Steps:

  • For the dough: Combine flour, sugar, baking powder, salt and vegetable shortening together in a bowl using your hands or a pastry blender. Add up to 1 cup water, a little at a time, until dough pulls away from the bowl. Let dough rest in the refrigerator for at least 15 minutes or up to overnight (see Cook's Note).
  • For the filling: Meanwhile, add pickle juice, if using, to a 6-quart pot on medium-high heat. Add ground beef. Cook, using a wooden spoon or spatula to crumble ground beef until fine. As meat is browning, add parsley, green onions, tomatoes, garlic, onions, hot pepper, sweet pepper, bell pepper, thyme, salt and black pepper. Cook until all meat is brown, approximately 5 minutes.
  • Remove meat mixture to a colander to drain excess oil. Let sit approximately 5 minutes.
  • Return pot to medium heat. Add tomato paste and 1/4 cup water. Stir to thin tomato paste. Add drained meat mixture back to the pot. Mix in tomato paste mixture. Reduce heat to low and let simmer for 5 minutes. Remove from heat, and let cool until meat is room temperature.
  • Heat oil to 350 degrees F in a 6-quart cast-iron Dutch oven.
  • Cut a 2 1/2-inch piece of dough from the rested dough. Flatten into an approximate 3 1/2-inch disc using your fingers. On a lightly floured surface, use a rolling pin to flatten the dough to 1/8- to 3/16-inch-thick by 7 inches in diameter.
  • Fill the dough with 1/3 cup to 1/2 cup filling. Fold over and press with a 6-inch bowl or empanada press to seal the edges. Dust off excess flour, and gently place in the hot oil. Wait for pate to rise to the top of the oil, then flip it over. Let cook for about 1 minute, then flip again.
  • Continue cooking and flipping every minute until the pate is golden brown on both sides, 5 to 6 minutes. Remove from oil and drain on a paper towel on a cooling rack. Repeat with remaining dough and filling.

3 cups all-purpose flour, plus more as needed
1 1/2 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup vegetable shortening
2 tablespoons pickle juice, optional
2 pounds ground beef
6 sprigs fresh parsley, minced
2 green onions, sliced
2 small tomatoes, chopped
1 large clove garlic, minced

1 small sweet pepper, diced
1/2 small bell pepper (any color), diced
2 tablespoons thyme
1 teaspoon salt
1/2 teaspoon coarsely ground black pepper

Steps:

  • Place pork in a Dutch oven and add enough cold water to cover. Add half the onion, 1 tablespoon salt, peppercorns, whole cloves, bay leaf, and thyme; bring to a simmer over medium heat. Reduce heat to low, cover, and cook until pork is tender, about 3 hours. Remove from heat and let pork cool to room temperature in the liquid.
  • Meanwhile, melt lard in a medium saucepan over medium heat. Pour off and reserve all but two tablespoons fat from saucepan.
  • Return saucepan to medium heat and add remaining one-half onion; cook, stirring occasionally, until soft, about 4 minutes. Transfer onion to a large bowl.
  • Transfer pork to a large bowl with onion. Pour cooking liquid through a fine-mesh sieve and set aside. Add cloves, nutmeg, cinnamon, 1/2 teaspoon pepper, and allspice to bowl with onion and pork and using a hand-cranked meat grinder or food processor, grind or pulse pork mixture.
  • Add reserved melted lard and broth as needed to make mixture a spreadable consistency; season with salt and pepper. Transfer pate to a crock pot or bowl, pour 1/4-inch layer of reserved pork fat over top, and refrigerate 3 days before serving.

3 pound pork belly or pork butt, rind discarded, cut into 1-inch pieces
1 large onion, coarsely chopped
Coarse salt
6 whole black peppercorns

1/2 teaspoon dried thyme
1 pound rendered leaf lard
1/2 teaspoon ground cloves
1/2 teaspoon freshly grated nutmeg

Steps:

  • Place the pork, onion, cinnamon, and clove into a saucepan. Season to taste with salt and pepper. Pour in water to just cover the meat. Bring to a boil over high heat, then reduce heat to medium-low, cover, and cook until the water has nearly evaporated, about 1 hour. Stir occasionally to ensure the pork cooks evenly.
  • Use a potato masher or wire whisk to break the pork into thin strands. Pour off any remaining liquid, then spoon the gorton into a serving bowl. Refrigerate until cold before serving.

GORTON (FRENCH-CANADIAN PORK SPREAD)

French-Canadian pork spread for toast and crackers....This was my memere's recipe and so far I have never had any better. Very simple to make :) I guess from what I read, Croton and Gorton are almost the same, Gorton being the New Englander translation :) Enjoy

Steps:

  • Stir the pork fat, ground pork, onions, water, cloves, and nutmeg together in a large pot. Season to taste with salt and pepper. Bring to a boil over medium-high heat, then reduce heat to medium-low, and simmer until the pork is tender, at least 1 1/2 hours. Use a potato masher to mash the pork mixture every 15 minutes as it cooks.
  • The longer you simmer the gorton, the better the flavor will be. Add water as needed to keep the mixture from boiling dry. When you're ready to stop cooking, let the liquid reduce as much as possible without letting it burn. Refrigerate the gorton overnight. Remove and discard the fat layer, or stir it into the meat for a creamier spread.

Steps:

  • If your meat is too lean, cut up 1/4-1/3 pound Salt Pork, and render into lardons. Remove the salt pork bits, then continue the recipe, omitting the salt. Do not use bacon for the extra fat, bacon is smoked. You can use Lard, 1-2 T, in a pinch.
  • Put all ingredients into a large sauce pot, just covering by an inch with the water.
  • Mix together.
  • Simmer on low, stirring frequently for 3-4 hours.
  • Add water as needed to keep moist and from sticking.
  • After the allotted cooking time you should have simmered the mixture down till there is about an inch of combined fat and water.
  • Taste to check the seasonings. If your spices are old, you may need to re-spice the mixture
  • (with the same amounts), then cook out the raw taste a bit.
  • Transfer to a bowl to cool, stirring to keep fat suspended in meat.
  • Serve warm on toast, or cold for sandwiches.
  • For Tourtiere mix the same mixture with 3 0r 4 mashed (dry) potatoes,
  • allowing them to suck up the moisture.
  • Allow to cool, and ladle into pre-pared pie crusts.
  • Egg wash and bake to specifications.

3 lbs ground pork butt (or ground pork)
1 medium onion (chopped fine)
1 tablespoon allspice
1/2 teaspoon clove
1/4 teaspoon cinnamon
2 cups water (you may not need it all)
1/8 teaspoon pepper
1/2 teaspoon salt

THE BAREFOOT CONTESSA'S PARMESAN CROUTONS

This recipe comes from Ina's book, The Barefoot Contessa Cookbook. She says it was devised to use leftover baguettes and she uses them as crackers for appetizers, on top of soup and as a snack. She suggests that you grate whole parmesan rather than buying the already grated kind.

Steps:

  • Preheat the oven to 400 degrees.
  • Slice baguette diagonally into 1/4 inch thick slices. Depending on the size of the baguette, you should get about 20 to 25 slices.
  • Lay the slices in one layer on a baking sheet and brush each with olive oil and sprinkle liberally with salt and pepper. You can use either plain or flavored olive oil such as basil or garlic. The measurements for the salt and pepper in the ingredients are just estimates and you use whatever amount suits you. Sprinkle with the grated parmesan and bake for 15 to 20 minutes until they are browned and crisp. Serve at room temperature.
