KUNG PAO CHICKEN STIR-FRY

This is my favorite recipe for Kung Pao chicken. It tastes like the one from my favorite Chinese place. It is quick and easy too. Serve with warm cooked rice. Try it!

Kung Pao Chicken Stir-Fry image

Steps:

  • Mix the chicken, 1 tablespoon of cornstarch, salt, pepper, and 1 pinch of five-spice powder together in a bowl until the chicken is coated, and set aside.
  • Whisk together water, soy sauce, brown sugar, sesame oil, 1 tablespoon of cornstarch, rice vinegar, and 1 pinch of five-spice powder in a bowl until the mixture is smooth, and set aside.
  • Place 1 tablespoon of oil in a wok or large skillet over medium-high heat, and cook and stir the chicken mixture until the chicken is browned, about 5 minutes. Remove the chicken from the wok, and set aside.
  • Pour 1 more tablespoon of oil into the heated wok, and stir in the onion, celery, garlic, and red pepper flakes. Cook and stir the vegetables until they start to become tender, about 3 minutes. Pour in the cornstarch mixture, and cook and stir until the sauce thickens, about 1 minute. Remove the wok from the heat, lightly stir in the cooked chicken and peanuts, and serve.

In the spirit of the American Chinese restaurant favorite, this stir-fry uses peanuts and chiles to give new life to leftover turkey (or rotisserie chicken).

Kung Pao Turkey Stir-Fry image

Steps:

  • Toss the turkey and 1 teaspoon each soy sauce and mirin in a large bowl; set aside. Combine the 3 finely chopped scallions with the garlic and ginger in a small bowl; set aside. Whisk 1 cup water, the remaining 1 tablespoon plus 2 teaspoons each soy sauce and mirin, the vinegar, cornstarch and sugar in another small bowl; set aside.
  • Heat a wok or Dutch oven over high heat. Add the peanut oil, then add the dried peppers and stir-fry until lightly browned, 30 seconds. Immediately add the scallion pieces and stir-fry until tender, about 1 minute. Add the peanuts, turkey and the scallion-garlic mixture; stir-fry 20 seconds. Reduce the heat to medium. Add the soy sauce-cornstarch mixture and cook, stirring, until thick and glossy, about 2 minutes. Serve over the rice.

  • Bring a pan of water to the boil and cook the rice to pack instructions then drain. Meanwhile, grind 2 teaspoons Szechuan peppercorns using a pestle and mortar. Sieve, then mix the ground pepper (you’ll need ¾ teaspoon) with 1 tablespoon cornflour on a plate. Cut the turkey into strips and toss in the flour mixture.
  • To make a kung pao sauce, whisk together 1 tablespoon cornflour, the soy sauce, sherry, rice wine vinegar and honey, set aside.
  • Heat the oil in a wok over a medium heat, stir-fry the turkey for 2-3 minutes then transfer to a plate. Add 2 garlic cloves, dried red chillies and the spring onions, stir-fry for 1 minute, then stir in the sauce. Bring to a simmer, return the turkey to the wok and cook for 1-2 minutes.
  • Meanwhile, mist a pan with cooking spray and stir-fry 1 sliced garlic clove and the shredded Brussels sprouts over a medium heat for 3 minutes. Season and fold through the rice. Serve with the turkey stir-fry and sliced fresh red chilli.
