ZESTY HOPPIN JOHN SALAD

I created this salad version of Hoppin John by combining a number of ingredients from other Hoppin John recipes and adding cilantro, tomatillos, and lemon juice for a zesty flavor. The salad is just as good without red pepper for those with discerning palates. Also as an alternative, a favorite hot sauce can be substituted for the red pepper with each individual serving. I like to add a dash of Louisiana-style cayenne pepper sauce to mine.

Steps:

  • Combine black-eyed peas, celery, roma tomatoes, cucumber, red onion, green, yellow, and orange bell peppers, and tomatillos in a salad bowl. Gently stir lemon juice, balsamic vinegar, olive oil, cilantro, and red pepper flakes into the salad. Chill before serving; serve over romaine lettuce leaves.

HOPPIN' JOHN WITH ANDOUILLE

Hoppin' John is a traditional peas and rice Southern dish. This recipe uses andouille sausage as the protein and includes other flavorful ingredients such as okra, peppers, celery and tomato. Recipe developed by Food Network Kitchen.

Hoppin' John with Andouille image

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the sausage and okra; cook, stirring occasionally, until browned, about 2 minutes. Remove to a plate; cover to keep warm. Add the celery, bell pepper and scallion whites to the skillet. Cover and cook until the vegetables begin to soften, about 2 minutes.
  • Uncover the skillet; stir in the garlic, thyme and 1/2 teaspoon salt. Add the rice and stir to coat. Stir in the black-eyed peas and 2 cups water. Bring to a boil, then reduce the heat to a gentle simmer. Cover and cook until the liquid is absorbed and the rice is tender, about 18 minutes. Remove from the heat and let sit, covered, 5 minutes.
  • Fluff the rice with a fork. Stir in the sausage-okra mixture, the tomatoes and scallion greens.

  • In a large pan place the peas, ham hock, onion, red pepper, salt and pepper. Cover with water and bring to a boil. Reduce heat to medium-low and cook for 1 1/2 hours.
  • Remove ham hock and cut meat into pieces. Return meat to pot. Stir in the rice, cover and cook until rice is tender, about 20 to 25 minutes. Season to taste with salt and pepper. Sprinkle shredded cheese over top, if desired. Serve

  • Dice first 4 ingredients. Combine with next 7 ingredients in a large bowl.
  • Combine vinegars in a small bowl and whisk in the oil in a slow, steady stream. Blend well.

Steps:

  • Pick over the black-eyed peas to remove dirt and stones. Soak them in water to cover at least 4 hours or overnight. Fry the salt pork in a large heavy casserole to render the fat. When the salt pork is crisp, add the black-eyed peas and the quart of water, the thyme, salt, and pepper, cover, and cook over low heat for 40 minutes. Adjust the seasonings and continue to cook until the peas are tender. Add the rice, cover with the 3 cups hot water, and simmer over low heat until all of the liquid has been absorbed and the rice is tender. Serve hot.
  • On New Year's Day, in some families, a dime is placed in the Hoppin' John to ensure special good luck throughout the year for the person who gets it. However, the thought of cracking a tooth makes me think that this may not be the best idea. Try it if you wish.

Steps:

  • Combine 6 1/2 cups stock, black-eyed peas, bay leaves, 2 teaspoons thyme and 1/8 teaspoon cayenne pepper in heavy large saucepan. Bring to boil. Reduce heat; simmer uncovered until black-eyed peas are tender, adding more stock if necessary to keep peas submerged and stirring occasionally, about 1 1/4 hours. Drain well; discard broth and bay leaves. Transfer black-eyed peas to large bowl.
  • Bring 1 1/4 cups water to boil in heavy medium saucepan. Add rice and salt. Bring to boil. Reduce heat to low; cover and cook until rice is tender and water is absorbed, about 20 minutes. Transfer warm rice to bowl with black-eyed peas.
  • Whisk oil, vinegar, 1 teaspoon thyme and 1/4 teaspoon cayenne in small bowl. Add dressing to black-eyed pea mixture; toss. Stir in bell pepper and red onion. Season with salt and pepper. Chill at least 45 minutes and up to 6 hours.
  • Arrange lettuce on plates. Spoon salad into lettuce leaves and serve.
