I saw this on Jamie Oliver's naked chef and just had to post it on here to see the nutritional content of this, being on a calorie controlled diet! Fingers crossed!!

Jamie Oliver's Two-Nuts Chocolate Torte image

Steps:

  • Preheat oven to 190c/375f/Gas 5.
  • Line the bottom of a 20 or 25cm/8 or 10" tin with a piece of greaseproof paper before buttering the bottom and sides, then dusting with flour.
  • Place the nuts into a food processor and whizz up until finely ground.
  • Add the chocolate and cocoa, and whizz for 30 seconds to break up the chocolate.
  • Put to one side in a separate bowl.
  • Add the butter and sugar to the food processor and beat until pale and fluffy.
  • At this point, add the egg yolks one at a time, then mix together with the chocolate and nuts.
  • In another bowl beat the egg whites with a pinch of salt, until they form stiff peaks.
  • Gently fold the egg whites into the chocolate, butter and nut mix.
  • Pour all the mixture into the tin.
  • Bake in the preheated oven for around an hour.
  • To test if the torte is cooked, insert a cocktail stick or the tip of a knife for five seconds.
  • When removed, it should be reasonably clean.
  • Serve with whipped cream, ice-cream or creme fraiche.

This is an Italian pudding taught to me by my great friend Gennaro Contaldo - aubergines with chocolate sounds a bit strange, but it tastes fantastic. For this recipe my mate at the Chocolate Society in London recommended a 64 percent Maujari chocolate, which is made from a different bean to the 70 percent chocolate. If you can't get this, use best-quality cooking chocolate (70 percent cocoa solids).

Baked Aubergines in Chocolate image

Steps:

  • Fill a saucepan with boiling water and place a bamboo steamer over it. Place the aubergines in a single layer in the steamer, put a lid on, and steam for about 5 minutes until softened. Remove from the heat and allow to cool.
  • To prepare the chocolate sauce, simmer the brandy on a high heat, pour in the cream and turn off the heat. Once the cream is tepid, add the chocolate and sugar and stir in until it is all melted.
  • Prepare the filling by mixing the ricotta with the candied fruits. Sweeten with the sugar and mix in the chocolate.
  • Run a knife along each aubergine to create a pocket (do not cut all the way through), then open out and fill with the ricotta. Fill each aubergine and arrange in a serving dish with the stalks sticking out. Whisk the chocolate sauce, pour over the aubergines (not covering the stalks), and chill in the refrigerator for 3 hours.
  • To serve, spoon onto a plate and serve with fresh raspberries.

Chocolate Cambridge Cream image

Steps:

  • Run a knife along the length of the vanilla pods, scraping out the seeds, and then chop up the pods. Put the seeds and pods in to a thick-bottomed pan with the milk and cream. Simmer slowly for 5 minutes for the flavor to infuse.
  • In a bowl that will fit into the top of the pan, but not fall into the pan, whisk the egg yolks, sugar, and cocoa powder for a minute. Still slowly whisking, add the vanilla-flavored milk and cream and keep whisking until well mixed.
  • Add 1-inch (2.5 centimeters) of hot water to the dirty pan bring to a simmer and put the bowl on top of the pan. Cook the custard slowly over the simmering water for 5 minutes, stirring often until it coats the back of the spoon.
  • Strain the custard through a fine sieve into a clean container. Discard the vanilla pods.
  • Preheat the oven to 300 degrees F (150 degrees C).
  • Put 4 ovenproof serving dishes in a high-sided roasting tray. Divide the chocolate between them and shake flat. Carefully divide the custard mix between the dishes; making sure the chocolate isn't disturbed. Fill the tray with water until it is halfway up the sides of the dishes.
  • Cook in the preheated oven for around 30 to 45 minutes until slightly wobbly in the middle. Allow to cool, then sprinkle with some sugar, and caramelize with a blowtorch.
  • Propane Gas Torch Warning: Propane gas torches are highly flammable and should be kept away from heat or flame, and should not be exposed to prolonged sunlight. Propane gas torches should only be used in well-ventilated areas. When lighting a propane gas torch, place the torch on a flat, steady surface, facing away from you. Light the match or lighter and then open the gas valve. Light the gas jet, and blow out the match. Always turn off the burner valve to "finger tight" when finished using the torch. Children should never use a propane gas torch without adult supervision.;

3 vanilla pods
7 fluid ounces (200 milliliters) milk
13 fluid ounces (375 milliliters) double cream
8 large egg yolks, preferably organic
2 1/2 ounces (70 grams) caster sugar
1 heaped teaspoon cocoa powder
3 1/2 ounces (100 grams) good-quality chocolate, bashed up finely
Extra sugar, for caramelizing

CHOCOLATE POTS

The beauty of this dessert is that it is so smooth, silky and rich. If you want to lighten the texture into more of a mousse then follow the recipe but fold in 2 stiffly whipped egg whites. Small servings are the key - I use espresso cups as this is the ideal size. Chocolate pots are brilliant for dinner parties as you can make them up the day before and then stick them in the fridge until needed. The chocolate pots are ideal served with my orange and polenta biscuits.

Steps:

  • In a thick-bottomed pot, heat the cream until near boiling. Remove and set aside for 1 minute before adding chocolate. Stir in until melted and smooth. Once melted, stir in egg yolks and brandy. Cool slightly, add butter and stir until smooth and shiny. Pour into individual serving pots.
  • PS. Sometimes if you add the butter when the chocolate isn't cool enough it will make the chocolate look as if it has split. To rectify this allow the mixture to cool a little longer before stirring in some cold milk, a little at a time, until you have a smooth consistency again.

1/2 pint heavy cream
7 ounces semisweet chocolate, best quality
2 large egg yolks
3 tablespoons brandy, best quality
3/4 ounces butter

CHOCOLATE CANNOLI

Cannoli are fantastic. Traditionally they're bigger than mine and contain chunks of candied fruit, nuts and chocolate, but I wanted to go a bit more delicate, and ricotta is the filling hero here. It is helpful to buy some metal cannoli tubes, which you can get online--just squeeze them to 2 centimeters (3/4 inch) in diameter before use.

Steps:

  • In a large bowl, whip 1 egg with the sweet wine and 3 tablespoons of olive oil. Gradually add the flour (you may not need it all) until it comes together into a ball of dough. Knead for a few minutes, or until smooth and silky. Wrap in plastic wrap and leave to rest for 1 hour.
  • Pour the sunflower oil into a large, sturdy pan on a medium-high heat, and leave it to get to 180 degrees C (350 degrees F) on a thermometer. Meanwhile, roll the dough into a large sausage about 4 centimeters (1 1/2 inches) in diameter. Keeping the rest of the dough covered with a clean, damp tea towel, slice off a 1/2-centimeter-thick (1/4-inch-thick) disc and roll into a ball, then flatten out on a flour-dusted surface to 2 millimeters (1/16 inch) thick. Lightly dust your metal cannoli tubes with flour (or use lightly oiled dried cannelloni tubes), then wrap a circle of dough around each, sealing the edges with beaten egg. Working in batches, carefully lower into the hot oil for just 1 minute, to get lightly golden. Remove to a plate lined with kitchen paper to drain for 3 minutes, then squeeze the moulds and gently slide off the cannoli. Repeat until you've used up all the dough.
  • Melt the chocolate. Pound the hazelnuts in a pestle and mortar until fine. Drain the ricotta, then blitz in a food processor with the vanilla paste, honey, cocoa and grappa until just smooth. Spoon into a piping bag with a star nozzle, and twist the bag to give tension, then pipe the filling into the cannoli. Drizzle with chocolate, sprinkle with nuts and serve.

60 milliliters (1/4 cup) sweet wine or Marsala

250 grams (9 ounces) plain or Tipo 00 flour, plus extra for dusting
1 liter (1 quart) sunflower oil, for frying
200 grams (7 ounces) 70-percent dark chocolate
100 grams (3.5 ounces) toasted hazelnuts
600 grams (21 ounces) quality ricotta cheese
1 teaspoon vanilla bean paste
2 tablespoons runny honey
2 heaped teaspoons quality cocoa powder
1 tablespoon grappa

Snap the chocolate and melt in a heatproof bowl with 225g of the butter and a pinch of sea salt over a pan of gently simmering water until smooth and glossy, stirring occasionally. Whisk the eggs and sugar in a freestanding mixer on a high speed until light, fluffy and tripled in size.
  • Grease a 25cm round cake tin all over with the remaining butter and line the base with greaseproof paper. Remove the chocolate from the heat, leave to stand for a couple of minutes, then pour it into the egg mixture. Whisk on a medium speed to combine, then pour into the lined tin. Give a few taps on the work surface to bring the air bubbles to the surface, then place the tin into a shallow roasting tray. Place the tray in the oven, then carefully pour enough boiling kettle water into the tray to come halfway up the side of the cake tin. Gently slide the shelf back in and bake for 35 to 40 minutes, or until set but with a slight wobble.
  • Squeeze the clementine juice through a sieve into a small pan and simmer over a low heat for 20 minutes, or until syrupy enough to coat the back of a spoon. Carefully pour it into a bowl and leave to cool.
  • Remove the torte from the oven and leave to cool in the water-filled tin for 1 hour. Gently loosen the edges with a butter knife, then carefully turn it out onto a serving board and peel off the paper. Slice and serve with a drizzle of clementine syrup.
