- Fill footed mug or a mug with hot water to preheat it, then empty. Pour piping hot coffee into warmed glass until it is about 3/4 full. Add the brown sugar and stir until completely dissolved. Blend in Irish whiskey. Top with a collar of the whipped heavy cream by pouring gently over back of spoon. Serve hot.

- Place sugar on a plate or shallow bowl. Lightly wet the rim of an Irish coffee glass with a moistened paper towel. Dip the rim in sugar to coat.
- Pour Irish whiskey into the prepared glass. Fill with coffee to within 1/2 inch of top. Add sugar and stir. Top with whipped cream.

- In a small saucepan, combine coffee, milk and cocoa. Heat the mixture over moderate heat, whisking, until the cocoa is dissolved, and let it cool. Stir in 1/2 cup of the liqueur, pour the mixture into a metal ice tray fitted with the divider, and freeze it until it is frozen solid. The coffee mixture may be prepared up to this point 1 day in advance.
- In a blender, blend the frozen coffee mixture with the remaining 1/2 cup liqueur, scraping down the sides occasionally, until the mixture is smooth but still frozen and divide the mixture between 2 stemmed glasses.
