I received this recipe when I was in the third grade. Our teacher made this for us in class on St. Patrick's Day, and I've made this very simple, hearty meal every year in March since then.

Simple Slow Cooker Irish Stew image

Steps:

  • Heat a skillet over medium heat and add oil. Cook stew meat until browned on all side, 5 to 10 minutes.
  • Transfer browned meat to the insert of a slow cooker. Add potatoes, onion, water, bouillon cubes, salt, and pepper.
  • Cover and cook on Low power for 8 hours.

Steps:

  • Coat beef thoroughly with flour.
  • Heat oil in a large saute pan over medium heat. Add beef and cook until browned on all sides, 7 to 10 minutes.
  • Transfer beef to a slow cooker and add potatoes, carrots, onion, diced tomatoes, coffee, soup mix, bouillon cubes, soy sauce, and mustard.
  • Cook on Low until beef and vegetables are tender, 4 to 5 hours.

Steps:

  • Heat olive oil in a skillet over medium heat. Add beef; cook until evenly browned, 3 to 5 minutes per side.
  • Place potatoes, carrots, onion, and garlic in a slow cooker; top with browned beef.
  • Pour 1/4 cup beer into the same skillet and bring to a boil while scraping the browned bits of beef off of the bottom of the skillet with a wooden spoon. Stir in tomato paste; cook until thickened, about 5 minutes. Pour beer mixture into slow cooker.
  • Pour beef broth, remaining beer, garlic powder, onion powder, paprika, salt, and pepper into slow cooker.
  • Cook on Low for 8 hours.

Steps:

  • Heat the slow cooker if necessary, then heat the oil in a frying pan. Sizzle the bacon until crisp, tip into the slow-cooker pot, then brown the chunks of lamb in the pan. Transfer to the slow-cooker pot along with the thyme, onions, carrots, potatoes, stock, bay leaves and enough water to cover the lamb. Cover and cook on Low for 7 hrs.
  • Stir in the pearl barley and leek, and cook on High for 1 hr more until the pearl barley is tender.
  • Stir in the butter, season and serve scooped straight from the dish.

  • Sauté onions: Add onions to hot skillet and sauté over medium heat until softened. Pour in about 1/2 cup of the beef broth, scraping any browned bits off the bottom of the pan (see notes for using dark beer in this step). Take off the heat and carefully pour into slow cooker over meat.

  • In a large, cast iron pot, combine olive oil, leek & onion. Cook on the stovetop on a low heat till softened (about 10 minutes). Add garlic. Cook for 1 minute and stir through. In a hot frypan, seal the lamb chunks. Turn once and seal the other side (usually about 1 minute on each side) This will need to be done in stages. Don't overcrowd the pan. We're sealing in all the goodness and rendering any fat on the outside!
  • Combine the sealed lamb into the onion/leek pot. Add the beef stock, large carrot, and herbs. Bring to simmer point on top of stove, then pop in the oven (lid on) for 2 hours.
  • Remove from oven. Remove mushy carrot (you've used all its good flavour) and add the baby potatoes, and dutch baby carrots.
