ITALIAN PARMESAN BREAD FOR BREAD MACHINE
I've been making this bread for years without measuring, and finally decided to write it down. My most requested bread from my bread-lovin' son. Makes the house smell divine!! You can easily increase the amounts of seasonings to your taste. (NOTE: Many people seem to be needing to add extra water, so I'm adding an adjustment to the recipe.)

ITALIAN PARMESAN BREAD
When my grown children come home for visits, they always ask me to make this bread along with their favorite spaghetti dinner. In between times, the easy-to-prepare loaf is a hit at church socials and potluck suppers.

- In a large bowl, dissolve yeast in warm water. Add 2 cups flour, 1/4 cup butter, egg, sugar, salt and seasonings. Beat at low speed until mixed, about 30 seconds; increase speed to medium and continue beating for 2 minutes. Stir in remaining flour and 1/3 cup cheese; beat until smooth. , Cover bowl and let rise in a warm place until doubled, about 1 hour. Stir batter 25 strokes. Spread batter into a greased 1-1/2-qt. casserole; brush with melted butter and sprinkle with the remaining cheese. Cover and let rise until doubled, about 30 minutes. , Bake at 350° about 35 minutes or until golden brown. Cool on wire rack 10 minutes before removing from the casserole.

ITALIAN PARMESAN MEATBALLS
Cheesy meatballs are simmered in marinara sauce, finished with fresh basil and served with your favorite pasta shape.

- Grate the bread on the large holes of a box grater into coarse crumbs and put into a large bowl along with the milk and set aside for 5 minutes to allow the bread to soak up the milk. Add the meatloaf mix, Parmesan, parsley, onion, garlic, egg, 1 teaspoon salt and a few grinds of pepper and mix until just combined. Shape the meat mixture into 18 meatballs. Refrigerate for at least 1 hour or up to overnight.
- Bring the marinara sauce to a very light simmer in a large Dutch oven or large wide pot. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Working in batches, add half the meatballs and cook, turning occasionally until browned on all sides, about 6 minutes. Transfer the meatballs to the marinara sauce as they are browned. Heat the remaining 2 tablespoons oil in the skillet and repeat with the remaining meatballs.
- Bring the sauce to a boil, lower the heat, and simmer, covered, gently stirring occasionally until the meatballs are cooked through, about 15 minutes. Remove from the heat and stir in the basil. Adjust the seasoning with additional salt and pepper. Serve over hot pasta.

PARMESAN GARLIC BREAD
This is a recipe I came up with myself. It is great with most Italian dishes. It can be doubled as needed.

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- In a small bowl, mix butter, garlic salt, rosemary, basil, thyme, garlic powder and Parmesan cheese.
- Spread each half of the French bread with equal portions of the butter mixture. Sprinkle with additional Parmesan cheese, if desired.
- Place bread halves, crusts down, on a medium baking sheet. Bake in the preheated oven 10 to 12 minutes, or until the edges are very lightly browned.

This is a recipe that I made up, because I like my bread crumbs to be extra seasoned and I love parmesan cheese...this is delicious as a coating for oven-fried chicken...don't know about casseroles...P.S a cast iron skillet works best for this recipe..but any oven-proof container may be used

- place bread on pan and put into oven for approximately 6 minutes (or until dried, but not toasted, turning half way through) leave oven on.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 5 loaf pan.
- Whisk together the oil, egg, and buttermilk in a small bowl.
- In a large bowl, whisk together flour, sugar, baking powder, soda, salt, and dried herbs. Stir in cheese and onions. Pour buttermilk mixture into the flour mixture, and stir to combine. - Sprinkle yeast into warm water in a large mixing bowl. Let stand until dissolved. Add sugar, salt, and 1 cup of the flour, Beat well.
- Add 3 eggs one at a time. Beat until smooth. Beat in butter. Work in finely chopped bell peppers. Gradually add enough remaining flour to make a soft dough.
- Turn out on floured board. Knead until smooth and satiny. Place in a greased bowl. Butter top of dough lightly. Cover with a kitchen towel. Let rise in a warm place until doubled in size. Turn out on a floured board. Knead lightly.
- Roll out into a rectangle about 10 to 16 inches. Beat remaining egg. Blend in cheeses and oregano. Spread cheese filling over dough. Roll up firmly from narrow end. Shape into a round by folding ends underneath. Place in a greased 2 quart round baking dish (preferably one with straight sides about 3 inches high, such as a soufflé or fondue dish). Cover.
- Let rise in warm place until doubled in size. Bake in 350 degrees F oven 40 minutes, or until golden brown and loaf sounds hollow when thumped. Cool 10 minutes. Remove from pan.
