ITALIAN BAKERY COOKIES
These were some of my favorite cookies growing up - there were a bunch of amazing Italian bakeries outside of Chicago and I was always drawn to these cookies because of the sprinkles. But what really gets me is that soft layer of jam in the middle that makes the cookies a little bit chewy (and that splash of almond is irresistible as well).

Steps:
- Place oven racks in the top and bottom third positions. Preheat the oven to 350 degrees F.
- Line 2 rimmed baking sheets with parchment paper and set aside.
- Whisk together the flour, salt and baking powder in a medium mixing bowl. Add the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment and beat on medium-high speed until light and fluffy, 1 to 2 minutes. Add the egg, vanilla and almond extracts and beat until light and smooth, 1 minute more. Reduce the speed to low and add the flour mixture. Beat until just combined.
- Transfer the dough to a piping bag fitted with a large open star tip. Pipe the dough onto the prepared baking sheets in 2-inch lines, spaced 1-inch apart (you should be able to fit 12 cookies per tray). Bake in the oven until the cookies are set on top and golden around the edges, 12 to 15 minutes. Cool completely on the sheet trays. Once the cookies are set, transfer all onto one tray, leaving 1 cooled tray to bake the remaining dough (you'll have enough for about 12 more cookies).
- Melt the chocolate and coconut oil in a double boiler or in the microwave on 50-percent power in 15 second increments. Pipe or spread the flat sides of half of the cookies with about 1 teaspoon jam each, going almost to the edges. Sandwich with the remaining cookies (you should have about 18 sandwiches). Allow the jam to set for 2 hours or overnight, if you have time. Otherwise, it's okay to go ahead and start dipping your sandwich cookies into the chocolate (it just might be a little slippery.).
- Dip the lower third of the cookies in the chocolate letting the excess drip back into the bowl. Sprinkle with the sprinkles on both sides. Lay back on a parchment lined baking sheet and pop the cookies in the refrigerator for about 10 minutes to let the chocolate set.
- Tip: To make uniformly sized cookies, use a ruler and a marker or pen to draw 2-inch lines on 2 sheets of parchment paper in a 3-by-4-inch grid. Flip the parchment over and place on 2 baking sheets so the marker side is down but you can still see the lines. Using the lines as a template, pipe the dough in 2-inch lines on the baking sheets, using a paring knife or shears, if needed, to cut the dough from the piping bag in straight edges.

- Preheat oven to 400°. In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder and salt; gradually add to creamed mixture and mix well. , Shape dough into 1-1/2-in. balls. Place 1 in. apart on ungreased baking sheets. Bake 8-10 minutes or until lightly browned. Remove to wire racks to cool., For icing, in a small bowl, combine milk, butter, vanilla and confectioners' sugar until smooth. Tint with food coloring if desired. Dip tops of cookies in icing; allow excess to drip off. Sprinkle with coarse sugar if desired. Place on waxed paper; let stand until set.

ITALIAN LEMON COOKIES
Yummy little Italian cookies that you can serve at holiday gatherings. Be creative! You can shape them however you like!

Steps:
- In a small bowl, sift flour and baking powder together.
- In mixing bowl, beat eggs with sugar until light and lemon colored.
- Add the softened butter and lemon zest.
- Slowly beat in the flour and baking powder.
- Gradually add milk and vanilla.
- Dough should be soft.
- Divide dough into 6 sections.
- Roll out each section into a rope 1/2-inch wide.
- Cut into 3-inch pieces and twist each piece to form a loop.
- Place on a greased baking sheet or a parchment lined baking sheet.
- Bake in a 350°F oven for 10-12 minutes or until light brown.
- Remove from oven and cool.
- Combine the powdered sugar and enough orange juice to form a thin icing.
- Brush on top of cookies and sprinkle with colored candies.
- Makes about 4 dozen cookies, depending on size and shape of cookie.
ICED ITALIAN COOKIES
Posted by request, these pretty little cookies are very often served at holiday gatherings in many Italian American families. You may shape them any way you prefer, and change the flavoring of the icing slightly to suit your tastes. The original recipe came from one of my favorite community style cookbooks called "Preserving Our Italian Heritage" compiled by the Sons of Italy Florida Foundation. I combined several variations submitted by 5 different ladies, all of whom used the same basic cookie recipe but used slightly different methods in shaping and icing the cookies. The yield will vary depending upon how you shape your cookies.

Steps:
- Cream butter and sugar until soft and creamy.
- Add eggs and vanilla, mixing well.
- Combine flour and baking powder, then blend into the butter mixture.
- Break off small, walnut sized pieces of dough and shape into bows, braids, knots,"s" shapes, or any shape you desire.
- Bake in a preheated oven at 375 F until lightly browned, about 15-20 minutes.
- Cool on wire racks,then ice as desired.
- Icing: Blend sugar and your choice of flavoring, adding milk slowly to form a soft, smooth icing (some ice the cookies while they are still warm, others wait until they are cooled).
- Sprinkle with colored sugar or confettini (tiny multi-colored sprinkles) before icing sets.

- Italian Wedding Cookies. Similar to Mexican wedding cookies, these are nutty, buttery, and wonderfully sweet. You can find these with anise or lemon flavoring, but I think the traditional vanilla cookies are the best.
- Pizzicati (Italian Pinch Cookies) It’s clear why these are called ‘pinch’ cookies. As you can see, they’re essentially discs of cookie dough that get pinched together around a filling.
- Italian Sprinkle Cookies. If you liked the idea of the wedding cookies but feel like they could use a makeover, you’re in luck! Of course, you could use the same recipe mentioned above and just add glaze and sprinkles.
- Authentic Italian Anise Biscotti. Biscotti is probably the most recognizable Italian cookie recipe, and I love that you can find it in so many flavors.
- Classic Italian Pizzelles. Pizzelles are just as recognizable as biscotti, but they’re not something you’d make every day as a home baker. These aren’t made that often because you’ll need a pizzelle maker to get that signature shape.
- Italian Ricotta Cookies. Where we use cream cheese, the Italians will almost always turn to mascarpone or ricotta. And if you’ve ever made cookies with cream cheese, you’ll know that it makes them super creamy, extra tender, and beyond delicious.
- Cinnamon Walnut Croissant Cookies. Also known as rugelach or Italian Butterhorn, these little cookies are dangerously tasty. Unlike real croissants, these won’t need hours to make.
