CARIBBEAN ISLAND COLESLAW

After trying a similar version of this coleslaw while visiting the island of St. Kitts, I returned home and wanted to make it myself. I've taken it to so many events, and it's always a hit. -Noreen McCormick Danek, Cromwell, Connecticut

Caribbean Island Coleslaw image

Steps:

  • Place the first 5 ingredients in a serving bowl. In a small bowl, combine remaining ingredients. Pour over slaw mix; toss to coat. Refrigerate until serving.

1 cup unsweetened pineapple tidbits
1/2 cup sweetened shredded coconut
1/2 cup golden raisins
1/2 cup finely chopped sweet red pepper
1-1/2 cups mayonnaise
1/2 cup unsweetened pineapple juice
3/4 teaspoon salt
1/4 teaspoon celery seed
1/4 teaspoon pepper

Steps:

  • In a serving bowl, combine first 8 ingredients. Process dressing ingredients in a blender until smooth. Toss dressing with slaw at least 30 minutes before serving. Refrigerate.

1/2 medium head Savoy cabbage, thinly sliced into 3-inch strips (about 8 cups)
1/2 small head red cabbage, thinly sliced into 3-inch strips (about 6 cups)
2 medium carrots, cut into thin 2-inch strips
1 small sweet yellow pepper, cut into thin 2-inch strips
1 small sweet red pepper, cut into thin 2-inch strips
1 small red onion, halved and thinly sliced
1/2 medium mango, peeled, cut into thin 2-inch strips
1/2 jalapeno pepper, seeded and finely chopped
DRESSING:
1/2 cup plain Greek yogurt
1/4 cup thawed orange juice concentrate
4 teaspoons lime juice
1/2 teaspoon olive oil
1/2 medium mango, peeled and coarsely chopped
2 teaspoons minced fresh gingerroot
1 teaspoon kosher salt
1/2 jalapeno pepper, seeded and coarsely chopped
1/4 teaspoon pepper

Steps:

  • In large bowl, combine mayonnaise, lime juice, sugar, mustard, ginger, salt and pepper. Add cabbage, carrot, onion and parsley; mix well. Chill for at least 1 hour before serving.

2/3 cup (150 mL) regular or light mayonnaise
1 tbsp (15 mL) lime juice
1 tbsp (15 mL) granulated sugar
1 tsp (5 mL) prepared mustard
1/2 tsp (2 mL) ground ginger
1/4 tsp (1 mL) each of salt and pepper
4 cups (1 L) shredded Ontario Green Cabbage
1 Ontario Carrot, shredded
1 small Ontario Onion, finely chopped
1/4 cup (50 mL) chopped fresh parsley

Easy Caribbean Island Coleslaw image

Steps:

  • 1. Mix all ingredients together well in a bowl. Refrigerate for at least 4-8 hours. The longer it sits in the refrigerator. The better it will be. It would be great to make this and let it sit overnight before serving the next day.
  • 2. Mix well before serving !

12 oz bag of coleslaw mix
3/4 c mayonaise such as hellmans
1/3-1/2 c unsweetened pineapple tidbits cut in to tiny pieces, or fresh pineapple.
1/4 c pineapple juice from above pineaple tidbits
NOTE: IF YOU CAN'T FIND CANNED PINEAPPLE TID BITS. CUT CHUNK PINEAPPLE IN TO SMALLER PIECES
1/4 c sweetened coconut
1/4 c golden raisins or regular raisins
1/4 c finely chopped red bell pepper
salt and pepper to taste
1/8 tsp celery seed

12-SECOND COLESLAW

When people think of coleslaw, they think of that bowl of soggy, shredded cabbage sitting at the end of the picnic table. This is a completely different approach; a fresh-shredded cabbage prepared as a fast (12 seconds adding ingredients, 30 seconds to mix), crisp, low-cal, low-carb, slightly spicy, and delicious side dish that you should be eating as part of your regular veggie side-dish rotation. Serve immediately after mixing.

COLESLAW - BAHAMIAN STYLE!

This recipe is from transitionfarm.com and is from Long Island, part of the Out Islands in the Bahamas. Keep it in a glass jar with a lid in the refrigerator. This is an excellent dressing alone for cucumbers and onions, or beets and onions. A bit of it is wonderful with sauteed red cabbage, sauteed greens, or in potato salad.

Coleslaw - Bahamian Style! image

Steps:

  • 1. Make Basic Dressing and allow to cool.
  • 2. Combine all ingredients for the Bahamian Style Coleslaw Dressing and blend with a wire whisk or in a food processor.
  • 3. Core cabbage and finely shred with sharp knife (don't chop).
  • 4. Grate carrots, if they are large, or finely slice if they are small.
  • 5. Mix to taste with dressing.

1/2 head cabbage
2 medium carrots
BASIC DRESSING:
1/2 c sugar
1/2 c white vinegar
1/2 c water
BAHAMIAN STYLE COLESLAW DRESSING:
2 Tbsp mayonnaise
2 Tbsp basic dressing (recipe included here)
juice of 1/2 lime
dash(es) hot pepper sauce (to taste)
sea salt
pepper

HAWAIIAN COLE SLAW

This is excellent served with pulled pork. Its a nice mix of sweet, tangy, and crunchy.
