GUGELHUPF
Gugelhupf is a classic German and Austrian cake that is baked in a gugelhupf pan, which is similar to a Bundt® pan, just a bit higher. Germans like their cakes on the dry side because they are traditionally eaten in the afternoon with a cup of coffee or tea ("Kaffee und Kuchen").

Steps:
- Combine butter and confectioners' sugar in a bowl and beat well with an electric mixer until creamy. Set aside for 10 minutes.
- Preheat the oven to 370 degrees F (180 degrees C). Grease a gugelhupf pan (or Bundt® pan) with butter and dust with flour.
- Beat 1 egg in a cup and add to the butter-sugar mixture; beat until well combined. Repeat with remaining 2 eggs. Add egg yolks, lemon zest, and vanilla sugar; beat well. Fold in raisins.
- Beat egg whites in a glass, metal, or ceramic bowl until foamy. Gradually add white sugar, continuing to beat until stiff peaks form. Carefully fold egg whites into the batter. Fold in sifted flour in batches. Spoon batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 1 hour. Remove from oven and turn out onto a cake platter. Allow to cool completely and dust with confectioners' sugar.

APPLE KUCHEN COFFEE CAKE

- Heat oven to 350°F. Grease bottom and side of springform pan, 9x2 inches, or round pan, 9x1 1/2 inches, with shortening.
- In medium bowl, beat 1/2 cup sugar, the butter and egg with electric mixer on low speed about 30 seconds or until smooth. Beat in Bisquick. Spread over bottom and 1 inch up side of pan.
- In small bowl, mix yogurt and egg until smooth. Stir in apple; spoon over batter in pan. Mix 1/4 cup sugar and the cinnamon; sprinkle over apple mixture.
- Bake 45 to 50 minutes or until center is set and crust is deep golden brown. Cool 10 minutes; remove side of pan. Serve warm.

- Mix first three ingredients until crumbly.Remove 1/2 c mixture and mix with cinnamon and nuts. RESERVE for topping.
- Add baking soda and baking powder to step 1 mixture and stir to mix it all in evenly.
- Add vinegar to milk to sour the milk. Stir egg into the milk and stir vigorously with a fork to blend the egg. Add to the dry mixture and stir just until blended.
- Spray or grease a 9x13 pan and pour mixture into pan. Top with reserved topping.
- Bake at 350 degrees until toothpick inserted in center comes out clean, about 30 minutes.

- Sift dry ingredients together.
- Add shortening and cut in well with a fork.
- Take out 1 cup of crumbs; to remaining crumbs add well beaten egg yolks and milk.
- Beat egg whites stiffly; fold into batter.
- Mix well and pour into two well-greased 9 x 9 inch pans and sprinkle tops with the reserved crumbs.
- Bake at 400F about 45 minutes or until golden.
- Sprinkle top with melted butter and cinnamon when finished baking.
