Steps:
- Preheat the oven to 350 degrees F.
- Grease and flour a 9inx5in loaf pan.
- In a medium bowl, combine the dates and butter.
- Pour boiling water over them, and let stand until cool.
- When the dates have cooled, stir the mixture to break up any clumps.
- Mix in the brown sugar and egg until well blended.
- Combine the flour, baking soda, baking powder, and salt.
- Stir into the date mixture until just blended.
- Pour into the prepared pan.
- Bake for 50 minutes in the preheated oven, or until a wooden pick inserted into the center comes out clean.
FAVORITE DATE NUT BREAD
This is a moist bread. I serve it as a desert! My daughter does not like raisins so I have made this bread increasing the dates to 12 oz and eliminating the raisins.

- Preheat oven to 350 degrees.
- Prepare a loaf pan by spraying with cooking spray.
- Combine dates, nuts and raisins; sprinkle with baking soda.
- Pour 1 cup of boiling water over all of this.
- Cover the bowl and set aside while mixing remaining ingredients.
- In another bowl, with a pastry blender, mix the flours, sugar, Splenda, baking powder, egg and egg white.
- Combine the date mixture with the flour mixture, mix well.
- Pour into prepared pan and bake for 50 minutes or until toothpick inserted off center comes out clean.

MOIST DATE NUT BREAD
A moist not too sweet version of a figgy pudding but made with dates and minus the spices. You could try covering with buttered foil and steaming it for a even moister version. This can also be baked in a (28 ounce) can.

KAHLUA® HOMEMADE
This recipe I love to make around Thanksgiving to drink or give as presents at Christmastime. The longer you wait the better it is, try and wait 4 weeks. I got this recipe from one of my own concoctions from trying several different recipes.

- Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
- Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.

- Preheat the oven to 350°F.
- Grease a large loaf pan (10x3x3inch).
- Mix dates, Kahlua, water and orange peel.
- Let stand and soak while preparing batter.
- Cream sugar, margarine and egg together until fluffy.

KAHLUA CHOCOLATE BREAD PUDDING
Steps:
- In a medium bowl, combine all the ingredients for the pecan streusel and toss together with your fingertips until crumbly and evenly blended. Refrigerate until needed.
- Butter an 8 x 13inch glass loaf pan and dredge it with sugar.
- In the top of a double boiler, melt chocolate over simmering water. Add the brown sugar and cream, whisk until smooth and remove from heat. Cool for 10 minutes.
- Preheat the oven to 325 degrees. In a very large bowl, whisk together thoroughly the eggs, egg yolks, sugar, and vanilla. Stir 1/4 cup of this custard mixture into the chocolate to temper it, then add all of the chocolate mixture back into the custard. Add the bread cubes to the bowl, toss until they are evenly coated, and let sit in the refrigerator for 20 minutes. Pour into prepared loaf pan and place in a larger pan. Fill the larger pan with boiling water to come halfway up the sides of the loaf pan. Top with pecan streusel and bake for about 2 hours, until center feels slightly firm. While cooking, make the Kahlua sauce.
- In the top of a double boiler, melt the butter and then add the Kahlua and sugar. Whisk until sugar is dissolved. Whisk 1 tablespoon of the Kahlua mixture into the egg to temper it, then return the whole mixture to the double boiler and cook, stirring constantly, over simmering water until slightly thickened. Strain into a warmed pitcher and cover with foil to keep warm.
- Slice the warm pudding and serve with a pool of the warm Kahlua sauce on one side of the plate and a spoonful of whipped cream on the other.
DATE NUT BREAD
Steps:
- Preheat the oven to 350.
- Grease an 8 1/2 x 4 1/2 x 3 inch loaf pan.
- Put the dates, walnuts, baking soda, salt and shortening in a bowl. Pour the boiling water over and stir. Let the mixture stand for 15 minutes.
- Using a fork, beat the eggs and sugar together in a bowl. Add the flours and stir; the batter will be too stiff to mix well. Add the date mixture and mix briskly until the batter is well blended. Spoon into the loaf pan and bake 40 to 50 minutes. Check the loaf often; it is done when a few moist crumbs cling to a straw inserted in the middle of the loaf. The bread will continue to bake after it is removed from the oven. Do not overbake, or the loaf will be dry.
- When the loaf is done, slide a knife around the edges of the pan and turn the loaf onto a rack to cool completely. This bread freezes well.
KAHLUA® SWEET POTATOES
We have had this side dish for Thanksgiving and noticed that it is not as filling as the usual pecan-encrusted mashed sweet potatoes. At Thanksgiving that is a good thing!

- 1. In a mixing bowl, dissolve yeast in the warm water until foamy, about 5 minutes. Add the milk, butter, honey, salt, cinnamon, sugar, eggs, and whole wheat flour. Beat until smooth. Stir in enough all-purpose flour to form a soft dough.
- 2. Place raisins in a bowl of tepid tap water. Let soak until needed.
- 3. Turn dough out onto a floured surface; knead until smooth and elastic, about 10 minutes. Place in a greased bowl, turning once to coat. Cover with a damp towel and let rise in a warm place until doubled, about 1 hour.
- 4. Grease two 8.5" x 4.5" loaf pans.
- 5. Punch dough down. Turn out onto the lightly floured surface; sprinkle with raisins and walnuts and knead them in. Divide dough in half.
- 6. Roll dough into loaves, keeping raisins folded inside.
- 7. Place loaves into greased loaf pans. Cover and let rise until doubled, about one hour.
- 8. Preheat oven to 375°F.
- 9. Beat egg white and cold water; brush over loaves.
- 10. Bake at 375°F for 40 minutes or until golden brown. If top browns too quickly, cover loosely with foil for the last 15 minutes.
- 11. Remove from pans to wire racks to cool.

- Preheat over to 350°F
- Put all ingredients for the cake in a bowl. Mix on low for 1 minute to combine. Scrape bowl.
- Mix on medium high for a full 3 minutes to make it light and fluffy.
- Spray an Angel tube pan or bundt pan with baker's spray. Pour batter in pan and bake for 45 to 50 minutes until done.
- Let cool in pan and then turn out onto you serving platter. While cake is cooling, make topping and frosting.
- Put chopped chocolate in heatproof bowl.
- Heat cream in a saucepan on medium high until it starts to boil.
- As soon as it starts to bubble, pull it off the heat and pour the hot cream over the chocolate. Stir immediately with a whisk to incorporate the cream into the chocolate.
- Stir until completely melted. Let it cool.
- When it gets to spreading consistency you want to coat your cake. (This will take a while, depending on the humidity).
- For the topping, combine sugar, cornstarch and salt to a heavy saucepan. Add the coconut milk and cream of coconut. Heat on medium heat and stir until smooth and starts to boil. Stir until it thickens, about 5 - 7 minutes. Keep stirring so that it does not stick to pan.
- Take the pan off the heat and pour the mixture into a larger bowl and add shredded coconut. Stir to combine. Let this cool completely. (It will start to look like the inside of a mounds bars).
- Take about a half cup of the topping and stuff it into the middle of the cake (the hole). Fill it to the rim and flatten off with a table knife.
- Then frost cake, the frosting will be smooth and runny so the technique here is to place a dollop of frosting on the top of cake, coax it over to the side with knife so it starts to run down the side. Spread smoothly along the side of cake.
- Take cake and put it in the refrigerator until the frosting firms up just like the candy bar. This will take about 30 minutes or so.
- After that, take cake out of refrigerator and you are going to mound the remaining half of your coconut topping on the top of the cake. Place back in the refrigerator for about 30 to an hour.
- I know that this sounds like a lot of work, but this cake is truly decadent!
