Steps:
- Bring 4 cups of water to a boil in a medium saucepan. Remove from the heat, add the tea bags and let steep for 5 minutes. Remove the bags, stir in the milk and honey and chill in a pitcher for at least 1 hour. Serve over ice.
HONEY CITRUS SOUTHERN ICED TEA
Steps:
- Bring 4 cups water to a simmer in a saucepan. Remove from the heat, add the tea bags and let steep for 8 minutes. Remove the tea bags and stir in the honey. Let cool.
- Add the sweetened tea to a pitcher along with 2 cups ice and another 4 cups water; stir. Add the sliced kumquats (if using), key limes and lemon. Pour into glasses over ice and garnish with mint.
HONEY MILK TEA - HONG KONG STYLE
I came up with this recipe after reading many Chinese posts; none of them sounded like the milk tea I have had before. Honey milk tea is what I always order when I go to a tea place. Technically, bubble tea is not much different from milk tea (I am not sure why they separate them into two different categories in the tea shop). There are also different styles of bubble/milk tea, like Hong Kong style, Taiwan style, etc. This is a Hong Kong-style milk tea.

- Steep the tea bags in hot water until the color turns dark red, about 3 to 5 minutes. Discard the tea bags and let the tea cool.
- Combine the ice cubes, sweetened condensed milk, and honey in a glass or cocktail shaker. Pour in the tea and mix well. (If the tea is still warm, the ice may melt; add more ice if desired.) A strong, flavorful milk tea is ready for you to enjoy.

- When you are making brewed tea, it is important to use a pot that has NOT had regular use for greasy foods, tomato sauces, or soups. I reserve a medium pot exclusively for boiling water for tea. Of course, I am fussy about my tea. Good tasting tea needs good tasting water in a clean pan. Use a good bottled water from a natural spring if it's a available. It does make a difference, and so does the tea your using. A quality organic tea, i.e. ,St Balfours or Infusions, makes a cup of tea over which you will want to linger. The bouquet and body of organic teas are superior to other commerical teas.
- While your tea is brewing, warm a teapot and/or the cups that you will be using. Fill them with hot water, and let them sit under a cotton kitchen towel until you are ready to serve the tea.
- At high heat, boil the 4 cups of water containing the cardamom pods, ginger, cloves, vanilla and the pinch of salt (optional) for 5 minutes.
- Add the tea bags and simmer 3 to 4 minutes.
- Add the milk, and increase the heat until the mixture boils. Watch the mixture closely at this stage, so the milk won't scald. Occasionally, stir the tea.
- Remove from the heat, and strain the tea into the warmed teapot or cups.
- Add clover honey to taste.

- To make Chai Tea base, in a medium saucepan, combine honey, water, tea, vanilla, ginger, cinnamon and allspice. Bring to a boil. Reduce heat and simmer for 5 minutes. Remove from heat, cover and allow to steep for 30 minutes. Remove tea bags. Cover and refrigerate Chai Tea base.
- To serve hot: Combine equal parts of Chai Tea base and milk. Heat on stovetop or in microwave.
- To serve cold: Combine equal parts of Chai Tea base and milk over ice cubes.
- Tips: This recipe can be Doubled or trippled easily. Chai Tea base may be stored in refrigerator for up to 1 week.

- Add tea bags and let steep for 4 minutes.
- Remove tea bags and stir in honey.
- Let mixture cool for 10 minutes.
- Stir in vodka and pour into 4 ice filled glasses.
- Make it kid friendly: Omit the honey and vodka. After tea has cooled, combine in blender with 1 cup vanilla ice cream and 1 cup ice cubes. Blend until smooth.
