Brunch on a random Wednesday morning? Oh, why not. These were so good! I had them with salsa, but I think they would pair well with pesto or marinara, too.

Italian Corn Cakes image

Steps:

  • 1. In a large bowl, mix together the dry ingredients. Add the sour cream and about half the water. Gradually incorporate the rest of the water and corn kernels.
  • 2. Heat up a skillet or griddle to medium high. Prepare with cooking spray or butter. Cook spoonfuls of the batter about 2 minutes on each side.

2 c whole grain flour
1/4 c italian seasoning
salt and pepper
1 Tbsp baking powder
1/4 c sour cream, fat-free
1 1/2 c water
2 c corn kernels, frozen

Steps:

  • Heat a skillet over high heat. Heat butter in hot skillet until almost completely melted; stir in corn. Season corn with Italian seasoning, salt, and black pepper. Cook seasoned corn until light golden brown, about 5 minutes.

Steps:

  • Preheat the oven to 450 degrees F.
  • Combine the cornmeal, flour, baking powder and salt in a bowl and stir together.
  • Measure the buttermilk and milk into a measuring cup and add the egg. Stir together with a fork. Add the baking soda and stir. Add the Parmesan, sun-dried tomatoes and oregano and mix together. Pour the milk mixture into the dry ingredients and stir with a fork until combined.
  • In a small microwave-safe bowl, melt 1/4 cup shortening in the microwave. Slowly add the melted shortening to the batter, stirring until just combined.
  • In a 10-inch cast-iron skillet, melt the remaining 2 tablespoons shortening over medium heat. Pour the batter into the hot skillet (the batter should sizzle) and spread to even out the surface. Cook on the stove top for 1 minute, then transfer to the oven and bake until golden brown, 20 to 25 minutes. The edges should be crispy!

These sweet corn cakes are a bit of buttery heaven, but they're more of a thick pudding than a cake. El Torito Restaurant in LA serves a scoop of the corn cake to garnish their entree dishes. This recipe was provided by the restaurant to the Los Angeles Times for publication in their reader request column. The recipe was also published in the book: "Dear SOS: Favorite Restaurant Recipes from the Los Angeles Times."

Sweet Corn Cake Recipe from El Torito Restaurant image

Steps:

  • Preheat oven to 350 degrees F.
  • Spray an 8" X 8" Pyrex baking pan with no-stick spray and set aside.
  • Beat the butter and shortening together (using an electric mixer) until fluffy.
  • Gradually beat the instant masa into the butter mixture, then beat in the water.
  • Add the chopped corn kernels to the masa mixture.
  • In a large bowl, combine the cornmeal, sugar, cream, baking powder and salt.
  • Add the masa mixture to the cornmeal mixture and stir well to combine.
  • Spoon the dough into the prepared pan, cover pan with foil and bake 40-50 minutes until the sweet corn cake is firm.
  • Remove pan to a wire rack to cool 15 minutes before serving.
  • Serve with a cookie dough scoop.

Steps:

  • Whisk together masa harina, flour, baking powder, and salt in a medium bowl. Stir in cheese and corn kernels. Add water, 1/4 cup at a time, stirring after each addition until mixture holds together.
  • Heat 1/4 cup oil in a cast-iron skillet over medium heat until hot but not smoking, about 5 minutes. Meanwhile, scoop a heaping 1/3 cup mixture, and use your hands to shape into a patty, about 1/3 inch thick. Repeat with remaining mixture, forming 8 patties.
  • Working in batches of 4, fry patties, turning once, until golden brown, 2 to 4 minutes per side. Using a slotted spoon, transfer to paper towels to drain. If pan becomes dry, add 2 tablespoons oil for second batch. Cover patties with foil to keep warm, up to 30 minutes.

Steps:

  • Preheat oven to 325 degrees. Combine milk and lemon juice in a bowl; let stand until thickened, about 5 minutes. Pulse almonds, cane sugar, and zest in a food processor until finely ground. Transfer mixture to a large bowl; stir in cornmeal, baking powder, baking soda, and salt. Add oil, eggs, and almond extract to milk mixture, and whisk until combined. Stir into cornmeal mixture.
  • Brush a 9-inch springform pan with oil. Pour batter into pan. Bake, rotating pan halfway through, until cake is golden and a tester inserted in center comes out clean, about 55 minutes.
