Steps:

  • Slice the ginger into coins. Heat the ginger, lemon rind, water and honey to a boil in small pot. Add lemon juice to hot water and transfer to a tea pot. Add tea bags to pot and steep. Remove bags and serve tea.

Honey Teriyaki Salmon image

Steps:

  • In a large ziploc bag, marinate salmon in teriyaki at least 4 hours, or overnight.
  • Preheat grill on high.
  • Place salmon meat side down on grill for 3 minutes.
  • Rotate 1/4 turn (don't flip), cook 3 minutes.
  • Flip so skin side is now down.
  • Brush with honey.
  • Cook 6 minutes, or until no longer pink.

Steps:

  • Combine sake, mirin, and soy sauce in a small bowl; set teriyaki sauce aside.
  • Heat oil in a large skillet over medium-high. Season salmon lightly with salt. Cook, skin side down, until skin is brown and crisp, about 4 minutes. Turn and cook until other side is just beginning to brown, about 2 minutes. Transfer to a plate.
  • Pour off fat in skillet. Bring teriyaki sauce to a boil in skillet over medium heat. Cook until reduced by two-thirds, about 4 minutes. Add salmon, skin side up, and cook, spooning sauce over, until sauce is syrupy and salmon is just cooked through, about 2 minutes.
  • Serve sprinkled with sansho powder, if desired.

Steps:

  • Mix sesame oil, lemon juice, soy sauce, brown sugar, sesame seeds, ground mustard, ginger, and garlic powder in a small saucepan over low heat. Bring to a simmer, stirring until sugar has dissolved. Set aside 1/2 cup of marinade for basting.
  • Pour remaining marinade into a resealable plastic bag and place salmon into the marinade. Squeeze air out of the bag, seal, and marinate the salmon steaks for at least 1 hour (2 hours for better flavor). Drain and discard used marinade.
  • Set oven rack about 4 inches from the heat source and preheat the oven's broiler. Place salmon steaks into a broiler pan and broil for 5 minutes. Brush steaks with reserved marinade, turn, and broil until fish is opaque and flakes easily, about 5 more minutes. Brush again with marinade.

  • Preheat oven to 400°F (200°C).
  • On a baking sheet, combine broccoli, carrots, oil, salt, and pepper.

  • In a small saucepan simmer the sauce ingredients, stirring until honey is dissolved, and sauce is reduced to about 1/2 cup.
  • Cool to room temperature in a metal bowl set in a large bowl of water with some ice in water.
  • In a nonreactive baking dish large enough to just hold salmon steaks in 1 layer marinate salmon in sauce, turning to coat, about 15 minutes.
  • Preheat broiler.
  • Line a broiler pan and rack with foil.

Steps:

  • Whisk together the mirin, soy sauce, vinegar, garlic and 1 tablespoon of the brown sugar in a large bowl. Transfer 1/2 cup of the marinade to a small saucepan and set aside. Add the salmon to the bowl with the remaining marinade and toss to coat. Cover and refrigerate for at least 30 minutes and up to 1 hour.
  • Stir to combine the cornstarch and 1/4 cup water in a small bowl, then add to the reserved marinade in the saucepan along with the remaining 2 tablespoons of brown sugar. Bring to a boil and cook until the mixture thickens to a glaze consistency, 4 to 5 minutes. (You should have about 1/2 cup.) Reserve half of the sauce for serving and the other half for basting.
  • Have ready eight 12-inch metal skewers or soak eight 12-inch wooden skewers in water for 30 minutes.
  • Meanwhile, add the bell pepper to a large microwave-safe bowl, then add a splash of water and a pinch of salt. Cover and microwave until the pepper is just tender, 1 to 2 minutes. Let cool.
  • Remove the salmon from the marinade. Thread the salmon onto the skewers, alternating with the pineapple and bell pepper.
  • Heat a grill pan over medium-high heat. Lightly brush the pan with oil.
  • Grill the kebabs, turning occasionally and brushing with half of the reserved teriyaki sauce, until the salmon is opaque throughout and the vegetables are tender, 7 to 9 minutes. Transfer to a serving plate, sprinkle with some sesame seeds and scallions and serve the other reserved teriyaki sauce alongside.

  • If using a salmon fillet, cut crosswise into 4 equal pieces. Mix together marinade ingredients in a bowl or shallow dish, add the salmon, cover, refrigerate and marinate for 20 minutes.
  • Heat the oil in a frying pan. Remove the salmon from the marinade, shaking off excess liquid and reserving leftover marinade. Place skin side down in hot oil. Move fish around constantly to keep from sticking. When browned on one side, turn the salmon, reduce the heat and cook, covered, for 6 to 8 minutes. Remove the salmon from the pan, and drain on paper towels. Pour reserved marinade into pan, add the mirin and sugar, and bring to a boil. Add salmon again. Cook until marinade is almost cooked away. SALMON TERIYAKI

This is a staple recipe in my house. My pantry is always stocked with the basics like soy and mirin. If you don't have sake on hand, feel free to sub it out for sherry or white wine. Teri means "glaze" or "sauce" and yaki means "grill." Traditionally a piece of fish would be grilled over hardwood charcoal and then glazed with a luscious sauce that's sweet, salty and very savory. This version would be a Japanese home-cook version where all the work is done in one pan. I'm a believer that you can make better sauces than store bought. This teriyaki sauce recipe can be multiplied, shaken together in a bottle and held in the fridge until ready to use.

Steps:

  • For the teriyaki sauce: Mix all the ingredients in a small saucepan and bring to a simmer over medium heat; whisk about 1 to 2 minutes until the sugar dissolves and the sauce bubbles and thickens slightly. Set it aside to use on the salmon and store any leftovers in the refrigerator.
  • For the fish: Pat the fish dry with a paper towel, cut into four 3-inch pieces, and season it with salt and pepper. Heat the vegetable oil in a large heavy-bottomed skillet over medium-high heat. Once you start to see white smoke, lay the fish flesh-side down in the skillet. Move the fish around constantly while cooking to keep it from sticking. When the fish is medium, 4 to 6 minutes, turn with a spatula only once.
  • Cook the other side for another minute. Add the teriyaki sauce to the pan and reduce the heat to low. The sauce will begin to simmer and reduce. Tilt the pan around a few times and turn the fish until it's well coated with the sauce.
  • To serve, cut the baby bok choy into quarters and arrange on a platter. Place the salmon over top and drizzle with the sauce from the pan. Sprinkle the toasted sesame seeds and scallions over the salmon. Serve with rice on the side.

Steps:

  • Place Fillets in a large sheet of tin foil.
  • Season fillets with salt and pepper to taste.
  • Drizzle with honey.
  • Sprinkle and/or press garlic and ginger on the fish.
  • Douse in olive oil.
  • Seal the edges of the tin foil around the fish, forming a "pocket" that does not allow for the escape of steam.
  • Cook at 180/375 for 10 minutes and then remove from oven and CAREFULLY open the pouches.
  • Return to the oven to cook as per your tastes for the remainder of the time.
  • I prefer this fish to be "over cooked" and for the honey to take on a carmelized consistancy and the fish to be slightly "tough" and chewy. Though this is also excellent with a soft buttery consistancy fish. You'll know it is done when the fish looses it's transparent color and flakes apart in the center/thickest part with a fork.

  • PREHEAT grill to medium-high. Make drainage holes in a sheet of Reynolds Wrap Release Non-Stick Foil with a large grilling fork; set aside.

Steps:

  • Combine soy sauces and sugar to make teriyaki sauce and set aside.
  • Heat the pan or skillet to very hot.
  • Add the oil.
  • Sear the fish skin side down.
  • Turn and sear the other side.
  • Add the ginger and saute briefly.
  • Add 1/4 cup water and cover the pan.
  • Steam for 2-3 minutes, adding more water as necessary.
  • Uncover and add the teriyaki sauce and as the sauce reduces to a syrup, turn the fish in it a couple of times.
