- Preheat oven to 350 degrees F (175 degrees C). Grease a fluted tube pan (such as Bundt®) with cooking spray; dust with flour.
- Combine cake mix, sour cream, eggs, coffee-flavored liqueur, oil, pudding mix, orange zest, and cinnamon in a large bowl; beat with an electric mixer on medium speed until very smooth, about 4 minutes. Fold in chocolate chips. Pour batter into the prepared tube pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool in the pan for 10 minutes. Invert onto a plate; let cool completely, about 30 minutes. Dust with confectioners' sugar.

- Mix all ingredients well in a large bowl.
- Pour into a greased, 12-cup bundt pan Add 12 walnuts to top of cake and bake until a toothpick inserted in the middle comes out with crumbs clinging to it, about 45 minutes.

KAHLUA CHOCOLATE CAKE
I made this for the work holiday party after experimenting with a few similar recipes. It was very good and was the first dessert finished! The best part is that it is really easy to make. I used Betty Crocker Super Moist cake mix, and Jell-O Sugar Free Fat Free chocolate pudding because that's what I had in the house - but I'm sure any brand of cake mix and any type of chocolate pudding would work well. I made it the day before so the syrup had plenty of time to soak into the cake.

- Preheat oven to 325 degrees F.
- Grease and flour a 10 inch Bundt pan (or a 9" x 13" pan).
- In a large bowl, combine cake mix and pudding mix.
- Mix in eggs, water, vegetable oil and Kahlua. Blend thoroughly.
- Bake in preheated oven for 60 minutes or until toothpick inserted into cake comes out without batter.
- Cool for 10 minutes in the pan, then invert onto a serving dish.
- Prick top and sides of cake. Drizzle chocolate syrup over the top and sides.
- Store and serve cake at room temperature.

CHOCOLATE CAKE WITH MOCHA FROSTING
Steps:
- Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking pan. Line with parchment paper, then grease and flour the pan.
- Place the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 4 to 5 minutes, until light and fluffy, scraping down the bowl. On medium speed, add the vanilla, then beat in the eggs, one at a time, until incorporated and the batter is smooth.
- Sift the flour, baking soda, and salt together in a medium bowl. In another bowl or a liquid measuring cup, whisk together the hot water, cocoa powder, and espresso powder until smooth. Add the half-and-half and whisk until smooth. With the mixer on low, add the flour and chocolate mixtures alternately in thirds, starting and ending with the flour. With a rubber spatula, scrape down the bowl to be sure the batter is well mixed.
- Pour the batter into the prepared pan, smooth the top, and bake for 25 to 35 minutes, until a cake tester inserted in the center comes out clean. Cool completely in the pan. Turn out onto a flat platter or board and frost the top with the Mocha Frosting. Cut in squares and serve.
- Place the chocolate, butter, and espresso powder in a bowl. Heat the cream to simmer and pour it over the chocolate mixture, stirring occasionally, until the chocolate is melted. (If the chocolate isn't melted, microwave the mixture for 15 seconds.) Stir in the Kahlua and vanilla and stir until the mixture is smooth. Cover and refrigerate for 30 minutes only, until cool but not cold.
- Scrape down the bowl and beat the frosting with a handheld mixer on high speed for 15 to 20 seconds only, until the mixture forms soft peaks. (If you overbeat it, it will curdle!) Spread on the cake immediately with a metal spatula.
FLOURLESS CHOCOLATE-KAHLUA CAKE WITH CAJETA

- Preheat oven to 350 degrees and grease a 9-inch round pie pan. Line pan with greased parchment or waxed paper. In the top of a double boiler, melt the butter and chocolate and stir until smooth. Whip the egg yolks and the sugar until fluffy and pale in color. Fold butter and chocolate mixture into the egg yolk and sugar mixture, adding the coffee liqueur. Whip the egg whites to soft peaks and gently fold into the chocolate mixture. Pour into the pie pan and bake for 25 to 35 minutes then allow to cool completely.
- Cajeta: In a medium saucepan, bring water and sugar to a boil, do not stir. Remove from heat when the sugar is amber in color and add enough cream to thin the caramel to a fairly liquid consistency. Stir in butter. To test consistency, dip a spoon into the caramel mixture and allow to cool. If the "cajeta" is gooey but holds its shape, it's ready; if it hardens too much, add a little more cream and test again.
- Strawberry-Lime Salsa: In a blender, puree half the strawberries with the lime juice and the sugar. Strain and reserve. Cut the remainder of the strawberries in quarters and mix with the puree. Add chiffonade of mint.
- When the cajeta has cooled a little, but is still warm, pour over cake on top of a wire rack to catch the drippings. Using your hand, pat almonds all around the sides of the cake. Refrigerate for 2 hours and serve chilled with salsa.
CHOCOLATE KAHLUA FANTASY CAKE
Steps:
- Make crust:
- Preheat oven to 350°F. and lightly oil a 9 1/2- by 2-inch springform pan.
- In a bowl stir together crust ingredients until combined well and press onto bottom of pan. Bake crust in middle of oven 15 minutes, or until pale golden, and cool in pan on a rack.
- Make chocolate layer:
- In a saucepan heat cream, chocolate, and corn syrup over moderately high heat, stirring occasionally, until chocolate is melted and mixture just comes to a boil. Remove pan from heat and stir in butter, one piece at a time, until smooth. Pour mixture over crust in pan and chill, until firm, about 3 hours.
- Make buttercream layer:
- In a saucepan cook sugar and water over moderately high heat, stirring occasionally, until sugar is melted. Simmer syrup, undisturbed, until a candy thermometer registers 240°F. In a bowl with an electric mixer beat yolks until smooth. Add hot syrup in a stream, beating on high speed until thickened and cooled. Reduce speed to medium and beat in butter, a little at a time. Beat in Kahlúa and chocolate until combined well. Spread buttercream over chocolate layer and chill until firm, about 3 hours.
- Run a knife around edge of pan and carefully remove side of pan.
KAHLúA CHOCOLATE CHEESECAKE

- Lightly oil the base of a 23cm spring-form tin. Melt the butter in a pan, stir in the crushed biscuits and press on to the base of the tin with the back of a spoon. Chill while you make the filling.
- Melt the chocolate in a bowl over a pan of gently simmering water, stirring halfway through. Remove the bowl from the pan. Preheat the oven to 160C/gas 3/fan 140C.
- Beat the cheese and sugar together with an electric hand mixer until fluffy. Add the eggs, one at a time, but don't over-beat. With the beater on low speed, blend in the melted chocolate, the cream and the Kahlúa. Pour on to the biscuit base and bake on a baking sheet for 55 minutes-1 hour or until set. Test by touching the surface, which should be shiny, and a bit wobbly and darker in the centre. Loosen the cheesecake from the tin with a round-bladed knife and leave to cool. Chill for 3 hours or overnight.
- Take the cheesecake from the tin. For the topping, combine the crème fraîche with the Kahlúa and spread over the top. Dust lightly with cocoa powder and serve in wedges with a little Kahlúa poured over each slice.
CHOCOLATE KAHLUA CAKE
A friend of mine went to Las Vegas and came back talking about a Kahlua cake smothered in chocolate sauce that she enjoyed while there on vacation. It sounded so good that I just HAD to come up with one of my own. This is the results of my efforts. It was pretty good still warm, but I like it better after chilling all night. Almost like a pudding/cake consistancy. Very dense, rich and chocolatly. The glaze chilled to a soft shell that I enjoy very much. The leftover glaze can be re-heated to pour warm over the servings on the plate which contrasts very nicely with the cool cake.

- Heat oven to 350 degrees (175 celsius).
- Spray or oil the inside of a bundt cake pan.
- Beat together the first 6 ingredients until well mixed.
- Fold in toffee pieces.
- Bake for 50 to 60 minutes or until tester comes out clean.
- Place a cake plate on top if the bundt pan and turn to remove the cake.
- Allow to cool completely.
- Poke holes in the cake with the end of a wooden spoon.
- To prepare the glaze, microwave the frozen whipped topping and the chocolate squares on high in a microwavable bowl for 1 minute; stir.
- Microwave for an additional 30 seconds to 1 minute or until chocolate is melted and mixture is shiny and smooth.
- Stir in 4 tablespoons of the Kahlua.
- Pour over cooled cake allowing the glaze to go into the holes and down the sides and middle of the cake; sprinkle with additional toffee pieces if desired.
- If you have leftover glaze, store it in the refrigerator and just before serving the cake, microwave on high 1 to 2 minutes or until glaze is softened.
- Pour leftover glaze over servings.

DOUBLE CHOCOLATE KAHLUA CAKE

- Preheat oven to 350°F.
- Place rack in the center of the oven.
- Grease two 9"cake pans with vegetable shortening or butter or margarine, then dust with flour.
- Shake out the excess flour, I use cocoa powder.
- Set the pans aside.
- Place the cake mix, cocoa, Kahlua, buttermilk, oil and eggs in a large mxing bowl.
- Blend with an electric mixer on low speed for 20 seconds.
- Stop the machine and scrape down the sides of the bowl with a rubber spatula.
- Increase the mixer speed to medium and beat 2 minutes more, scraping down the sides again if needed.
- The batter should look well combined.
- Divide the batter evenly between the prepared pans, smoothing it out with the rubber spatula.
- Place the pans in the oven side by side.
- Bake the cakes until they spring back when lightly pressed with your finger, 28-30 minutes.
- Remove the pans from the oven and place them on wire racks and cool for 10 minutes.
- Run a dinner knife around the edge of each layer and invert each onto a rock, then invert again onto another rack so that the cakes are right side up.
- Allow to cool completely, 30 minutes more.
- FLUFFY CHOCOLATE KAHLUA FROSTING:.
- Place the cocoa powder in a large mixing bowl and pour in the boiling water and Kahlua.
- Stir with a wooden spoon, or rubber spatula until the cocoa comes together into a soft mass.
- Add the butter and blend with an electric mixer on low speed until the mixture is soft and well combined, 30 seconds.
- Stop the machine.
- Add the confectioners' sugar and cinnamon and beat with mixer on low speed until the sugar is incorporated, 1 minute.
- Increase the mixer speed to medium and beat the frosting lightens and is fluffy, 2 mimutes more.
- Place one of the layers right side up on a cake plate or stand.
- Generously and evenly frost the top of the layer.
- Place the second layer on top, and generously frost the top of the cake creating decorative swirls with spatula.
- With remaining frosting, frost around the sides of the cake using, smooth, clean strokes.
- Slice, then serve.
- Enjoy!
