Great healthy muffin. I got this recipe off a Hodgson Mill flax seed box. I'm always looking for ways to add fiber to my diet. This muffin fit the bill.

Whole Wheat Flax'n Apple Muffins image

Steps:

  • Blend dry ingredients together in a bowl.
  • In a separate bowl, combine egg, vegetable oil and milk.
  • Add dry ingredients to egg mixture and stir until just blended.
  • Fold in apples and nuts.
  • Batter will be thick.
  • Fill greased muffin cups 2/3 full.
  • Bake at 400 degrees for 18-20 minutes or until top springs back when touched.

3/4 cup whole wheat flour
3/4 cup white flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/4 teaspoons salt
1 egg, beaten
1 1/2 cups finely chopped apples

These muffins are full of grains, apples and nuts that are good for you. I found the recipe on a box of milled flax seed. Flax seed is nature's richest plant source of OMEGA-3 OILS!

Steps:

  • Blend all dry ingredients together in a bowl.
  • In a seperate bowl; combine egg, oil, and milk; add dry ingredients to egg mixture and stir until JUST blended.
  • Fold in apples and nuts; batter will be thick.
  • Fill well greased muffin cups 2/3 full; bake at 400 degrees for 18 to 20 minutes, or until tops spring back when touched.

Steps:

  • Preheat the oven to 400 degrees. Line 12 muffin tins (2 1/2 inch round) with paper liners. Sift sugar, baking powder, baking soda, salt and cinnamon together. Add flour and sift again. In a bowl combine egg, melted butter and buttermilk. Stir the wet ingredients into dry ones and mix just to combine don't overbeat. Add apples and pecans. Spoon batter into muffin tins to the top. Sprinkle with granulated sugar and bake 25 minutes. Transfer to a rack to cool.

Steps:

  • Preheat the oven to 400.
  • Grease 12 muffins cups or line a pan with paper muffin liners.
  • Combine the flours, baking powder, baking soda, salt and cinnamon in a mixing bowl.
  • In another bowl, cream the butter and add the sugar.
  • Beat until light and fluffy.
  • Add the egg and mix well.
  • Stir in the buttermilk.
  • Add the dry ingredients to the buttermilk mixture and fold in the chopped apples.
  • Spoon the batter into the prepared muffin pan and bake for 25 minutes, or until the muffins are firm to the touch.
  • Allow the muffins to cool before serving.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
  • Place green onions and bell peppers into a large mixing bowl. Add eggs, bacon, milk, garlic powder, onion powder, salt, and pepper. Sprinkle Cheddar cheese into the bowl and whisk ingredients together until incorporated.

Steps:

  • Preheat oven to 350 degrees. Grease a mini cupcake/muffin pan with non-stick spray or line with baking cups.
  • In a large bowl of a mixer, beat together pumpkin and Stevia. Then beat in eggs one at a time.
  • Add the sugar-free syrup and vanilla, and mix well.
  • With mixer on low, gradually add ground flax 1/3 at a time until well combined.
  • Stir in salt, cinnamon and nutmeg.
  • Spoon mixture into cups, filling about 2/3 of the way.
  • Place in oven and bake for 25 to 30 minutes.
  • Cool for 5 minutes before releasing muffins to a wire rack to cool completely.

Steps:

  • Preheat oven to 350F degrees.
  • Place apples in a buttered 2-quart casserole dish.
  • Sprinkle with stevia and lemon juice.
  • In a small bowl, combine granola , stevia, flour, cinnamon and flax.
  • Cut butter into mixture until the mixture is crumbly.
  • Sprinkle over the apples.
  • Bake for 40 minutes or until apples are tender.
  • If you are gluten intolerant, look on the label of the granola you are using to make sure wheat hasn't been added.
  • The flax seed gives a nice, nutty crunch.

Sift flour, baking powder and xanthan gum into a large bowl, then add the bran (mix again). In a separate bowl, whisk eggs with the cream and milk. Add capsicum, crumbled feta and basil to the egg mixture.

These are low-fat and low-sugar, which is good for us diabetics. I use a little real sugar with the Splenda, because the texture turns out better, and my blood-sugar levels are under control, but some diabetics may want to use a cup of Splenda and no brown sugar.
