I tinkered around with a family cole slaw recipe until I arrived at this sweet & tangy combination. The packaged shredded cabbage is a real time-saver, and the honey helps the dressing come together faster. An added bonus is there no mess to clean up!

- Place coleslaw mix in a large bowl. Combine the remaining ingredients. Pour over coleslaw mix and toss to coat. Chill until serving.

- Put cabbage and carrots in lg mixing bowl. In small bowl combine remaining ingredients. Pour over cabbage and mix well. Chill.

HONEY MUSTARD SLAW
Steps:
- Cut the cabbage in half and remove the stem. Using a mandoline or a chef's knife, slice the cabbage about 1/4-inch thick and place in large bowl.
- Heat the olive oil in a medium skillet over low heat. Add the garlic and saute until softened, about 3 minutes. Add the vinegar, mustard, honey and 1 tablespoon water, and whisk to combine. Remove from heat and add the caraway seeds. Pour the vinaigrette over the sliced cabbage, season with salt and pepper, and toss to coat. Cover with a lid or plastic wrap and let sit for 10 to 15 minutes to wilt the cabbage. Transfer to a serving platter and serve immediately.

HONEY MUSTARD VINAIGRETTE COLESLAW DRESSING
I volunteer for my local public TV station and was co-chair of the food committee that provided food and snacks for volunteers & staff at a major fund raiser in the late spring. The food tent is always located in the outdoor court yard next to the grill. I developed this recipe as an alternative for mayonnaise based coleslaw dressing since the food needed to hold up in the heat of the outdoors. They ate it as a side dish, and on their hot dogs and burgers. They even came back for seconds! This is great for regular salads and dipping too. Enjoy!

- Use heaping tablespoons of the mustard (sometimes I use a combination of yellow and spicy mustard-whatever I have on hand).
- Place all ingredients in a jar adding the salt and pepper to taste. Shake until well combined.

- Ah, cabbage. So simple, and yet it has such mass, it requires a bit of explaining. In order to achieve that familiar shredded cabbage look that you recall from experience of coleslaws past, you will first need to remove the external leaves from each head until you get to the clean interior. Don’t get too crazy about this — if you see some bruised or not-so-appetizing-looking bits once you’re in the interior, you can cut around them — you don’t want to decimate the entire head in search of a perfectly clean leaf, after all. Cut the stem from the bottom of the cabbage, and then cut the cabbage in half lengthwise, from the top to the base where the stem once was. Now place the cut side down on your cutting surface, and cut ¼-inch slices crosswise. I find that a serrated knife works well for this. When cutting near the base, simply remove the bits of the solid part, which is the core, and add them to your compost heap if you have one. Place the cut cabbage ribbons into a large serving bowl
- Whisk the olive oil, mustard, and honey together in a medium mixing bowl until the honey has dissolved and the dressing is smooth. Pour the dressing over the cabbage, turning the cabbage over itself to be sure the dressing is coating every cabbagey bit. Heed my advice at the top of the recipe if, like me, your largest bowl is not large enough. Once the coleslaw is dressed, add salt and pepper to taste. Serve it forth — perhaps even on a pulled pork sandwich — and enjoy the summer day. Or night.
