Steps:
- Bring a large pot of salted water to a boil. Cook the macaroni according to the package directions; drain.
- Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over medium heat. Add the panko and cook, stirring constantly, until golden brown, about 4 minutes. Transfer to a bowl.
- Combine the half-and-half, mustard, garlic powder and remaining 6 tablespoons butter in the saucepan and bring to a bare simmer over medium-high heat. Add the Cheddar and processed cheese and stir until smooth. Stir in the macaroni and jalapenos and season with salt. Transfer to a serving bowl and sprinkle with the panko and cilantro.

Steps:
- Set oven to 375°F (set oven rack to second-lowest position).
- Butter a 13x9-inch baking pan.
- In a large saucepan melt 1/3 cup butter, add in the onions, garlic, diced jalapeño pepper, coriander and cumin; stirring until the onions are tender (about 5 minutes).
- Add in flour and stir for 2 minutes with a wooden spoon.
- Slowly add in the half and half cream whisking continuously until the mixture boils and thickens.
- Add in cayenne pepper and salt to taste.
- Add in chopped tomatoes and simmer for about 3 minutes (do not add in the cheese, add it in when when mixing in the bowl).
- In a large bowl mix together the cooked macaroni and tomato mixture, then stir in both cheeses; mix well to combine.
- Transfer to prepared casserole dish.
- In a small bowl mix together the fresh bread crumbs and Parmesan cheese, then sprinkle over the macaroni mixture in the baking pan.
- Bake for about 20-25 minutes, or until the mixture is bubbly.

- Preheat oven to 350 degrees.
- Melt butter in medium sauce pan.
- Saute minced jalapenos, garlic,& onion until tender.

- Heat a large skillet over a medium heat. When the skillet is hot, add the bacon and cook until crisp, 8 to 10 minutes. Remove with a slotted spoon to a paper towel-lined plate. Drain all but 2 tablespoons of the bacon grease from the skillet and place back on the heat.
- Add the onion, jalapenos and garlic to the skillet and stir. Add the ground chuck and season with salt and pepper. Cook the meat, crumbling as you go, until cooked through, about 5 minutes. Stir in the tomato paste and cook for about 30 seconds.
- Add the macaroni, broth, mustard and Worcestershire sauce. Give it a big stir and bring to a simmer. Cover and cook, stirring often, until the pasta is al dente and the sauce has thickened, about 10 minutes. Stir in the Cheddar. Sprinkle over the cooked bacon, parsley and pickled jalapenos, if using. Remove from the heat and serve.
CREAMY JALAPENO POPPER MACARONI AND CHEESE

- Set an oven rack 6 inches from the heat source and preheat the oven to 425 degrees F.
- Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 3/4 cups of the pasta water. Set aside.
- Melt the unsalted butter in a large saucepan over medium heat; transfer half the melted butter to a medium bowl and reserve. Add the chopped jalapenos to the saucepan, toss to coat and cook until softened, about 5 minutes; transfer to a small bowl and reserve.
- Wipe out the saucepan and add the half-and-half. Cook over medium heat until it just comes to a simmer. Continue simmering until the half-and-half is reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
- Add the macaroni and reserved pasta water and stir to combine. (The mixture will look very loose, but the pasta will suck up a lot of the sauce as it bakes.) Gently fold in the reserved cooked jalapenos, pickled jalapenos and pickled jalapeno juice. Season with salt and cayenne if needed. Pour into a 13-by-9-inch baking dish. Toss the bread crumbs in the bowl with the reserved melted butter and a sprinkle of salt. Sprinkle evenly over the macaroni and cheese. Lay the sliced jalapenos evenly on top of the bread crumbs. Bake until the cheese is bubbly and the bread crumbs are lightly browned and crispy, about 10 minutes.
JALAPEñO MACARONI AND CHEESE
This is a version of Jimmy Buffet's Macaroni that they serve at Margaritaville. Made this last night along with bbq ribs. Was a big hit. I made it as the recipe states as this was my first try. I think I will cut down the juice and up the cajun seasoning next time. It is a good and spicy macaroni and cheese. So if your looking for traditional, this is not it. If your looking for a macaroni and cheese to spice up dinner try it!

- In a saucepan melt butter.
- Add cream cheese and mix until blended.
- Add heavy cream and whisk.
- Add jalapeño juice and whisk.

- In a saucepan melt butter, then add cream cheese and mix until smooth.
- Add heavy cream and whisk it inches Then add jalapeño juice and whisk that in

- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until nearly crispy, about 5 minutes. Add jalapenos and fry with bacon until soft and bacon is crispy, about 5 minutes. Drain some of the bacon fat, leaving 4 tablespoons of fat in the pan.

This recipe is easily adjustable to add more heat or to take it away. The amount of jalapenos used in this recipe will yield a nice, spicy mac 'n cheese without being too over-the-top spicy. - Boil the pasta until al dente, according to package directions. Drain and rinse with cool water to stop the cooking, drain. Return to the pan you boiled it in and set aside. (Toss in a little butter or olive oil to help keep the noodles from sticking together if it's going to be awhile before you make the sauce)
- In a medium saucepan over medium heat, melt the butter.
- Add the flour, dry mustard, salt, and black pepper. Whisk constantly over medium heat for about three minutes.
- Continue stirring with the whisk and slowly pour in the milk.
- Whisk frequently for about 5 minutes, and then constantly for another 5 minutes or so, until the sauce heats and thickens.
- Remove from heat and stir in 1 cup of the smoked cheddar, 1 cup of the medium cheddar, jalapeno peppers, and Tabasco sauce, stirring until the cheese has melted.
- Pour the cheese sauce over the pasta and toss gently until coated.
- Add half the noodles to a two quart casserole dish and sprinkle on half of the remaining cheeses.
- Add the remaining pastas and sprinkle on the remaining cheese.
- Bake at 375 degrees Fahrenheit.for about 25-30 minutes or until bubbly and golden brown.
