Steps:
- Pre-heat the oven to 400 degrees F.
- Break the woody end off each asparagus spear and peel the outermost layer off the lower 3/4 of the spear with a vegetable peeler. Place asparagus on a large plate, drizzle with the olive oil and toss gently so the oil is evenly distributed. Slice each slice of turkey lengthwise into three strips. Wrap one strip of turkey around each asparagus spear, leaving the tips of the asparagus unwrapped. If using, tie a blade of chive around each wrapped spear. Place the wrapped asparagus on baking tray and bake for12 minutes, turning once.
SMOKED TURKEY SOUTHWESTERN WRAP

- Lay tortilla out flat. Spread the cream cheese on the tortilla. Sprinkle lettuce, tomatoes, and onions in the center of the tortilla. Place the turkey all over. Top with avocado spread. Roll burrito style, making sure the ends are tucked in. Slice in half on the bias and serve.
- Jalapeno Cream Cheese: Mix the jalapenoes into the cream cheese. Season with salt and pepper. Refrigerate until needed.

- Preheat your toaster oven to 400 degrees F or high.
- Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. Place tortillas in a kitchen towel and set in microwave. Microwave on high for 1 minute. To build, place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps. Brush the toaster oven baking tray with vegetable or olive oil. Brush the wraps with oil and bake until deep golden all over, 15 to 17 minutes. Top with sour cream, cilantro or parsley and chopped orange or yellow tomato, as garnishes.

- Mix together the cream cheese and Dijon mustard until smooth. Spread each tortilla with about 2 tablespoons of the cream cheese mixture, spreading to within 1/4 inch of the edge of the tortillas.
- Arrange about 1/4 cup of shredded lettuce on each tortilla, and press the lettuce down into the cream cheese mixture. Place 2 turkey slices per tortilla over the lettuce, and sprinkle with 2 tablespoons of shredded Swiss cheese. Top each tortilla evenly with tomato, avocado slices, and crumbled bacon.
- Roll each tortilla up tightly, and cut in half across the middle with a slightly diagonal cut.

Found this recipe in "365 Great 20-Minute Recipes" and make it when I have left over roasted turkey. Instead of using smoked turkey I usually just use regular turkey and make recipe #100355 by Graybert which is delicious. I have used English muffins instead of cracked wheat bread.

- Preheat broiler. Arrange bread on a baking sheet and toast lightly on one side, about 1 minute.

- Place dry beans into a large pot, cover with 2 quarts of water and soak overnight (or at least 8 hours). After soaking, drain water.
- Heat oil in a large pan over medium-high heat. Add onion, carrots and celery and saute 5-10 minutes or until tender.
- Add garlic, rosemary, sage, bay leaves, chili powder and pepper to the vegetables during the last 2 minutes of cooking.
- Layer the ingredients in CrockPot: add beans, top with turkey, add sauteed vegetables and spices, and finally add the broth.
- Cook on low for 6-8 hours.

My cousin, Mike Koury, taught me how to smoke turkey about 25 years ago, and I have been doing it ever since. This tastes great! The smell while smoking is guaranteed to drive your neighbors crazy!

- This recipe requires a water-smoker such as the Brinkmann"Smoke'n Pit" or the"Cook'N Ca'jun" (http://thebrinkmanncorp. com).
- If you don't own one, buy one.
- They are great.
- The night before the big meal, wash the thawed turkey thoroughly, inside and out, and pat dry.
- Save the neck and innards for making gravy, if desired.
- Season inside and out with lemon-herb seasoning, granulated garlic, and salt and pepper to taste, and coat with olive oil.
- Do not stuff the turkey.
- If you want stuffing, use your favorite recipe, and cook it in the oven, out of the bird.
- Refrigerate until ready to start smoking.
- Soak 5-6 fairly large chunks of hardwood in water for as long as possible.
- DO NOT USE CHIPS!
- Set your alarm clock for for about 12 hours before dinner.
- Prepare the smoker as follows.
- Place 10 pounds charcoal in the fire-pan.
- Light the charcoal just barely, but make sure it is enough to keep burning.
- (Use an electric starter, or a butane torch, or place charcoal under your oven broiler just until lit. DO NOT use liquid charcoal lighter unless you want kerosene flavored turkey!) Place 2-3 chunks of wet hardwood on top of the charcoal, place water-pan above fire-pan, and fill with water.
- Place turkey on the rack above water-pan, cover smoker, and go back to bed.
- After about 6 hours, check the smoker.
- Stir up the charcoal and add a little more if necessary.
- Place remaining soaked hardwood chunks on top of charcoal, add more water if necessary, close the smoker, and relax for another 5-6 hours.
- It is almost impossible to overcook the turkey using this method, because it is cooking at a very low temperature.
- It will be juicy and tasty.
- Obviously the smoking should be done outside.
- Smoking indoors can be hazardous to your health.
- If the weather is freezing or below, add about 2-3 hours to the cooking time.
- The turkey is done when the leg can be moved easily.
- Carve immediately before serving.
- Notes: I usually use hickory wood, though pecan or oak are also great.
- You can add aromatic herbs or spices to the water pan if desired, but they will mostly be covered by the smoky taste.
- You can also add beer or wine to the water pan, but again, it is mostly covered by the smoke.

- In a bowl mix minced onion, garlic, rosemary, pepper, 1 tsp paprika, salt and enough olive oil to create a thick paste consistency.
- Clean turkey and prepare for smoker breast up. With a paring knife or other small knife, make incisions straight down into the meat and to the bone, about 1 to 1.5 inches long. You can gouge the holes out deeper below the surface by wiggling the knife to make a larger cavity if you wish. Do this all over the turkey, in any place that you can make a hole and pack some of the mix into the cut, about 1.5 to 2 inches apart.
- Use a spoon and fingers to pack all of the holes with your mix, stuffing them to the top of the hole.
- Quarter onions and pack them with the rosemary sprigs inside the turkey cavity.
- With your hands, coat the turkey on the outside completely with olive oil, and then dust down fairly heavily with paprika. Tie the legs together with string.
- Place on smoker and smoke as you usually would, about 4 to 5 hours in my particular smoker.
