LOADED JICAMA FRIES

These low-carb, deliciously cheesy fries are a great replacement for the carby Mr. Potato Head fries you got in your previous, unhealthy life.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a sheet pan with parchment paper.
  • Bring a pot of salted water to a boil. Slice jicama sticks into quarters and add to the boiling water. Boil for 10 minutes.
  • At the same time, cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle. Reserve bacon grease. Remove jicama from the water and pat dry.
  • Toss jicama in a bowl with bacon grease and 1 tablespoon avocado oil to coat. Spread in a single layer on the prepared pan.
  • Bake in the preheated oven for 30 minutes. Remove from the oven and turn on the broiler.
  • Heat remaining 1 tablespoon avocado oil in a skillet. Add jicama and fry until desired crispness, about 5 minutes.
  • Spread jicama back onto the baking pan. Season with salt, then cover with Cheddar cheese and crumbled bacon. Broil until cheese is melted, about 3 minutes.

JICAMA MATCHSTICK FRIES

Jicama is a recent addition to our household. One day I felt the urge for a snack, so I fired up the deep-fryer, sliced up a jicama root and discovered Stella Style! Fries! With just a little everyday seasoning, they taste almost like BBQ potato chips! Cut jicama into large chunks to make home fries in place of potatoes!

Jicama Matchstick Fries image

Steps:

  • Place a heavy pot over medium-high heat and fill with at least 1-inch vegetable oil. Heat the oil to 350 degrees F. (Portable deep-fryers at home are great for this, but if you don¿t have one, use a candy thermometer ¿ just be careful!)
  • Very thinly slice the jicama, as you would a potato to make chips, then stack a few slices at a time and cut them all into matchstick-sized pieces.
  • Carefully place the chips into the hot oil (use a slotted spoon and wear mitts) and fry until very crispy (just a few minutes will do). Cook in batches, as necessary. Remove and drain on paper towels.
  • Sprinkle liberally with equal amounts of salt, onion, and garlic powders, and paprika to taste. Toss to coat well and serve immediately.

  • Preheat your oven to 400 degrees F. Lightly grease a ceramic rimmed baking dish (such as a 9 X 13 -inch baking dish).
  • Peel the jicama and cut it into 1/4-inch-thick fries. Or use pre-sliced jicama strips (available at Whole Foods and in many supermarkets).
  • Place the jicama strips in a microwave-safe bowl. Add 1/4 cup water. Cover and microwave for 8 minutes, stopping once to gently stir. If I use a large jicama I sometimes microwave it for up to 10 minutes total, as shown in the video. But 8 minutes is usually enough.
  • Using oven mittens, remove the bowl from the microwave. Be careful when removing the cover - hot steam will escape. Remove the jicama strips to paper towels to dry.
