JALAPENO PICKLED EGGS

This recipe comes from cooks.com. It was submitted by Jo. My husband loves the jalapeno picked eggs we can buy at a local store. They are expensive though so I wanted to see if I could make some up. I couldn't find a recipe like we were looking for here but I did find this one online. He said they are really good. I cut the original recipe in half and added more garlic. We didn't add the hot sauce and he said they didn't need it, they were plenty hot enough without so it is up to how hot you like stuff. Time does not including egg cooking or the marinating for 1 week.

Steps:

  • Put peeled eggs in a 2 1/2 quart jar.
  • We used a clean leftover dill pickle jar.
  • If you use more eggs you will need a bigger jar.
  • Boil all ingredients (except eggs, of course) for 15 minutes.
  • Pour hot mixture over eggs until eggs are covered.
  • Add hot water to jar to fill if needed.
  • Marinate in refrigerator for 1 week before using.
  • The original recipe had a note that said for a stronger flavor, poke hole in the eggs with a toothpick before marinating.
  • We didn't do that so I can't attest to it's results.

18 hard-boiled eggs, peeled
2 cups white vinegar
1 small onion, sliced
1 1/2 teaspoons mustard seeds
1 1/2 teaspoons dill seeds
1 1/2 teaspoons black pepper
6 garlic cloves
1 (8 ounce) can whole jalapeno peppers (we used the can that had carrots in it too)
4 -6 splashes hot sauce (optional)

EASY PICKLED JALAPENOS

Homemade pickled jalapenos are a treat to have on hand for chilis, tacos, salads and sandwiches. Pouring hot brine over them instead of boiling them gives them a pleasant fresh crispness instead of the soft texture of the store-bought variety.

Steps:

  • Combine the vinegar, 2/3 cup water, onions, salt, peppercorns and coriander in a small pot, bring to a boil, then reduce to a simmer and cook for 5 minutes.
  • Put the jalapenos in a heatproof 1-pint jar and pour the hot pickling mixture over them. Allow them to sit and soak up the flavor for 30 minutes up to overnight-the longer they sit, the more they will soften and absorb flavor. Stored in the refrigerator, they will keep for up to 1 month.

2/3 cup white wine vinegar
1/2 onion, sliced thinly (about 1/2 cup)
1 tablespoon Kosher salt
1 teaspoon black peppercorns
1 teaspoon coriander seeds
5 large jalapenos, cut into 1/8-inch rounds

PICKLED JALAPENOS

Deliciously fresh and simple pickled peppers! Peppers will keep in the refrigerator for up to 2 months as long as they are covered by the pickling liquid.

Steps:

  • For the pickled jalapenos: Pack the jalapenos, garlic, onion, and thyme into a 2-quart jar. Combine the vinegar, water and 1/2 cup salt in a medium saucepan; bring to a boil. Pour over the jalapenos and refrigerate 3 to 4 days.
  • For the English muffins: In the bowl of an electric mixer, combine the yeast and water; set aside until foamy, about 5 minutes. Stir in the flour, butter, 1 teaspoon salt, and sugar. Using the dough hook attachment on the electric mixer, mix the dough on medium speed until smooth and firm, about 10 minutes. Shape the dough into a ball; place into a greased bowl. Let rise, covered, until doubled in bulk, 1 1/2 to 2 hours.
  • Divide the dough into 12 equal portions. Knead the dough into balls; dust the work surface with cornmeal. Press each dough portion into a 3 1/2-inch round cutter over cornmeal, then transfer to a baking sheet. Cover and let rise 30 minutes.
  • Preheat the oven to 400 degrees F. Heat a large cast-iron skillet over medium-high heat; working in batches, add English muffins. Cook 5 minutes; transfer to a separate baking sheet. Transfer the muffins to the oven to finish cooking, 2 to 5 minutes.
  • In a medium, microwave-safe bowl, whisk together the eggs and oil; season with salt. Microwave on high, 50 to 60 seconds. Transfer the eggs to a large nonstick skillet over medium heat; cook until desired doneness.
  • Split 4 English muffins; spread each with 1 tablespoon mayonnaise. Top muffins with egg, pickled jalapenos, sausage and cheese; serve warm.

12 jalapenos, halved and seeds removed
12 cloves garlic, peeled
1 small onion, thickly sliced
5 sprigs fresh thyme
4 cups white vinegar
2 cups water
Kosher salt
1 1/2 teaspoons active dry yeast
1 cup warm water
3 cups all-purpose flour
1 tablespoon unsalted butter, melted
Kosher salt
1 teaspoon sugar
Cornmeal, for dusting
8 large eggs
1/4 cup olive oil
4 tablespoons prepared mayonnaise
4 pre-cooked breakfast sausage patties
4 slices Cheddar cheese

PICKLED JALAPEñOS

Ask any Mexican if they have pickled jalapeños in their pantry, and the answer is usually a resounding yes. More than a condiment, they are an absolute necessity. Incredibly versatile, they can be tucked into tacos, quesadillas and sandwiches, mixed into tuna salads or eggs for omelets, or served as garnishes, crowning nachos, hot dogs and pizzas. The tangy brine, which can be used to punch up any vinaigrette, tames the heat of the chiles. There are countless store-bought options - and people tend to be loyal to particular brands - but pickling your own is easy, and allows you to customize to taste, altering the vegetable ratios, herbs or sugar content. Inspired by fruit-based vinegars available in the Mexican countryside, this version combines white distilled vinegar with natural rice vinegar, adding a dose of sweetness.

Steps:

  • In a large (12-inch) skillet or a heavy pot, heat the oil over medium-high until hot but not smoking. Add the onions and cook for 1 minute, stirring occasionally, until their outer layer begins to soften. Stir in the garlic and cook for 1 minute, until it barely begins to turn golden. Incorporate the jalapeños and carrots, and cook for 3 to 4 minutes, stirring a couple times, until the jalapeño skins begin to slightly dull and wrinkle.
  • Stir in all remaining ingredients and simmer briskly for about 7 minutes, until the liquid reduces and the vegetables soften. Turn off the heat and let cool.
  • Transfer the pickled vegetables and their liquid into a container with a tight-fitting lid and refrigerate for at least 12 hours. (They will last for at least 1 month.)

1/2 cup vegetable oil
6 ounces white pearl onions (or trimmed spring onion bulbs)
4 garlic cloves, peeled
1 pound whole jalapeños (stems intact)
1/2 pound medium carrots, peeled and sliced 1/4-inch thick on the diagonal
2 cups distilled white vinegar
1 cup unseasoned rice vinegar
5 dried bay leaves
1 tablespoon dark brown sugar
2 teaspoons dried oregano
1 teaspoon dried thyme
5 whole cloves, stems removed and discarded, rounded tops crushed between fingertips
1/4 teaspoon ground cumin
2 tablespoons kosher or sea salt
1 teaspoon freshly ground black pepper
