JERK CHICKEN PIZZA
This is another recipe that my boyfriend and I made up. We decided that the normal combo pizza was getting boring so we spiced it up - A LOT. This recipe may not be for the weak at heart. It has some great ingredients such as German salami, portobello mushrooms, and jerk sauce.

- Preheat the oven broiler. Brush the green pepper with 1 teaspoon olive oil, and place on a baking sheet. Broil about 5 minutes on each side, until skin begins to scorch. Remove from heat, and seal in a plastic container for 15 minutes. Cut into strips, remove seeds, pulp, and skin, and dice.
- Preheat oven to 350 degrees F (175 degrees C).
- Heat the remaining olive oil in a skillet over medium heat, and cook the chicken 10 minutes, until juices run clear. Mix in the roasted green pepper, jerk sauce, garlic, and portobello mushroom. Cook and stir 5 minutes, until heated through.
- Place the pizza crust on a pizza pan, and spread with pizza sauce. Arrange the salami, then the chicken mixture evenly over the sauce. Top with mozzarella cheese.
- Bake pizza 10 minutes in the preheated oven, or until cheese is melted and bubbly.

JERK CHICKEN

- Preheat the oven to 350 degrees. Score chicken and season with salt. Spoon desired amount of jerk marinade over chicken and rub into scores. Marinade refrigerated for 2 hours to overnight. Bake for 35 minutes in the oven. Remove from the oven and finish on the grill.;

ENA'S SIGNATURE SPICY JERK CHICKEN AND JERK SAUCE

- Lightly sprinkle the chicken with salt and coat liberally with the jerk rub. Add 3 to 4 tablespoons of jerk marinade (or more to intensify the heat). Marinate in the refrigerator for at least 12 hours and up to 48 hours.
- Preheat a grill to 450 degrees F. Preheat the oven to 375 degrees F.
- Place the chicken on the grill, skin-side up, and cover the grill. Cook until the skin is rosy brown and crisp, about 25 minutes.
- Transfer the chicken to a roasting pan, skin-side up, and pour over a cup of Jerk Sauce. (Do not cover the chicken with sauce; just add enough to create some steam.) Cover the pan with parchment and foil and bake until the chicken is tender and reaches an internal temperature of 165 degrees F, 30 to 45 minutes.
- Cut the chicken legs off the thighs and cut the thighs in half. Place the chicken on a plate and add Jerk Sauce.
- Add the port, soy sauce, liquid smoke, browning sauce, vinegar and 2 cups water to a stockpot; bring to a boil. Add the adobo powder, jerk rub, poultry seasoning, jerk marinade and breadcrumbs. Add the carrots, garlic, onions, thyme and peppers. Boil over high heat until the vegetables are fully cooked and the wet marinade has dissolved into the sauce, 15 minutes. Reduce the heat to low and simmer for another 30 minutes.
JAMAICAN JERK CHICKEN

- Place chicken in a medium bowl. Cover with lime juice and water. Set aside.
- In a blender or food processor, place allspice, nutmeg, salt, brown sugar, thyme, ginger, black pepper and vegetable oil. Blend well, then mix in onions, green onions, garlic and habanero peppers until almost smooth.
- Pour most of the blended marinade mixture into bowl with chicken, reserving a small amount to use as a basting sauce while cooking. Cover, and marinate in the refrigerator for at least 2 hours.
- Preheat an outdoor grill for medium heat.
- Brush grill grate with oil. Cook chicken slowly on the preheated grill. Turn frequently, basting often with remaining marinade mixture. Cook to desired doneness.

Steps:
- Cut Chicken into think Slices. Marinate chicken thighs in jerk marinade in refrigerator, as long as possible.
- Remove from marinade; discard marinade.
- Cook Chicken in Zip N Steam Bag until cooked through (about 7-9 Minutes).
- Spoon BBQ sauce over the pizza crust.
- Spread the cheese over the pizza crust.
- Top pizza with sliced chicken, red onion and pineapple.
- Sprinkle lightly with dried Cilantro before baking.
- Bake pizza at 375ºF, 20 to 25 minutes or until crust is golden brown. Cut and serve.

- In a blender, combine all ingredients for the Jerk Marinade. Blend until smooth, and refrigerate until ready to use.
- Preheat the oven to the hottest temperature, preferably at least 500°F. Place a pizza stone or steel on the bottom rack of the oven to preheat for 30 minutes. In a bowl, combine chicken and 2/3 cup Jerk Marinade (reserve remainder for another use).
- When the oven has preheated for 30 minutes, assemble pizza: Stretch dough out on a lightly floured surface into a 14- to 16-inch round. Place pizza dough on a well floured wooden peel or a well floured rimless (or inverted rimmed) sheet pan. Spread marinara evenly across the pizza crust, leaving a 1-inch space around the edge. Top evenly with mozzarella, marinated chicken, white onions, black olives, and yellow peppers.
- Bake, Rotating the pizza once halfway through baking, until the crust is baked through and the cheese is bubbling, 8 to 10 minutes. Cut into 8 slices and garnish each slice with two scallion strips in an "x" formation. Serve immediately.

- To make sauce, combine all ingredients in a medium saucepan. Simmer for 6 to 8 minutes. Let cool and then puree in a blender. (Sauce can be made a day in advance.)
- In a small bowl, combine all ingredients for jerk seasoning. Sprinkle chicken breasts with seasoning and drizzle with olive oil.
- Grill chicken for 4 to 5 minutes per side, or cook in a pan over medium heat. Let cool and then thinly slice.
- Roast both peppers by setting them directly over the flame of a gas burner. Turn every few minutes until all sides are charred. Plunge them into ice water and remove the skins. Slice into thin slices. Alternately, you can roast the peppers in a 450 degree oven for 45 minutes.
