I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
- Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
- Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving.

- Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
- In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.

- Preheat the oven to 350 degrees F.
- For the fruit filling:
- In a large mixing bowl, toss together the apples, lemon juice, sugar, and flour. Pour the apple mixture into a buttered 2-quart baking dish and set aside.
- For the topping:
- In a large mixing bowl, mix the flour, rolled oats, brown sugar, cinnamon, and salt. With a food processor, a pastry blender, or your fingers work the butter into the flour mixture just until it comes together and large clumps form. Fold nuts into mixture.
- Sprinkle the topping evenly over the fruit. Bake the apple crisp until the fruit is bubbling and the topping is golden brown and crisp, about 45 minutes.
- Serve the crisps warm with vanilla bean ice cream or fresh whipped cream, if desired.

I don't know why anyone would make a pie instead of a crisp. A crisp, most often made with apples but accommodating of almost any fruit, is better textured, better flavored and easier to make. If you choose to use pears instead of apples, be aware that unripe pears are unlikely to become tender in the time it takes the topping to brown. You must begin with pears that have started to soften, or their texture will remain unpleasantly firm.

- Arrange apple quarters in food chute with cut side against the blade; slice, applying firm pressure with food pusher.

HOMEMADE APPLE CRISP OR APPLE CRUMBLE
This Apple Crisp, or Apple Crumble, is the best one that I have ever made. It has become a staple for every gathering that we hold. I hear about it if it is missing from the food line-up! I also frequently take it to potlucks, BBQ's and get-togethers. It has the perfect blend of ingredients for a true homemade, down home, apple dessert flavor. This is very comforting in the winter months served warm, yet refreshing in the summer months served at room temperature with a dollop of sour cream, cinnamon or vanilla ice cream.NOTE: Prep time does not include the 15 minute resting time after baking. Do not skip this step or the crisp will have to much unabsorbed liquid and will become messy on the plate.

- Preheat the oven to 350 degrees F.
- Butter a 9 by 13 by 2-inch baking dish.
- Zest the orange and the lemon and squeeze the juices from both.
- Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.
- To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas.
- Scatter evenly over the apples and cut the 4 table spoons of butter into slices. Place the slices all over the top of the topping. If you skip this step, you may find that you have dry spots in the topping.
- Place the crisp in its baking dish on a sheet pan to catch anything that may spill over and bake for 1 hour until the top is brown and the apples are bubbly.
- Allow to rest for 15 minutes before serving.
- COOKS NOTES: This can be made the day before. To store, let cool to room temperature, lightly place a paper towel on top of the crisp to absorb condensation. Cover tightly with foil, plastic wrap, or a lid. To reheat, place leftovers in the oven at 350 degrees for 15 minutes. Or, microwave single servings for 30-40 seconds at a time until warmed through.
