It doubles perfectly (I never make just one loaf!) and if you don't have enough banana, just use applesauce for the balance. It works like a charm. Enjoy!!! 2 points per 1/16 of a loaf.

- Preheat oven to 325°F.
- Grease an 8 x 4 loaf pan with nonstick cooking spray.
- Combine flour, brown sugar, baking powder, baking soda and nutmeg.
- Stir to mix well.
- In a separate bowl, combine banana, honey and milk. Mix well.
- Add liquid ingredients to dry, stirring just till dry are moistened.
- Spread mixture evenly in pan and bake 45 to 50 minutes, or until a wooden toothpick inserted in center of loaf comes out clean.
- Remove bread from oven and let sit for 10 minutes.
- Invert loaf onto wire rack, turn right side up, and cool before slicing and serving.
LOW FAT HONEY BANANA BREAD
I started with a recipes from Fat Free Baking & changed it a little. It is good for a breakfast bread, but you need to be careful that it doesn't get dried out.

- combine the flour, brown sugar, baking powder, baking soda& pie spice, mix well.
- Add banana, honey& milk.
- Stir just until the dry ingredients are moistened.
- Coat an 8x4 inch loaf pan (double recipe if using a larger pan to avoid a drying out the bread).
- with nonstick cooking spray.
- Spread the mixture evenly in the pan.
- Bake@ 325ºF for 45 to 50 minutes, or just until a toothpick inserted in the center of the loaf comes out clean.
- Remove the bread from the oven& let sit for 10 minutes.
- Invert the loaf onto a wire rack, right side up,& cool before slicing& serving.

BANANA OATMEAL HONEY BREAD
This is adapted from a Cooking Light recipe for my son, who is allergic to dairy and eggs. I also added some wheat flour to see how it tasted. It turned out light and delicious! You could make this vegan by not using the goat milk, and adding the juice of 1/2 a lemon.

- Preheat oven to 340°F.
- Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, potato flour salt in a large bowl; stir well with a whisk to combine. Stir in oats.
- Combine mashed banana, honey, yogurt, milk, oil and vanilla; add to flour mixture and stir until just moist.
- Spoon batter into 8 x 8 baking pan (can use 8 x 4 loaf pan) coated with cooking spray.
- Bake at 340F for 45 - 55 minutes or until a wooden toothpick inserted in center comes out clean. Cool 15 minutes in pan.
