CHICKEN AND CHEESE MEXICAN CASSEROLE

- 1. Pre-heat oven to 350°F. Spray a 9x13 inch baking dish with non-stick cooking spray. 2. In a saucepan, heat the butter over medium high heat until melted. Add the onions and cook until translucent, about five minutes. Once onions are cooked, add the undrained diced tomatoes, tomatoes with green chilies, and the American processed cheese product. Reduce the heat to medium-low and cook until warm and melted. 3. In a mixing bowl, combine the shredded chicken and the black beans. 4. To start building the casserole, spoon a small amount of the cheese /tomato mixture into the bottom of the prepared baking dish and spread evenly, lay out four tortilla shells on top of the cheese, covering the bottom of the pan. Top with ½ the chicken & bean mixture and ½ of the remaining cheese sauce, spreading each layer evenly. Sprinkle ½ of the cheddar cheese over. Repeat layers. Top with the crushed tortilla chips. 5. Bake for 15-20 minutes, or until heated through and bubbly. Cut and serve.
- - For those who prefer more spice, this recipe can be prepared with 20 oz. of diced tomatoes and green chilies.
MEXICAN STYLE LIME AND CILANTRO WHOLE CHICKEN (SLOW COOKER)

Steps:
- Wash and dry the chicken.
- Reserve the giblets and neck for another use.
- Season the chicken inside and out with salt and pepper.
- Place in the slow cooker breast side up.
- Squeeze the juice of the lime over the chicken.
- Put the remains of the lime, cilantro and garlic inside the cavity.
- Cover and cook on the low setting for 6-7 hours or until an instant read thermometer reads 180 degrees Fahrenheit in the thickest part of the thigh.
- Transfer the chicken to a platter.
- Pour the liquid from the cooker into a separate container and refrigerate for another use.
CHICKEN WITH TOMATILLO AND CILANTRO SAUCE

- Move broiler rack into position closest to flame. Set broiler to medium. Place tomatillos and chiles on a rimmed baking sheet; broil until soft and blackened in spots, about 5 minutes. Turn; broil other side 5 minutes. Remove from broiler and transfer to a food processor; blend. Increase broiler heat to high. Place chicken on same baking sheet and sprinkle with salt. Broil chicken until browned, about 9 minutes. Turn; broil other side 9 minutes. Heat oil in a large saucepan over low heat; cook onion and garlic, stirring occasionally, until soft and golden, about 5 minutes. Add pureed tomatillos and chiles; simmer uncovered, 2 minutes. Add cilantro and 1 teaspoon salt. Gently place chicken in sauce. Simmer, covered, until meat is cooked through, about 20 minutes. Sprinkle with pumpkin seeds and cilantro. Serve with Roasted Kabocha Squash With Cumin Salt .
CROCK POT MEXICAN CHICKEN CHILI
I was fooling around with basic staples that I have in the house and on a whim, threw this together. It was a HIT! Not quite sure what to name it, but it reminds me of a chili of sort, so I named it Mexican Chicken Chili.

Steps:
- Place chicken breasts in bottom of crock pot.
- Top with Seasoning Mix, Diced Tomatoes, Kidney Beans, Garbanzo beans and Corn.
- Slice butter and arrange on top of mixture. Sprinkle salt on top.
- Cook on High 6 hours.
- When done, use two forks and shred the chicken in the crock pot.
- While your shredding, put on a pot of white rice. I usually cook 2 cups of rice to go with mixture. Or, you can serve in warm tortillas, eat like a soup or use tortilla "scoop" chips to eat.
- Put rice in bowl and serve chicken mixture on top of the rice. Optional and VERY YUMMY toppings would be chopped white onion, sour cream, crumbled tortilla chips and then a nice squeeze of fresh lime juice. Fantastic when served with everything!
