HONEY-GINGER CRUNCH

Honey-Ginger Crunch image

Steps:

  • Heat oven to 250°F. Spray large roasting pan with cooking spray.
  • In 1-quart saucepan, heat brown sugar, butter, honey and ginger to boiling. Remove from heat; cool slightly. Into roasting pan, measure cereal, pretzels, almonds and coconut. Stir in brown sugar mixture until evenly coated.
  • Bake 50 minutes, stirring every 15 minutes. Spread on waxed paper or foil; cool about 15 minutes. Place in serving bowl; stir in cranberries. Store in airtight container.

Steps:

  • Bring all ingredients to a boil; reduce heat immediately and simmer for 5 minutes.
  • Remove from heat and let stand for 24 hours.
  • Reheat over low heat and strain to remove cinnamon sticks and cardamom.
  • Place in sterilized jars and garnish with fresh cinnamon sticks.

  • Heat oven to 275°. Spray jelly roll pan, 15 1/2x10 1/2x1 inch, with cooking spray. Mix all ingredients except nuts in large bowl. Add nuts; stir to coat.
  • Spread nuts in pan. Bake 45 minutes, stirring every 15 minutes. Cool in pan, stirring occasionally.
