SORREL (HIBISCUS) TEA

This tea is brilliantly red and sweet-tart, with a delicious bite from ginger and aromas of clove and citrus

Sorrel (Hibiscus) Tea image

Steps:

  • In a large saucepan, bring 2 quarts water, the hibiscus, ginger, cinnamon, cloves, and orange and lemon zests to a boil over medium heat. Boil for 5 minutes. Remove from the heat. Add the lemon juice, cover tightly, and let stand for 1 to 2 days at room temperature. Strain and discard the solids. Sweeten to taste with demerara sugar, honey, or agave nectar. Chill thoroughly. Serve over ice and garnish with mint.

2 cups dried hibiscus (sorrel) flowers
1⁄3 cup peeled fresh ginger slices (¼ inch thick)
2- to 3-inch cinnamon stick
6 whole cloves
¼ cup grated orange zest
Grated zest and juice of 1 lemon
Demerara sugar, honey, or agave nectar
Mint leaves, for garnish

JAMAICAN SORREL AIOLI

A delicate, lemony sauce, this aioli goes especially well with fish, but it's also delicious served with roast chicken and makes an excellent sandwich spread.

Steps:

  • Place all ingredients except oil into blender, and blend until smooth.
  • Continue blending, and slowly add oil through feed tube until mixture thickens, then pour oil in at a faster rate.
  • Scrape mixture out into container, and store in refrigerator for up to 3 days.

1 cup firmly packed fresh sorrel leaf, stems and tough ribs removed
1/4 cup chives, chopped
1 egg yolk
2 teaspoons lemon juice
1/2 teaspoon salt
1 cup canola oil or 1 cup grapeseed oil

Steps:

  • Place the egg yolk, water, mustard, lemon juice, and sorrel in a food processor. Pulse a few times to combine. With the motor running, add the oil in a slow, steady stream. Season to taste with salt.

1 fresh egg yolk
2 tablespoons water
1 teaspoon Dijon mustard
Juice of 1/2 lemon
10 sorrel leaves, chopped
1 1/2 cups canola oil
Kosher salt

JAMAICAN SORREL DRINK

Sorrel is a typical drink served at Christmas in Jamaica which is also know for its health benefits. This dried Hibiscus flower can be purchased at any caribbean or west indies store. This recipe is really made to taste, and everyone makes it different. Steep as long as you like, sweeten to taste (I like mine a little tart), some add orange peel, some add wine, rum....make it your own. Cooktime includes steep time.

Steps:

  • Bring water to a boil.
  • Place sorrel, ginger and cloves into boiled water.
  • Boil for 2 minutes, turn heat off.
  • Cover and allow to steep for 12 to 24 hours.
  • Strain and sweeten to taste.
  • Add rum or wine if desired.
  • Serve cold, on ice.
