COCONUT SHRIMP
Large shrimp are coated in a light coconut breading and fried until golden. Then served with your choice of sweet chili or sweet and sour sauce.

- Heat about 2 inches of oil in a heavy-bottomed pot or large Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees F.
- Meanwhile, put the eggs in one shallow dish. Whisk together the flour, cornstarch, cayenne, 2 teaspoons salt and 1 teaspoon pepper in a medium bowl. Transfer half the flour mixture to a third bowl and stir in the coconut.
- Working in batches, dredge the shrimp in the flour mixture, shake off any excess, dip in the eggs and then roll in the coconut mixture, pressing to coat thoroughly. Fry until golden, 2 to 3 minutes, adjusting the heat as needed to maintain the oil temperature. Transfer the shrimp to paper towels to drain. Serve with sweet chili or sweet and sour sauce on the side for dipping.
COCONUT SHRIMP I
These crispy shrimp are rolled in a coconut beer batter before frying. For dipping sauce, I use orange marmalade, mustard and horseradish mixed to taste.

- In medium bowl, combine egg, 1/2 cup flour, beer and baking powder. Place 1/4 cup flour and coconut in two separate bowls.
- Hold shrimp by tail, and dredge in flour, shaking off excess flour. Dip in egg/beer batter; allow excess to drip off. Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30 minutes. Meanwhile, heat oil to 350 degrees F (175 degrees C) in a deep-fryer.
- Fry shrimp in batches: cook, turning once, for 2 to 3 minutes, or until golden brown. Using tongs, remove shrimp to paper towels to drain. Serve warm with your favorite dipping sauce.

- Heat oil in a pan on medium low (if oil is too hot the breading will fall off).
- Butterfly the shrimp; leave tail on.
- Spread flour on a plate.
- Mix eggs into a small bowl.
- Mix bag of panko and 1 cup of coconut into medium bowl
- Sprinkle a little garlic salt each shrimp.
- Cover the shimp with flour on plate.
- Dip flour covered shrimp into egg untill wet.
- Place shrimp into panko/coconut bowl and squeeze the batter on.
- Cook in oil until golden brown.
COCONUT SHRIMP
Steps:
- Remove skin from shrimp, leave tails attached. Butterfly shrimp 1/2 way, dust with flour. Mix flour, egg, beer, salt, pepper and sugar creating a batter. Dip shrimp into batter without dipping the tails, then dip into coconut. Refrigerate for 15 minutes minimum. Heat oil to 325 degrees F. Deep fry shrimp.

ISLAND COCONUT CURRY SAUCE
Brush this slightly sweet sauce on shrimp or chicken before and during grilling. The recipe makes enough for 1 1/2 pounds of chicken or shrimp, with some left over to pass at the table. DO NOT substitute coconut milk for the cream of coconut. Coco Lopez is usually found with drink mixers in the grocery, I have found other brand for much less at my local Asian markets. You can also use as a marinade.

- For the shrimp: Position a rack in the center of the oven and preheat the broiler. Set a wire rack in a rimmed baking sheet and spray the rack with oil.
- Pat the shrimp dry.
- Place the flour and salt in a bowl and whisk together. Place the eggs in another bowl, and the coconut in a third bowl.
- Working in batches, lightly coat the shrimp in the flour and gently tap to remove the excess; dip in the egg and then roll in the coconut to coat. Place the coconut shrimp on the prepared wire rack.
- When all the shrimp are on the rack, lightly spray them with oil. Transfer the baking sheet to the oven and broil the shrimp on the center rack until crispy and cooked through, about 3 minutes per side.
- Meanwhile, make the sauce: Place all of the ingredients in a small bowl and stir until combined.
- Serve the coconut shrimp with the dipping sauce on the side.

- Make the seasoning blend by combining all the spices and the salt (first 5 ingredients for the sauce) in a small bowl.
- Prepare the other ingredients.
- Bring a big pot of salted water to boil and add pasta when ready.
- In the meantime prepare your shrimps.
- Add margarine or vegetal oil to the pan (medium heat).
- Stir in garlic and ginger and coconut flakes.
- When it begins to change the color add the shrimps.
- Change to maximum heat.
- Sprinkle the entire seasoning blend over the shrimp, and give it all a good stir.
- Saute the shrimp for 5 to 6 minutes or until they begin to brown.
- Be sure to cook both sides of all the shrimp.
- Check the pasta and if necessary drain before the sauce is ready (adding some oil to prevent sticking).
- Cut the lime in half and squeeze the first half into the pan over the shrimp.
- Add cilantro (reserve some leaves for decoration).
- Add 2 tablespoon coconut milk if you prefer it wheat.
- Stir and serve.
- Squeeze the second half lime over the pasta in the plate.
- Decorate with coconut milk and the reserved cilantro leaves.

- Heat oven to 425 degrees F. Line a baking sheet with parchment paper. Unroll pizza dough and place on prepared baking sheet, stretching to make into a rectangle. In a small saucepan, melt butter over medium heat with garlic. Brush melted garlic butter on dough and bake for 8 minutes. Set aside.
- In a shallow dish, stir to combine panko, shredded coconut, 1/2 teaspoon salt and 1/8 teaspoon pepper. Place eggs in a separate shallow bowl or dish and beat with a whisk. Coat shrimp in egg then coat in panko and coconut. Place on a plate or tray.
- Heat canola oil in a medium skillet over medium heat. Cook shrimp until lightly golden, about 1-2 minutes per side. Drain cooked shrimp on a towel-lined plate.
- To prepare pizza, top crust with half of the shredded mozzarella, chilis, pineapple, red onion and coconut shrimp. Sprinkle over remaining cheese and bake until crust is golden and cheese is melted, about 6-10 minutes.
- Transfer to a cutting board and garnish with chopped scallions.
