SOBA NOODLE VEGGIE BOWL

Also known as 'yasai yakisoba,' this is a healthy and quick dish with stir-fried noodles, vegetables, and a savory sauce. The recipe can be easily doubled, but this is really best for one person.

Soba Noodle Veggie Bowl image

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Drop in soba noodles and return to a boil. Cook uncovered, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Drain.
  • Meanwhile, combine soy sauce, oyster sauce, and mirin in a small bowl. Set aside.
  • Heat olive oil in a skillet over medium-high heat. Add bell pepper, onion, and green beans and saute until softened but still crisp, 2 to 3 minutes. Add soba noodles and toss with the cooked vegetables. Mix in soy sauce mixture and cook for an additional 1 to 2 minutes. Add baby spinach and cook until desired doneness, 2 to 3 minutes. Serve in a bowl.

This authentic yakisoba was taught to me by my host mother when I lived in Osaka, Japan. It is the real deal and my friends love it.

Authentic Yakisoba image

Steps:

  • Bring a large pot of water to a boil. Cook soba in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 5 to 8 minutes. Drain noodles and rinse with cold water. Set aside.
  • Heat oil in a wok over medium heat. Add pork and stir-fry with a pinch of salt and pepper, about 5 minutes. Transfer meat to a plate, reserving oil in wok. Add carrots, onion, ginger, and garlic to the wok and stir-fry for 3 to 4 minutes.
  • Add cabbage to the wok and stir-fry briefly, about 1 minute. Add drained soba noodles. Pour in 1/2 the yakisoba sauce and stir-fry until noodles and vegetables are covered with sauce, about 3 minutes. Return pork to the wok. Add additional sauce as desired. Remove from heat.
  • Garnish yakisoba with kizami nori and a small pile of beni shoga just before serving.

  • In a medium saucepan, add ¼ cup sake and bring it to a boil over medium-high heat. Let the alcohol evaporates for a few seconds.
  • Boil a lot of water in a large pot. Unlike pasta, you do not add salt to the water. Add dried soba noodles in the boiling water in a circulate motion, separating the noodles from each other. Cook soba noodles according to the package instructions (each brand is slightly different). Stir the noodles once in a while so they don’t stick to each other. Check the tenderness and do not overcook. Before you drain, reserve 1 to 1 ½ cup of soba cooking water "Sobayu" (Read what you can use this in the blog post).
  • You will need 90 ml (6 Tbsp) of dipping sauce per cup/person, which means 360 ml (1 ½ cup) for 4 servings. Since the sauce to water ratio is roughly 1:3, combine 1 part (90 ml) of dipping sauce and 3 parts (270 ml) of iced water in a measuring cup and check the taste. If it's salty, add more water. If it's diluted, add more sauce.

  • Take the steak out of the fridge 30 minutes prior to cooking (or 15 minutes if it's a stinking hot summer day).
