CHAI TEA CONCENTRATE
Convenient (and relatively inexpensive) way to have chai 'lattes' at home. The cardamom can be a bit expensive; try looking in the bulk section of a health food store. If you need to buy a jar of it, don't worry - it will make several batches!

Steps:
- Bring water to a boil in a saucepan; add cloves and boil for 1 minute. Add cinnamon sticks, ginger, cardamom pods, peppercorns, and tea. Allow tea to steep for 6 minutes; strain into a container. Stir brown sugar and vanilla extract into tea and refrigerate until chilled, at least 1 hour.

INSTANT CHAI TEA MIX
Spice this up even further by adding 1 teaspoon each nutmeg and allspice, and 1/4 teaspoon white pepper. You may choose to omit the French vanilla creamer, and use 2 teaspoons vanilla extract instead. To do so, mix the vanilla into the sugar, let it dry, then break the sugar into small lumps. - To serve: Stir 2 heaping tablespoons Chai tea mixture into a mug of hot water.
- Store dry mixture in an airtight container.

- In a food processor, combine instant tea, powdered creamer, milk powder, confectioners' sugar and brown sugar. Add ginger, cinnamon, cloves, cardamom, allspice and vanilla powder. Process for 2 minutes. Store in an airtight container.

CHAI TEA MIX GIFT IN A JAR
Watch out Starbucks, you'll be out of business in no time. The nutmeg and allspice is an added spice hit, use as desired. Also, I've been playing around with the amount of sugar, I like the sweetness with just 1/2 cup sugar, some suggest no sugar at all. If you don't care for the residue in the bottom of your cup, you can strain the mix with a fine sieve. Food for thought. Note 12-21-12 (I want to thank the gal that just reviewed The Chai Tea.... she used it in her K coffee machine by just running hot water into the cup, perfect temperature for the tea mix)
