INDIVIDUAL BAKED EGGS

A very easy idea with a minimum of fuss or muss for any number of people. Individual Baked Eggs surrounded by a strip of bacon, and topped with a square of cheese. These eggs take on a very pleasing flavor just by baking instead of cooking them in the more conventional manner. Great not having splatters all over, and being able to do 12 or more eggs at one time.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, but still flexible. Wrap bacon slice around the inside of a muffin cup. Place a teaspoon of butter (or bacon grease) in the bottom of muffin cup. Drop in egg.
  • Bake in preheated oven for 10 to 15 minutes. Place 1/4 slice of cheese over egg, and continue cooking until cheese is melted and egg is cooked.

Meal Prep Muffin Tin Egg Bites image

Steps:

  • Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with cooking spray.
  • Crack the eggs into a large bowl, add the salt and whisk to combine. Divide the mixture evenly among the muffin cups. Top with desired variation ingredients. Bake until the centers of the muffins no longer jiggle, 17 to 20 minutes.
  • Let the muffins cool in the pan for 5 minutes. Run a knife around the edges of the muffins, unmold and serve. If storing, allow to cool completely, place in a resealable plastic bag and refrigerate or freeze.
  • To reheat, microwave the muffins one at a time for about 30 seconds if refrigerated, 1 minute if frozen. You can also heat them in a 250-degree-F oven until warmed through.

Steps:

  • Preheat over to 350 degrees.
  • Brown sausage in a skillet.
  • Add in onion and bell pepper after the sausage has rendered a little fat.
  • While the sausage browns, grease two ramekins and layer in the bread and cheese.
  • In a bowl combine eggs, milk, salt, and pepper; mix thouroughly.
  • Pour egg mixture over bread and cheese. Top with browned sausage mixture.
  • Bake for 45-50 minutes.

Steps:

  • Prheat oven to 400°F.
  • Drain thawed potatoes and make sure there is no excess water on them.
  • Spray the inside of an 8 ounce casserole dish or ramekin with non-stick cooking spray.
  • Press potatoes into the bottom of the ramekin.
  • Place ramekin on a baking sheet and bake for 20 minutes, or until potatoes are lightly browned around the edges.
  • Remove from oven and allow to cool for 10-12 minutes.
  • Right after removing from oven, reduce oven temp to 350°F.
  • In a small saucepan, saute the peppers, onion, and jalapeno until tender, 5-7 minutes.
  • In a small bowl, mix together the egg and the cream, add the minced garlic and season to taste with salt and pepper.
  • Spray the top of the potatoes and sides of the ramekin again with a little more cooking spray (I like butter-flavored).
  • Place half the cheese on top of the potatoes in the ramekin.
  • Cover this cheese with the sauteed peppers and onion.
  • Pour egg mixture over that.
  • Top with remaining cheese.
  • Carefully place ramekin on a baking sheet in the oven and bake for 25-35 minutes or until set, puffy, and golden.
  • Allow to rest 5-10 minutes after cooking.
  • Then run a knife around the edges of the ramekin, and invert onto a serving plate.
  • Tap lightly, and carefully lift ramekin away from casserole.
  • Serve warm.

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter a bundt tin or fluted cake ring (at least 2.5-litre capacity), then dust the tin with a little flour, shaking off the excess. Beat all the cake ingredients with a pinch of salt using an electric whisk until you have a smooth batter. Spoon into the prepared tin, smoothing the top with a palette knife, then bake for 35 mins until a skewer inserted into the centre comes out mostly clean with a few dry crumbs attached.
  • For the drizzle, combine the sugar with the orange juice in a saucepan, then reduce over a medium heat to a loose syrupy consistency. Prick the base of the cake all over with a skewer, then pour over half the syrup, adding the rest once it has been absorbed, Leave the cake to cool in the tin for 15 mins, then turn out onto a wire rack to cool completely.
  • While the cake is cooling, make the icing. Beat the butter with half the icing sugar and the vanilla extract until smooth and fluffy. Add the remaining icing sugar and the cream cheese and beat again until well combined - don't overbeat or the icing will become runny.
  • Spread a thin layer of the icing over the entire cake, taking care to get into all the crevices, then pop in the fridge for 20 mins to set. If you are short of time, you can always put it in the freezer. Spread the remaining icing onto the cake in an even layer. Once iced, the cake will keep in the fridge for three days. Bring to room temperature before decorating and serving.
  • Sort the Mini Eggs into different colours (a possibly therapeutic exercise, depending on your organisational tendencies). Stick the Mini Eggs all over the top of the cake.
