Steps:

  • Place the first 8 ingredients in a blender; cover and process until smooth. Place arugula, onion and herbs in a large bowl. Drizzle with 1/3 cup vinaigrette and toss lightly to coat. In large serving bowl layer with a quarter of the arugula mixture, honeydew, mozzarella cheese and prosciutto. Repeat layers 3 times. Serve with remaining vinaigrette.

Prosciutto and Honeydew Bites with Balsamic and Black Pepper image

Steps:

  • Put the vinegar in a small saucepan or skillet with 1/4 teaspoon pepper and simmer over medium heat until reduced to about 1 tablespoon, about 5 minutes (be careful; it can burn quickly towards the end). Remove from the heat and set aside.
  • Wrap each piece of honeydew in a prosciutto half and top with a basil leaf, inserting a small pick to secure everything.
  • Drizzle with some of the reduced vinegar and grind a little more black pepper on top.

3 tablespoons balsamic vinegar
Freshly ground black pepper
Twelve 1 1/2-inch cubes honeydew melon

Honeydew, Cantaloupe and Prosciutto Salad image

Steps:

  • Heat oven to 400°F. Coat a baking sheet with cooking spray. Place prosciutto slices 4 inches apart on baking sheet; cook until crisp, 8 to 10 minutes. Transfer to a plate lined with a paper towel. Whisk yogurt, mayonnaise, honey, zest, juice and pepper in a bowl until smooth. Add honeydew and cantaloupe; toss to combine; divide among 4 bowls. Crumble prosciutto; sprinkle it and basil over salad. Serve immediately.

2 slices prosciutto, fat trimmed from edges
1 tablespoon 2 percent plain Greek yogurt
1 tablespoon reduced-fat mayonnaise
2 teaspoons honey
Zest and juice of 1 lemon
1/4 teaspoon freshly ground black pepper
1/2 ripe honeydew melon, cut into thin strips (with a peeler) or scooped into balls

Steps:

  • Combine the vinegar and sugar in a small saucepan over medium heat. Bring to a simmer, stirring often to dissolve the sugar. Remove from the heat and allow to cool.
  • Put the cantaloupe and honeydew in a bowl and toss with the basil and mint. Drizzle with the sweetened vinegar and toss lightly. Pile the melon on a platter and sprinkle with the flake salt.

1/4 cup champagne vinegar
1/4 cup sugar
1/4 cantaloupe, peeled, seeded and diced into 3/4-inch pieces
1/4 honeydew, peeled, seeded and diced into 3/4-inch pieces
1/4 cup fresh basil leaves, roughly chopped
1/4 cup fresh mint leaves, roughly chopped
Flake salt, such as Maldon

This is an interesting combination of flavors--not your usual fruit salad. I was sceptical at first, but I have always had great success with recipes I found in Cusine at Home, so I went for it. It was very good--refreshing and unusual. The basil and mint flavors as well as the prosciutto are all very subtle.

Melon Salad W/Fresh Mozzarella, Prosciutto and Lime Vinaigrette image

Steps:

  • Fry Prosciutto in 1 tablespoon olive oil in a nonstick skillet over medium heat until crisp.
  • Remove; drain on a paper towel-lined plate.
  • Combine melons, mozzarella, and herbs in a large blow.
  • Whisk together lime juice, 2 tablespoons oil, shallot, honey, red pepper, and salt.
  • Drizzle over fruit and toss gently to coat.
  • Transfer to a serving plate and garnish with fried prosciutto and coarsely ground fresh black pepper.
  • Serve salad at room temperature.
