"GYOB" (GRIND YOUR OWN BURGERS)

In honor of our special Family issue, Food Network Magazine asked the kids of some Food Network stars to act as guest editors and share their favorite family dinners. Here's what Jeff Mauro's son, Lorenzo, had to say about this go-to burger dish: "I love this burger with American cheese...because I'm American! I eat it with broccoli that's cooked so soft, you barely have to chew it."

Steps:

  • Place the beef chunks on a baking sheet in a single layer, leaving a little space around each piece. Freeze the meat until it's very firm and starting to harden around the edges but still pliable, 15 to 30 minutes. Freeze the blade of a food processor at the same time.
  • Place half of the meat in the food processor fitted with the chilled blade and pulse until coarsely ground, 10 to 15 one-second pulses, stopping to redistribute the meat with a wooden spoon around the bowl as necessary to ensure even grinding. Turn out the meat onto a baking sheet (just dump it out - try not to touch the meat too much). Repeat the grinding with the remaining meat. Spread the meat on the baking sheet and inspect carefully, discarding any long strands of gristle or large chunks of hard meat or fat. Season the meat with salt and pepper.
  • Divide the meat into 4 equal piles. Form the piles with your hands into 4 large thin patties, about 4 inches wide. The patties should be loosely packed.
  • Heat a large cast-iron skillet or large heavy griddle pan over high heat. Spread the butter on the cut sides of the buns. Toast the buns in the skillet until golden brown, about 2 minutes.
  • Working in two batches, add the beef patties to the skillet and immediately press them down once with a spatula; do not smoosh them again. Cook until crusty brown on the bottom, 4 to 5 minutes; flip once, top with a piece of cheese and cook until the other side is crusty and the cheese melts, about 4 more minutes. Place the burgers on the toasted buns; top with sliced avocado. Serve with steamed broccoli.

2 pounds beef chuck roast, cut into 1-inch cubes
Kosher salt and freshly ground pepper
4 tablespoons salted butter, at room temperature
4 brioche buns, split
4 slices American cheese

ULTIMATE SUMMER PLT BURGER

Ultimate Summer PLT Burger image

Steps:

  • For the herb mayo: Combine the mayonnaise, Dijon mustard, fresh lemon juice, tarragon, chives and parsley in a medium bowl. Season with salt and pepper. Stir until well blended.
  • For the burgers: Divide the ground beef into four equal portions. Gently form each portion into patties 1 to 1 1/2 inches thick and 3 to 4 inches in diameter. Do not over work or tightly pack the meat or the burgers will not be tender. Place on a plate or sheet tray and bring to room temperature.
  • Heat a large saute pan over medium heat. Take the slices of pancetta and place them in the pan. Begin to render the pancetta on both sides, 3 to 4 minutes, rotating the pancetta until golden brown and crispy. Transfer to a plate lined with paper towels and let cool. Reserve the pancetta fat in the pan and use as a fat substitute instead of butter to toast the buns in.
  • Brush a griddle with the pancetta fat and preheat to medium-high heat.
  • Sprinkle the burgers on each side with salt and pepper. Place the burgers on the brushed and heated griddle and cook 4 to 5 minutes each side for medium rare.
  • Brush the buns with pancetta fat and toast on the griddle until golden brown.
  • When the burgers are almost finished, top each with 2 slices of the cheese and cook for 2 to 4 minutes. Take the burgers off the griddle and let rest.
  • Mix the tomato slices with the vinegar and season with salt and pepper.
  • Spread the herbed mayonnaise on the buns. Top with lettuce, tomato, a burger and a piece of pancetta.

1 1/4 cup mayonnaise
1 teaspoon Dijon mustard
Juice of 1/2 a lemon
1/2 cup tarragon, chopped
1/4 cup chives, sliced
1/4 cup Italian parsley, chopped

1 1/2 pounds ground sirloin (80/20 ratio)
4 ounces sliced pancetta
Kosher salt and freshly cracked black pepper
4 potato buns
8 slices Muenster cheese
1 yellow or red heirloom tomato, sliced into 1/2-thick slices
1 tablespoon white wine vinegar
2 heads baby gem lettuce

JEB'S NO BULL BURGER

Jeb's No Bull Burger image

Steps:

  • Combine 1 tablespoon flaxseed meal and 3 tablespoons water in a small bowl to create a "flax egg" and set aside for at least 5 minutes.
  • In a large pot or saute pan, mix artichokes, mushrooms, jalapenos, olives, garlic, onion and red pepper with 2 tablespoons olive oil and saute over medium-high heat until vegetables have softened, 5 to 10 minutes.
  • Mix garbanzo beans and black beans in a bowl and mash until almost no whole beans remain and the two are well combined.
  • Mix oats, oat flour, Worcestershire sauce, oregano, paprika, celery salt, cumin, cayenne, red pepper flakes, sage and remaining 1/4 cup flaxseed meal in a bowl until well combined.
  • Mix sauteed ingredients with the mashed bean mixture. Once well combined, mix in the dry ingredients. Lastly, add the flax egg and combine well.
  • Heat a large skillet with remaining 2 tablespoons olive oil over medium-high heat.
  • Using a kitchen scale, form the mixture into 4-ounce patties and place in the skillet, cooking each side until browned and internal temperature reaches 145 degrees F, 5 to 7 minutes on each side. Once cooked, slather buns, tops and bottoms, with Sriracha Aioli and toast in the skillet, sauce-side down, 2 to 3 minutes. Top burgers with pickles, red onion, tomato and mixed greens.
  • For the vegan mayo: Pour coconut milk, vinegar, garlic granules, mustard powder and salt into a blender and begin blending. Once ingredients have come together, begin slowly pouring the avocado oil into the blender while blending, about 1 minute to pour the entire 2 cups. Once all of the avocado oil has been poured, let the blender run for 1 minute to whip the mayo. Use immediately or store in the refrigerator for up to 10 days.
  • For the sriracha aioli: Mix sriracha, mustard and 2 cups vegan mayo in a bowl and whisk together until well combined. Use immediately or store in the refrigerator for up to 10 days.

Steps:

  • Put the beef chunks on a baking sheet in a single layer, leaving 1/2 inch of space around each chunk. Freeze the meat until very firm and starting to harden around the edges but still pliable, 15 to 25 minutes.
  • Place half of the meat in a food processor and pulse, stopping and redistributing the meat around the bowl as necessary to ensure even grinding, until coarsely ground, 10 to 15 one-second pulses. Transfer the meat back to the baking sheet, overturning the bowl and without directly touching the meat. Repeat the grinding process with the remaining meat. Spread the ground meat over the baking sheet and inspect carefully, discarding any long strands of gristle or large chunks of hard meat or fat.
  • Heat a cast-iron skillet or large heavy griddle pan over high heat. Divide the meat into 6 portions, then form each into a large, thin patty with your hands; focus on loosely packed meat and a larger circumference than thickness. Season with salt and pepper.
  • In 2 batches, cook the patties. Press them down once with a spatula as soon as you put them in the skillet. Do not smoosh them again. Cook until crusty brown, 4 to 5 minutes. Flip once and drape 2 pieces of cheese on top of each so it melts down the side while the other side cooks. Cook to the desired temperature.
  • Set a nonstick pan over medium heat. Butter the pretzel buns and toast until golden brown, about 2 minutes.
  • Arrange the burgers on the pretzel buns, top with pickled jalapenos and serve with a side of DijOli.
  • Mix the mayonnaise, Dijon, stone-ground mustard, honey and garlic together in a small bowl. Season to taste.

2 pounds English-cut short ribs, boned and meat cut into 1-inch chunks
Kosher salt and freshly ground black pepper
12 slices white American cheese
Unsalted butter, at room temperature, for buttering the buns
6 fresh pretzel buns, split
Sliced pickled jalapenos, for topping
DijOli, recipe follows
1/2 cup mayonnaise
1/2 cup Dijon mustard
2 tablespoons stone-ground mustard
1 tablespoon honey
1/2 clove garlic, grated on a rasp grater

MEAT LOVER'S BURGER

These burgers are zesty and full of flavor combining mushrooms, bacon, and balsamic vinegar with ground beef. My boyfriend--an Italian chef and a meat lover--was taken away by the taste!

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place bacon in a skillet over medium heat, and cook until brown and crisp. Remove bacon from skillet and drain on paper towels.
  • Return the skillet to the heat and increase the temperature to medium-high. Add the onion and garlic, and stir fry until the onion is soft and the garlic begins to brown. Add the balsamic vinegar, and cook while stirring for one minute. Add the chopped mushrooms, and cook for three additional minutes. Remove pan from heat and set aside.
  • Finely chop 4 slices of the bacon (reserving the remaining 4). In a medium bowl, combine the chopped bacon, ground beef, bread crumbs, Italian seasoning, Parmesan cheese, mushroom mixture and egg. Mix well using hands. Season with salt and pepper, and form into two patties.
  • Open the two halves of the hamburger bun on an ungreased cookie sheet. Place one beef patty on each half, and cover each with one slice of tomato, 2 slices of the reserved bacon and one slice of Swiss cheese.
  • Bake for 25 minutes in the preheated oven, or until meat has cooked through.
