LASAGNA DOME RECIPE BY TASTY

Steps:
- Preheat the oven to 375°F (190°C).
- Heat 2 tablespoons of olive oil in a large pot over high heat. Add the onion and garlic. Cook until starting to brown, stirring occasionally, 3-4 minutes.
- Add the beef, salt, and pepper. Cook until all of the moisture has evaporated and the meat is starting to brown on the edges, breaking the meat up as you stir, 10-12 minutes.
- Add the tomato sauce and tomato paste, then reduce the heat to medium and bring the sauce to a simmer. Cook it down until the mixture becomes thick, about 15 minutes. Remove the pot from the heat and set aside.
- In a small bowl, combine the ricotta, basil, egg, and Parmesan. Stir until smooth. Set aside.
- Grease a large oven-safe metal bowl with the remaining tablespoon of olive oil, then lay about 25 lasagna noodles along the sides and bottom of the bowl, fanning them out in an overlapping pattern. The ends of the noodles should hang over the sides of the bowl.
- Slice the remaining lasagna noodles in half crosswise. These will serve as the layers between the meat and the cheese mixtures.
- Sprinkle half of the mozzarella into the bottom of the bowl on top of the noodles. This will help bind the noodles together when cooked. Spread half of the meat mixture evenly over the mozzarella, then lay half of the cut noodles over the sauce.
- Spread all of the ricotta mixture over the noodles, then layer with the rest of the noodles, then the rest of the mozzarella, and the rest of the meat sauce.
- Fold the edges of the lasagna noodles hanging over the sides of the bowl back towards the center, creating another overlapping pattern.
- Cover with foil and bake for about 45 minutes, until cooked through.
- Meanwhile, make the béchamel: In a saucepan over medium heat, melt the butter. Add the flour and cook, whisking continuously, for about 2 minutes until a paste forms.
- Add the hot milk and continue to whisk as the sauce thickens and comes to a boil. Season with salt and pepper and add the Parmesan. Reduce the heat to low, and cook, still whisking, for 2-3 minutes more.
- Invert the lasagna dome onto a cutting board.
- Pour the béchamel sauce over the dome and top with basil.
- Slice the dome, then top with more Parmesan and basil, if desired.

A delicious breakfast treat I had at Parliament Cottage Bed and Breakfast in Niagara-on-the-Lake in Canada. Recipe is compliments of my hostess, Isabelle Parliamnent. The version I had was made with turkey.

Steps:
- Preheat oven to 400 degrees.
- Grease a 9-inch springform pan.
- Sauté shallots and garlic in butter for 4 minutes.
- Squeeze extra water from thawed spinach'til it is very dry.
- Mix together spinach, shallots and garlic.
- Roll out 2/3 of the puff pastry dough and line the prepared springform pan with it, letting pastry hang over the edge of the pan.
- Layer ham (or turkey or salmon), cheese, spinach mixture and peppers.
- Beat eggs, reserving 2 tbs, and pour the remainder over the peppers.
- Roll out the remaining puff pastry dough and place on top of the strata.
- Crimp the edges and seal.
- Cut slits in the top and brush with the reserved egg.
- Bake 45 minutes.

- Combine mozzarella cheese and Asiago cheese together in a bowl. Press a wonton wrapper into the bottom of each muffin cup. - In a Dutch oven, cook onion in olive oil over medium heat until tender, 4-5 minutes. Add garlic; cook 1 minute. Stir in tomato paste and cook, stirring constantly, until fragrant, 3-4 minutes. Add crushed tomatoes, water, fresh basil, 2 teaspoons sugar and salt. Bring to a boil; reduce heat. Simmer 1 hour, stirring occasionally., Meanwhile, cook bulk sausage in a skillet over medium heat until no longer pink, breaking into crumbles, 8-10 minutes; drain. Add to sauce; simmer until mixture is thickened, about 1 hour longer., While sauce simmers, preheat oven to 350°. Place sausage links on a rimmed baking sheet; roast until cooked through, 35-40 minutes. Remove and let cool slightly; slice into 1/4-in.-thick pieces., In a small bowl, mix ricotta cheese, 1 cup mozzarella cheese, egg, dried basil and remaining sugar., In a greased 13x9-in. baking dish, spread 2 cups sauce. Arrange 4 noodles over sauce; spread with a third of the ricotta mixture. Add 7 provolone slices, a third of the sliced sausage and 1-1/2 cups mozzarella cheese. Repeat layers 2 more times, using only 1 cup sauce per layer. Spread with 2 cups sauce (reserve remaining sauce for serving on the side), remaining 2-1/2 cups mozzarella cheese and the Parmesan cheese (dish will be full)., Place dish on a rimmed baking sheet and bake, uncovered, until bubbly and deep golden brown, 60-65 minutes. Steps:
- Heat about 2 tablespoons of oil in a large saute pan over medium-high heat.
- Season the chicken breasts lightly with salt and pepper, add them to the pan, and cook until golden brown on both sides, about 5 minutes per side.
- Remove the chicken to the cutting board to cool.
- Meanwhile, add the onions, celery and spices to the oil that remains in the pan.
- Add a little more oil if necessary.
- Saute until the onions are soft.
- Add the garlic and cook until just starting to brown.
- Add the chilies and chicken stock to stop the browning process and to collect the browned bits of flavor off the bottom of the pan, scraping the pan with a wooden spoon.
- As this is coming up to a boil, dice the chicken breast into a small dice and return the chicken to the pan.
- Add the crushed tortilla chips.
- Continue to cook until almost all of the liquid is evaporated.
- Taste and adjust the seasoning with salt and pepper.
- Remove from the heat and chill completely in the refriegerator.
- When the mixture is cold, add the grated cheese and mix well.
- Dust your counter with a little flour and spread out the puff pastry.
- Lightly brusth the pastry with the egg/water mixture.
- This will help seal the folded puff.
- Use a sharp knife or a pizza cutter, cut the puff sheets into 2-inch x 2-inch squares.
- Place one tablespoon of fimly packed filling into the center of each square.
- Fold corner to corner, and crimp with a fork.
- Pat on a sprayed cookie sheet about one inch apart.
- Cover and refrigerate until party time.
- Preheat oven to 400.
- Bake for 15 to 20 minutes or until golden brown.
- Serve with your favorite salsa.

- Heat the oil with the garlic and onions and cook until translucent on medium heat. You can do this a number of different ways, but I like to rub them with oil or melted butter and cook each slice of puffball mushroom on the stove in a cast iron skillet, if you're in an apartment, you may want to open the windows and turn off the smoke detector for that. Alternately, grease and bake, or grill until wilted.
