ITALIAN SAUSAGE AND GNOCCHI SKILLET
Sausage, gnocchi, and spinach are the main ingredients in this quick, one-skillet meal. I've used mild sausages but hot Italian sausages can be substituted. Gnocchi is usually in the same isle as dried pasta.

Steps:
- Heat avocado oil in a large, nonstick skillet over medium-high heat. Add onion and cook until softened, 3 to 4 minutes. Add garlic and cook just until fragrant, about 30 seconds. Add sausage; stir to break up the meat and cook until well browned, 5 to 7 minutes.
- Drain excess oil and keep meat mixture in the skillet. Add gnocchi, stirring to break up any clumps. Stir in tomatoes, salt, basil, oregano, and pepper. Cover and simmer for 5 minutes.
- Stir in spinach and nutmeg and simmer until spinach has wilted, 3 to 5 minutes. Sprinkle mozzarella and Parmesan cheeses on top, cover, and simmer until cheese has melted, 2 to 3 minutes. Serve immediately.

- Preheat oven to 425 degrees.
- Heat oil in a large oven-safe skillet over medium-high heat. Add onion and saute for 4-5 minutes, then add garlic and cook for an additional minute.
- Add the cut sausage to skillet and cook for 3-4 minutes or until sausage is lightly browned, stirring occasionally.
- Add zucchini, water, tomatoes, oregano, parsley, garlic powder, salt, pepper, beans and gnocchi. Mix well. Gently fold in the spinach.
- Top with mozzarella and Parmesan cheese, then place in the oven for 15-20 minutes. Remove from oven, top with parsley, and serve.

I have always been a lover of broccoli rabe, having eaten it at my Italian grandmother's house since early childhood. However, I have never really been a sausage fan. Having seen the two ingredients on Italian restaurant menus for quite some time now, I decided to give it a try, and I'm so glad I did. The combination really is very flavorful.

- Cook gnocchi according to package directions, adding broccoli rabe during the last 5 minutes of cooking time; drain, reserving 1/4 cup cooking water.
- Meanwhile, in large deep nonstick skillet over medium heat, cook sausage, stirring, until browned, about 10 minutes. Over medium heat, add olives, wine, garlic and pepper. Cook, stirring often, until wine is slightly reduced, 5-7 minutes.
- Add gnocchi mixture; cook, stirring, 3 minutes; stir in reserved cooking water and 3/4 cup cheese until combined. Serve sprinkled with remaining 1/4 cup cheese.

- Remove from heat, and add the cream and 1/2 cup cheese and stir to combine. Top with remaining cheese. Place the skillet under the broiler in the oven until cheese is browned and bubbly, about 3 minutes. Sprinkle with chopped, fresh basil.

- Bring a pot of water to a boil. Add the gnocchi and boil 3-5 minutes until the gnocchi starts floating at the top of the water. Remove from heat.
- Heat a pan over medium high heat. Add the italian sausage and cook until lightly browned, about 8-10 minutes. Remove the sausage from the pan and wipe away excess oil from the pan if needed.
