KICKIN CHICKEN
Adapted this one night to use a basting sauce from a large grinder of Weber Grill Creations Kick'n Chicken Seasoning mix. And it was a huge hit! Citrus and spice VERY NICE!! I will add fresh crushed garlic next time!

Steps:
- season thighs liberally with fine ground seasoning mix and squeeze one lemon half over chicken.
- heat grill to medium.
- squeeze other half of lemon into small bowl and whisk in mustard, oil and spices. should be somewhat thick like a good salad dressing in order to stick to chicken while cooking- if to then whisk in olive oil while drizzling it into bowl until desired thickness.
- taste marinde- should have a strong but not over powering lemon taste. add more spice if you desire.
- grill chicken slowly until almost done and baste with all of sauce on both sides of chicken let cook until done.
- EAT!

- Cook the pasta following pack instructions. Reserve 100ml of the water and drain the pasta in a colander.
- Meanwhile, heat the oil in a frying pan on a medium heat and fry the garlic and spinach for 3 mins until wilted. Add the soft cheese and heat until melted. Stir in most of the parmesan, then add the shredded chicken, peas and some of the pasta water. Bring to the boil and bubble for 2-3 mins until the chicken and peas are completely heated through.
- Add the pasta and stir until combined. Add more pasta water to loosen the sauce, if needed. Remove from heat, sprinkle over the remaining parmesan and parsley or basil to serve.

KICKEN CHICKEN & PASTA
This is one of my family's favorite recipes. It's a spin off of my favorite spicey dish from a restaurant here in Racine. Just with my own touch. Not a recipe for anyone on a diet though. MMMM MMMM GOOD!!

- Prepare sauce while chicken mixture is cooking. (or you can do it before hand and just keep warm) To make sauce add garlic powder, chicken base, cajun seasoning, caynne pepper, cream, half and half in a large pot and heat, stiring occasionally. When hot add parmesan, stirring regularly until cheese melts. Dissolved cornstarch in water and add to the sauce, continue to cook and stir until sauce thickens enough to coat back of spoon. Remove from heat and keep warm.
- Cook pasta as directed on box. I usually make the pasta while I'm making the chicken mixture.
- Prepare chicken by cutting it up into bite size pieces. Slice sausage on the bias. Julienne the red pepper. Heat up skillet with oil, add chicken. Cook chicken until half done (I like it spicey so I sprinkle a little cajun seasoning on chicken while it's cooking). Add andouille sausage and continue cooking until chicken is almost cooked through, about 5 minutes. Add red pepper and continue cooking until chicken is fully cooked.
- Add chicken mixture to your sauce and serve over pasta. Serve with bread sticks on the side or your favorite bread to soak up the delicious sauce. **Chicken base is very salty so if you have cajun seasoning with salt in it I would suggest to decrease the amount of chicken base to 1 1/2 tbls or omit the seasoning and add more cayenne pepper. OHH SO HOT!!!

- Prep Pasta: Boil water in a large pot and cook pasta al dente according to package instructions.

- Heat olive oil in a large heavy duty pan over medium-high heat and cook chicken breasts 5 minutes per side or until cooked through. Remove from heat and set aside.
- To the same pan, add the butter and garlic and cook for 1 minute or until fragrant. Add the tomato and spinach and cook 2-3 minutes or until the tomato and spinach are soft and wilted.
