ONE-BOWL PUMPKIN BREAD
This good bread can be made entirely in one bowl, except for the eggs, which should be cracked into a bowl, separately, just in case there could be any shells. The recipe makes two 9x5 inch loaf pans, or one could be done, and several miniatures. Enjoy.

Steps:
- Mix together the dry ingredients and spices.
- Add the eggs, oil and water.
- Stir in the walnuts (or pecans) and raisins. Add vanilla, if using.
- Put into two greased and floured 9x5 inch loaf pans and bake in a preheated 350 degree oven for 1 hour, checking after 50 or 55 minutes.

- In a large bowl, stir together sugar, oil and eggs. Add pumpkin and vanilla; stir to combine. Sprinkle baking soda and salt over top; stir until well blended.
- Stir in flour, cinnamon, nutmeg, allspice, cloves and ginger; be careful not to over-mix. Fold in milk.
- Transfer batter to a greased 8 x 4-inch loaf pan. Bake for 45-55 minutes for dark or nonstick pans or up to 60-70 minutes for glass, ceramic or light pans. The bread is done when a toothpick inserted in the center comes out clean.
