REAL ITALIAN HOAGIE
More Philly Stuff? You got it! Here's how to make a real Hoagie. The word Hoagie came from the sandwiches that used to get eaten by workers over on a place that was nicknamed "hog island" The workers there would bring crusty rolls with Italian meats and some olive oil and they became known as "hoggies" which eventually morphed into hoagie... Now that I've sounded like a Cliff Claven... the only other thing I have to say is don't make this with a soft roll! It has to be a GOOD crusty Italian Long Roll!

Steps:
- Slice the rolls, but not all the way through.
- Place the vinegar and oregano in a small bowl. Slowly whisk in the oil until emulsified.
- Remove some of the bread from the center of each half of roll.(if desired)
- Drizzle a little of the olive oil mixture on the bread.
- Place first the meats, then the cheese in layers.
- Top with the tomatoes, onions, then the lettuce. Drizzle with more of the dressing, as desired.
HOT ITALIAN HOAGIE

- 1. Preheat oven to 350.
- 2. Mix butter and italian seasoning. Evenly spread butter on inside of hoagie rolls.
- 3. Layer one slice mozzarella, 3 slices folded salami, 2 slices folded ham,one more slice mozzarella. (this is where you could add more meat or the giardiniera mix to the sandwich)
- 4. Once the sandwiches are assembled, place them into a large baking dish. Make sure they are tightly pressed together, placing them sideways, with an open side facing up.
- 5. Bake for 10 minutes until cheese is melted. (bake longer if you prefer a toasted sandwich)
ITALIAN DELIGHT
One dish, kid lovin' ground beef, pasta, tomato casserole. This dish is tasty, easy to prepare with a minimum of effort, inexpensive and my 39 year son still requests it for dinner. He's getting married and I'm giving his fiance' a copy of the recipe. Maybe 25 years ago I was home from surgery and my bible study group brought dinners and this was one of them. It was #1 and I got the recipe. It's been a family favorite since.

Steps:
- Brown ground beef in a large frying pan and drain well. Place back in pan, then all the ingredients, except the noodles. Mix well, cover and simmer.
- While preparing the above, cook the noodles al dente, drain well and add to the meat mixture. Save the noodle water as you will need to add liquid to the casserole as it cooks down, but use the saved diced tomato juice first. I add garlic powder to the noodle water, while cooking, to flavor the water.
- Add noodles.
- Cook on low-to-simmer for about 15-20 minutes. Check often and stir. Add tomato juice/noodle liquid, as needed. It can get too thick.

ITALIAN HOAGIE DELIGHT

Steps:
- Preheat oven to 350 degrees. Grease the bottom of a 9 x 13-inch lasagna pan.
- Lay out 1 package of the crescent rolls in the bottom of the pan and pinch holes in the dough.
- Layer 1/2 of each lunch meat (start with the salami, then the provolone and then the ham) over the crescent rolls.
- Make a mixture with the parmesan cheese and 6 of the eggs and pour it on top of the layered meats (it will look like a mess).
- Layer the roasted peppers over the "mess.".
- Repeat the meat layer over the peppers.
- Top this with the other package of crescent rolls rolled out and pinched together.
- Brush this with the remaining beaten egg.
- Cover with aluminum foil and bake for 1/2 hour. Uncover and bake for another 1/2 hour.
- Let it cool before cutting to make it easier.

- Prep your veg! Cut 1 head of iceberg lettuce in half through the core. Peel off flimsy outer layers. Reserve one half for another use (perhaps this Iceberg Salad with Italian Dressing?). Cut remaining half in half again through the core (so you have two quarters), then thinly slice crosswise to create shreds. Peel ½ small red onion and cut in half through the root. Thinly slice each wedge lengthwise so that you make wispy arcs. Cut 1½ cups pickled peppadew peppers in half.
- Drain and finely chop 1 cup jarred mixed giardiniera. Aim for the veg to be the size of peas—you don't want huge pieces that will get in the way of your sandwich experience. Transfer to a small bowl. Stir in ⅔ cup mayonnaise; taste and season with salt.
- Slightly overlap 2 sheets of parchment paper to create 1 larger sheet. Cut 16x4" loaf sesame bread in half lengthwise with a serrated knife and place on parchment. You will build the sandwich on parchment for easy wrapping and cutting.
