HOT CHICKEN SALAD
This is a recipe from a collection of Amish Recipes published by a restaurant in Northern Indiana called Das Dutchman Essenhaus. Even though there are quite a few hot chicken salad, I'm posting this one because it is a little different and I want to know the nutrition information. The recipe calls for real mayonnaise. Do not sub fat free or low fat mayo as it will change the taste of the recipe.

Tasty chicken casserole with just the right amount of crunch made especially yummy by toasted almonds! A great use for left over chicken or turkey. - Toss together the chicken, celery, scallions, dill and parsley in a large bowl.
- In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.
- Put the parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover. Poach the chicken until firm to the touch, about 20 minutes. Remove the pan from the heat, uncover and cool the chicken in the liquid for 30 minutes.
- Transfer the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and roughly chop the meat into about 1-inch pieces. Discard the bones and skin.
- Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using.

- Soak the noodles: Boil the kettle and tip the rice noodles into a heatproof bowl. Pour over boiling water to cover. Leave noodles to soak for 4 minutes.
- Whisk and toss: Meanwhile, make the dressing. Whisk together the olive oil, lemon zest and juice and mayonnaise, then season if you want to. Drain the noodles and return to the bowl. Throw in the sugar snaps, red pepper and basil. Pour in half the dressing and gently toss.
- To serve: Divide the noodles between two bowls. Slice the chicken breasts and arrange on top of the noodles. Drizzle over the remaining dressing and serve.

- In a small saucepan, whisk flour and milk until smooth.
- Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from heat.

- In a large mixing bowl, place the chicken, almonds, artichoke hearts, celery, green onion, lemon juice, cheese, salt, and pepper. Stir until well combined. Add the mayonnaise and stir until well coated.
